2 pounds lamb loin chops, about 8 to 10 chops, cut individually
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon freshly ground black pepper
1/2 teaspoon salt
Mint pesto, recipe follows
2 cloves garlic
1/4 cup pine nuts
3/4 cup fresh basil leaves
1 1/2 cups fresh mint leaves
3/4 cup fresh flat-leaf parsley
1/2 cup grated Parmesan
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil

Steps:

  • Preheat grill on high.
  • Rub the lamb with the olive oil. In a small bowl, combine the oregano, thyme, rosemary, pepper and salt. Rub mixture all over the lamb. Let it rest for 10 minutes at room temperature.
  • While chops are resting, prepare the Mint Pesto.
  • Grill the lamb chops 2 to 3 minutes per side, for medium rare.
  • Serve the lamb chops with the Mint Pesto.
  • Add the garlic to a food processor and pulse until chopped. Add the pine nuts and pulse to chop. Add half of the herbs and chop for 30 seconds, then add the rest of the herbs and chop. Add in the Parmesan and salt and pepper, pulse briefly until combined. While machine is running, slowly add the oil in a steady stream and process to desired thickness.

4 lamb chops, about 360 g total weight
2 tsp. herbes de Provence (a mixture of dried rosemary, thyme, basil, bay and savory)
245 g jar hollandaise sauce
125 g (4oz) cucumber
125 g (4oz) petit pois
Lemon to squeeze
3 tbsp. roughly chopped fresh mint
Mint sprigs and lemon wedges to garnish

Steps:

  • Season the lamb chops and sprinkle each side with the herbes de Provence. Cook on a griddle pan or under a hot grill for 4min on each side or until medium rare.
  • Put the hollandaise sauce in a pan with the finely chopped, deseeded cucumber and the petit pois. Bring to the boil and bubble for about 1min. (Don't overcook the sauce as the cucumber and peas may discolour.)
  • Season to taste; add a squeeze of lemon juice and the chopped mint. Garnish with mint sprigs and lemon wedges. Serve with new potatoes.

1 cup chopped fresh mint
1/2 cup panko breadcrumbs or matzo meal
1/4 cup extra-virgin olive oil
2 cloves garlic (1 minced, 1 whole)
2 teaspoons chopped fresh rosemary
1/4 teaspoon red pepper flakes
Kosher salt
8 center-cut lamb loin chops (about 8 ounces each and 1 1/2 inches thick)
1 pound cocktail tomatoes (such as Campari), halved
1 tablespoon sherry vinegar or lemon juice
3/4 teaspoon sugar

Steps:

  • Combine 3/4 cup mint, the panko or matzo meal and 2 tablespoons olive oil in a medium bowl. Add the minced garlic, 1 teaspoon rosemary, the red pepper flakes and 1/2 teaspoon salt and mix until combined.
  • Unroll the "tail" of each lamb chop (the long thin section folded around the chop). Season the lamb with salt, then press the crumb mixture under the tail section; roll up the tail around the filling and secure with kitchen twine. Put the chops on a plate, cover with plastic wrap and refrigerate 2 to 4 hours.
  • Preheat the oven to 450 degrees F. Remove the lamb chops from the refrigerator 20 minutes before cooking. Make the tomato-mint jam: Toss the tomatoes, whole garlic clove, 1 tablespoon olive oil and the remaining 1 teaspoon rosemary on a rimmed baking sheet. Transfer to the oven and roast until the tomatoes are slightly charred, 15 to 20 minutes; let cool slightly, then transfer to a medium bowl. Add the vinegar and sugar and mash with a fork until somewhat smooth. Stir in the remaining 1/4 cup mint and season with salt.
  • Heat a skillet over medium-high heat. Add the remaining 1 tablespoon olive oil; sear the lamb chops until browned, about 3 minutes per side. Using tongs, turn the chops onto their sides and sear until the fat browns, about 2 minutes. Transfer to a rimmed baking sheet; roast in the oven until a thermometer inserted into the center registers 140 degrees F for medium rare, about 10 minutes. Let rest 5 minutes; remove the twine and serve with the tomato-mint jam.

