Have a batch of cooked ham from Christmas or Easter dinner? Transform the leftover pork into a delicious pot pie the family happily dig into.

1/3 cup carrot (peeled and cut into tiny cubes)
1/3 cup onion (finely diced)
1/3 cup celery (thinly sliced)
4 tablespoons butter (plus extra for greasing)
4 tablespoons all-purpose flour
2 1/2 cups milk
Optional: Pinch mace
Pinch Kosher salt
Pinch ground black pepper
1 cup mixed fresh vegetables (peas, beans and broccoli florets)
2 tablespoons parsley leaves (chopped)
4 ounces leftover ham (cubed)
12 ounces frozen puff pastry sheet (defrosted)
1 egg (beaten)

Steps:

  • Gather the ingredients.
  • Using a little of the butter, grease either two 8 x 5 x 2- inche deep, individual pie tins or an 8 x 2-inch deep pie plate. Set aside.
  • Bring a cup of water to the boil in a small saucepan, add the diced carrots and cook for 3 minutes to soften them. Strain and keep to one side.
  • In a large saucepan, melt the butter and add the chopped onions and celery. Gently fry over medium heat and gently for 5 minutes to soften.
  • Add the flour to the pan and stir well, cooking for 2 minutes, then slowly adding the milk a splash at a time. Stir well between each addition.
  • Add the pinch of mace if using, and the salt and pepper. Stir until the sauce has thickened to the thickness of heavy cream. Add half of the beaten egg and stir well.
  • Add the carrots and mixed vegetables to the sauce and stir, cooking for another 5 minutes.
  • Remove from the heat and leave too cool. The sauce does not need to be cold, so 10 minutes should be long enough. Once cooled, add the parsley and the ham pieces.
  • Pre heat the oven to 400 F. Lay the pastry on a lightly-floured work surface and cut two pieces to line the tins and two for the lids, or two circles to fit the pie plate.
  • Line the base of your chosen serving dish with one piece of pastry and fill with the ham and vegetable sauce.
  • Brush the edges of your dish with the beaten egg and lay the lid over. Press lightly, then crimp the edges with your fingers or the edge of a fork to seal the pie. Cut a small hole the size of a dime into the center of each pie and then brush the surface all over with the remaining beaten egg.
  • Bake in the center of the heated oven for 25 to 30 minutes until the pastry is golden and risen, and the sauce is bubbling. It may bubble through the hole, but don't worry, it adds to the character of the pie.

Number Of Ingredients 19

5 tablespoons unsalted butter
1 large sweet onion, diced
3 large stalks celery, diced
3 medium carrots, peeled and diced
3 cloves garlic, minced
1/3 cup all-purpose flour, plus more for dusting
3 cups chicken broth
1 bay leaf
1 tablespoon fresh chopped rosemary
1 tablespoon fresh chopped thyme
1/3 cup heavy cream
3 1/2 cups chopped cooked chicken (from a rotisserie chicken, for example)
1 1/3 cups fresh or frozen peas
3/4 teaspoon kosher salt, plus more to taste
3/4 teaspoon freshly ground black pepper, plus more to taste
1/2 cup chopped parsley
Dough for 4 single-crust pies or 2 double-crust pies (homemade or store-bought), divided into 2 even pieces and well chilled
1 large egg beaten with 1 tablespoon water
Finely grated Parmesan, for sprinkling

Steps:

