Superfood salad with citrus dressing image

A quinoa salad packed full of the good stuff - broccoli, soya beans, avocados, spinach, herbs, pomegranate and pumpkin seeds

250g purple sprouting broccoli , cut in half (or into bite-sized chunks)
175g frozen soya bean
2 ripe avocados
250g pouch cooked quinoa
100g bag baby spinach
handful soft herbs (parsley, basil, coriander or mint all work well), chopped
100g tub pomegranate seeds
100g bag pumpkin seed , toasted in a dry pan until they pop
zest and juice 1 lemon or lime
zest and juice 1 orange
1 tbsp white wine vinegar
2 tbsp Dijon mustard (or gluten-free alternative)
2 tbsp extra-virgin rapeseed oil

Steps:

  • Bring a saucepan of water to the boil and fill a large bowl with ice-cold water. Add the broccoli to the pan and cook for 2 mins, then add the soya beans and cook for 1-2 mins more until the broccoli is cooked but still has a bite. Drain and drop the vegetables straight into the cold water - this quickly cools them, retaining their bite and bright colour. Leave for 1-2 mins until cool, then drain and leave in the colander while you prepare the remaining ingredients.
  • Dry the large bowl. Add the dressing ingredients with some seasoning and whisk together. Halve, stone and peel the avocados, then cut into chunky dice and add straight to the dressing (this will stop the avocado turning brown). Add the quinoa, spinach, herbs, half the pomegranate and pumpkin seeds, and the cooked vegetables to the bowl, and gently toss everything together. Transfer the salad to a serving platter, scatter with the remaining seeds and serve. Any leftovers will keep in the fridge for lunch the next day.

1/4 cup chopped PLANTERS Almonds
2 Tbsp. sugar
1 red or pink grapefruit
1 large navel orange
4 cups torn mixed salad greens
3 thin red onion slices, separated into rings
1/4 cup KRAFT Balsamic Vinaigrette Dressing

Steps:

  • Cook nuts and sugar in nonstick skillet on medium heat 3 to 5 min. or until sugar is melted and nuts are evenly coated with glaze. Cool.
  • Meanwhile, use small sharp knife to cut peels and white pith from fruit. Cut each piece of fruit crosswise into 8 slices. Alternately arrange fruit, with slices slightly overlapping, around edge of platter. Toss salad greens with onions; place in center of platter.
  • Drizzle salad with dressing just before serving. Break nuts into small pieces; sprinkle over salad.

1 lime - zested, peeled, and sliced
1 mandarin orange (tangerine) - zested, peeled, and sectioned
1 navel orange, peeled and sectioned
1 grapefruit, peeled and sectioned
1 bulb shallots, diced
1 tablespoon lemon juice
1 tablespoon olive oil
½ teaspoon salt
1 head romaine lettuce, torn

Steps:

  • Place lime slices, tangerine sections, navel orange, and grapefruit in a bowl. In a separate bowl, mix the lime zest, mandarin orange zest, shallots, lemon juice, olive oil, and salt. Pour over the fruit. Arrange dressed fruit atop romaine lettuce to serve.

This flavorful salad is nice to serve when the evenings are getting cool, at the end of the summer. I always add the edible flowers, if I can find them (or I have some on my zucchini plants), but they are by no means necessary to make this recipe delicious!

1/2 cup sunflower oil
1 clove garlic, minced
1 1/2 inches fresh ginger, minced
1 shallot, minced
lime, juice and zest of
1/2 orange, juice and zest of
1 tablespoon sugar
1/2 teaspoon salt
fresh ground black pepper
6 cups torn assorted salad greens
1/4 cup chopped cilantro
1/4 cup chopped of fresh mint (or less, to taste)
2 oranges, peeled and sectioned
1/2 lb scallops, cooked
1/2 lb peeled and deveined cooked shrimp
2 tablespoons sunflower seeds, toasted
fresh edible flower (optional)

Steps:

  • Heat 1 tablespoon of the oil in a medium-sized skillet over medium heat; add garlic, ginger and shallot; cook, stirring often, until tender, about 4 minutes.
  • Stir in lime zest and juice, orange zest and juice, sugar, salt and pepper to taste; cook 1 minute then slowly whisk in remaining oil.
  • Toss together greens, cilantro, and mint in a large serving bowl.
  • Arrange orange sections, scallops and shrimp on to of the greens; sprinkle with sunflower seeds and edible flowers, if desired.
  • Pour 1/4 cup of the warm dressing over salad; toss to coat.
  • Add additional dressing as needed.
  • *To toast sunflower seeds, heat them in a small dry pan over low heat, stirring often, until lightly browned; immediately remove seeds from the pan to stop cooking.

  • Cook the edamame according to package instructions. Add the broccoli to the edamame for the last minute of cooking so that it is bright and lightly softened. Drain the edamame and broccoli and run under cold water in the strainer to cool.
  • Place the cooled and drained edamame and broccoli into a large mixing bowl and add the kale, spinach, carrots, blueberries, grapes, walnuts, and sunflower seeds. Toss to combine.
  • In a small mixing bowl, add the orange juice, oil, vinegar, maple syrup, lemon juice, salt and pepper and whisk together to combine. Pour the dressing over the salad* and toss to coat.