4 shoulder lamb chops
olive oil

2 teaspoons lemon juice
2 teaspoons white vinegar
3 egg yolks, at room temperature
1/4 lb unsalted butter
2 tablespoons chopped of fresh mint
salt and pepper, to tast

Steps:

  • Brush the chops on both sides with a little oil and season with black pepper.
  • Put the chops under the broiler, 4 inches from the heat, and cook for 3-4 minutes on each side for medium-rare chops, slightly longer for well-done.
  • Arrange the lamb chops on warmed serving plates and serve immediately with the warm minted hollandaise sauce.
  • Good served with asparagus and a carrot salad.
  • Hollandaise sauce: Whisk together the lemon juice, viegar, and egg yolks.
  • Put over a saucepan of simmering water and whisk until thick.
  • Melt the butter and add, a little at a time, to the egg-yolk mixture, whisking constantly until the sauce thickens.
  • Stir in the fresh mint and season with salt and pepper to taste.

1 (16 ounce) can pear halves, drained
1/4 cup butter, melted, can use margarine
1 large lemon, juice of, can use 1/4 cup lemon juice
1/2 teaspoon dried mint
mint jelly (optional)
8 lamb chops, enough for 4 sevings
salt, to taste
pepper, to taste
garlic powder, to taste

Steps:

  • Season lamb chops and place on a boiler pan.
  • Arrange pear halves, cut side up in an ovenproof dish; or can arrange around the lamb on the broiler pan if desired.
  • Mix butter (or margarine), lemon juice and mint in a small bowl.
  • Brush mixture over the pear halves, reserving mixture.
  • Broil chops until done, turning lamb midway through cooking. Check on pears and can baste with the mixture again. Turn pears if you like.
  • Meanwhile, heat the remaining lemon juice mixture and and serve with the broiled pears and lamb.
  • If desired, fill pear halves with mint jelly.

  • Toss the chops or shanks in seasoned flour and brown in a pan then place in slow cooker.
  • Deglaze pan with water, add sauces and pour over lamb.

This Moroccan-style spiced lamb dish is simple enough to do on a weeknight, but also makes a great dish to serve to friends

4 lamb chops or leg steaks, trimmed
2 tsp smoked paprika
1 red onion , finely chopped
3 tbsp red wine vinegar
3 tbsp olive oil
200g couscous
5 tbsp pine nuts , toasted
8 dates , stoned and finely chopped
zest and juice 2 lemons
20g pack each mint and flat-leaf parsley , roughly chopped

Steps:

  • Place the lamb in a bowl. Sprinkle over the paprika, half the onion, 1 tbsp vinegar and ½ tbsp oil. Season, then set aside.
  • To make the couscous, boil the kettle and tip the couscous into a heatproof bowl. Stir in the pine nuts, dates, lemon zest and half the juice. Pour over 140ml just-boiled water, push the coucous to the sides of the bowl, cover, then leave to stand for 10 mins.
  • Heat grill to high. Lift the lamb out of its marinade, grill for 2-3 mins on each side, then rest, wrapped in foil, for 10 mins. Stir half the chopped herbs and some seasoning into the couscous, then add the remaining lemon juice to taste. Mix together the remaining herbs, red onion, vinegar, oil and seasoning to make a herby vinaigrette. Serve the lamb and couscous with the vinaigrette.

  • Get out a large dish – in which the lamb cutlets will fit in a single layer – and first pour into it the olive oil and sprinkle in the chilli flakes, dried mint and celery salt.
  • Using one lamb cutlet as if it were a wooden spoon, smoosh the oil with its sprinklings around a bit, so that it is rather better mixed, then place the lamb cutlets in a single layer, turn them instantly, and leave to marinate for 10 minutes.
  • Heat a large, heavy-based, non-stick frying-pan – big enough for all the cutlets to fit in – then duly place them all in it (the oil that clings to them from the marinade is plenty enough for them to fry in) and fry over a medium heat for five minutes.