  • Make the filling: In a large pot, heat 2 tablespoons butter over medium heat. Add the onions, celery and carrots and cook, stirring, until the onions are translucent, 5 to 6 minutes. Add the garlic and cook until fragrant, about 1 minute more.
  • Add the remaining 3 tablespoons butter. Once melted, stir in the flour. Cook the mixture, stirring constantly, until it just starts to turn golden brown, 2 to 3 minutes. Gradually whisk in the chicken broth. Bring the mixture to a simmer. Add the bay leaf, rosemary and thyme. Adjust the heat and simmer for 15 minutes.
  • Stir in the cream, chicken and peas and return to a simmer. Simmer for 4 to 5 minutes more. Remove the mixture from the heat. Stir in the salt and pepper. Ideally, cool it completely. Remove and discard the bay leaf, and stir in the parsley. Taste and add more salt and pepper, if desired.
  • Meanwhile, prepare the crust: Have a 10-inch cast-iron or ovenproof skillet ready. On a lightly floured surface, roll out half of the pie crust to a thickness of about 1/4 inch, making a circle about 3 inches wider all around than the skillet. Gently transfer the dough to the skillet, lining the bottom and easing it up the sides, allowing any excess to drape over the edge of the pan (aim for about 1 inch excess dough all the way around the pan). Refrigerate for 30 minutes.
  • While the bottom crust is chilling, roll out the remaining dough on a lightly floured surface to 1/4 inch thick. Gently transfer the dough to a parchment-lined baking sheet, then use a pastry wheel to cut it into 1 1/2- to 2-inch wide strips. Cover with plastic wrap and refrigerate for 15 minutes.
  • Pour the cooled filling into the chilled bottom crust and spread evenly. Remove the chilled dough strips from the fridge. Lay strips over the filling, leaving almost no space between them. When the pie is covered, rotate the pan and pull back every other strip of dough, then weave in a fresh strip to create a lattice. Lay the strips back over the new piece of dough, the repeat the process - this time pulling back all the pieces of dough that didn't get moved the first time. Continue until the entire pie is latticed.
  • Press the dough together at the edges all the way around the pie; use scissors to trim away any excess dough, then fold the bottom crust up and over the lattice. Dip your finger in water and run it along the edges to help seal it. Use a floured fork to press around the edges to seal the dough together and crimp the crust. Refrigerate for 30 minutes.
  • Preheat the oven to 425 degrees F and place a rack in the lower third of the oven. Brush the egg mixture over the top of the pie and sprinkle it with Parmesan. Bake for 30 minutes; lower the oven temperature to 375 degrees F and continue baking until the crust is deeply golden brown (the filling may bubble through the top crust a bit), 40 to 50 minutes more.

3 cups white onions
3 cups cubed ham
6 cups ham stock or 6 cups chicken broth
4 cups flour
4 tablespoons shortening
1 teaspoon baking powder
1 cup ice water

Steps:

  • Roll out dumpling dough until ¼" thick. Cut dough into 1/2" squares.
  • Boil onion and ham in broth until it boils.
  • Drop dumplings in slowly and consistently.
  • Cook for 1 hours on simmer and stir constantly.

This is a Pennsylvania Dutch recipe my mom has made all my life and it is my favorite dish. She usually serves it alone or with some small side dish, because everybody fills there plate with the pot-pie. My husband never heard of it till I made it for him. Now it is one of his favorite dishes.

5 lbs ham (with bone in)
water
3 medium potatoes (cubed)
5 cups all-purpose flour
5 eggs
1 cup milk
salt
pepper
chopped parsley

Steps:

  • Place ham in large pot and cover with water.
  • Boil to make ham broth.
  • Cut ham into cubes and set aside.
  • Place potatoes in broth to cook while you are mixing dough.
  • In large mixing bowl, mix flour, eggs, and milk to form soft dough.
  • You may need to add a little more milk.
  • Roll dough to 1/8" to 1/4" thickness (depending on preference).
  • Cut dough into 1" by 3" rectangles.
  • Drop dough into broth one piece at a time.
  • Cook until dough is done.
  • Add ham.
  • Salt and pepper to taste.
  • Add parsley for color.

1 (14 1/8 ounce) package ready-made pie crusts (follow package directions for easy handling)
1/2 lb diced ham
4 slices cooked and crumbled bacon (thick sliced)
2 tablespoons bacon grease
4 -5 small potatoes, peeled and diced small
0.5 (14 ounce) package bird's eye baby broccoli florets
1/2 cup sour cream
1 (10 1/2 ounce) can cream of chicken soup
1/4 lb Velveeta cheese (cubed)
1/2 cup evaporated milk
1/4 teaspoon cayenne pepper
1/4 teaspoon ground mustard
1 teaspoon onion powder
1 teaspoon dried basil
1 1/2 teaspoons ground black pepper
2 tablespoons melted butter
seasoned parmesan cheese (I used basil & oregano)

Steps:

  • Preheat oven to *425.
  • Bring potatoes to a boil and cook for approximately 7 minutes. Add broccoli and continue cooking until potatoes are tender. Drain and leave in colander.
  • Cook ham in reserved bacon grease until most of juice has evaporated and ham is slightly browned. Drain in colander over potatoes and broccoli.
  • In a large mixing bowl, combine sour cream, chicken soup, cayenne, ground mustard, onion powder, basil, and black pepper. Set aside.
  • In a saucepan, combine the Velveeta and evaporated milk, cook over medium heat, stirring frequently until cheese is melted.
  • Pour cheese mixture over sour cream/soup mixture.
  • Add ham mixture and stir everything together until combined.
  • Press one of the pie crusts into a deep dish pie pan or square baking dish.
  • Add filling mixture.
  • Top with remaining pie crust (in whatever fashion you like, just make sure it's crimped at edges and well vented).
  • Bake for 45-50 minutes, until crust is a nice golden brown. (I used the foil method to keep the edges of the top crust from over-browning).
  • Once pie is done, brush with melted butter and sprinkle with parmesan cheese.
