3 green tea bags
1 quart boiling water
1/4 cup sugar
1/2 large lemon, sliced into 1/4-inch slices
1 bunch fresh mint, washed
2 cups cold water

Steps:

  • Brew tea in boiling water, letting steep for 10 minutes. Pour brewed tea into a serving pitcher. Add sugar and lemon, and swirl in the mint, holding it by the stems and using it to stir and dissolve the sugar. When sugar is dissolved, drop mint into pitcher and add 2 cups cold water. Refrigerate until thoroughly chilled. Strain mint out before serving and serve cold.

1 peppermint tea bag
¼ cup frozen lemonade concentrate

Steps:

  • Bring the water to a boil in a large saucepan over high heat; remove from heat, then stir in sugar until dissolved. Add the tea and peppermint tea bags, and allow to steep for 30 minutes. Remove tea bag and stir in the lemonade. Serve tea over ice.

Steps:

  • To make the minted ice cubes, fill ice cube trays partially with water and freeze. Set mint leaves on top, fill with more water and freeze solid. Brew double strength tea and steep, while hot with 2 bunches of fresh mint. When cool, strain out mint and sweeten to taste, chill.

2 -4 elderberries, flower blooms (remove the blooms from the main stem)
filtered water, for boiling
ice cube
rose water
orange blossom water
lemon slices (grapefruit?) or lime slice (grapefruit?)
Agave (or other sugar of choice) or honey (or other sugar of choice)
of fresh mint (apple mint, pineapple mint, orange mint, etc.)
fresh lemon verbena, lemon balm or pineapple sage
cinnamon (if you're brewing hot tea) or cardamom (if you're brewing hot tea)

Steps:

  • Pick fresh elder flowers from an elderberry tree. Remove the blooms from the stems and discard stems.
  • Place 2 to 4 fresh elder flowers in a heatproof bowl. (I tested this recipe using 3 stems of elderflowers and 6 cups of water).
  • Boil the water.
  • Pour the boiled water over the flowers to cover.
  • Cover the bowl and allow the flowers to steep for about 10 minutes.
  • Strain the tea and set aside to cool then refrigerate until well chilled. (Can also be served hot.).
  • To serve, pour the chilled tea over ice cubes. Stir in your favorite additions.
  • I floated a few of the individual blossoms on top of the tea.

If you're fortunate enough to be able to get fresh orange blossoms, try this fragrant Moroccan tea, as posted, which combines orange blossoms with spearmint. If however orange trees do not grow in your area you could substitute 1/4 - 1/2 teaspoon of orange extract for the leaves. I wanted to post this recipe with the authenticity of the method used in Morocco but with the substitution for those unable to acquire orange blossoms. The original version of this recipe was found at 'about.com'. Prep time is the time boiling the water. Cook time is the steeping time. Posted for ZWT 2010

1 tablespoon green tea leaves
10 oranges, blossoms (fresh & washed)
10 spearmint, leaves (fresh & washed)
1/2 liter about 2 cups boiling water
1/4 cup sugar

Steps:

  • Boil a liter of water.
  • Rinse the small tea pot with about 1/4 cup of the boiling water and discard.
  • Add the tea leaves and add 1/4 cup boiling water.
  • Swirl the pot to wash and rinse the leaves, and then carefully discard the water.
  • Add the orange flower blossoms, mint leaves and the sugar.
  • Fill the pot with 1/2 liter (about 2 cups) boiling water.
  • Leave combined tea mixture to steep for five minutes.
  • Gently stir the tea, pour into small tea glasses and serve.

2 quarts cold water, divided (8 cups)
12 tea bags or 4 family-size tea bags
1/4 cup fresh mint leaves, loosely packed
4 cups orange juice (reconstituted frozen orange juice concentrate is fine)
2 -8 tablespoons honey (according to your preference for sweetness, 8 tablespoons = 1/2 cup)
8 -10 sprigs of fresh mint, washed thoroughly
ice cubes or crushed ice

Steps:

  • In a medium saucepan, bring 1 quart water to a boil.
  • Remove from heat, and while water is still bubbling, add tea bags and 1/4 cup mint.
  • Cover and let steep 8 minutes, then remove and discard tea bags and mint.
  • Put remaining quart of cold water into a large pitcher or insulated jug.
  • Add hot tea to cold water.
  • Let cool to room temperature.
  • Add orange juice, honey, and mint sprigs, and mix well.
  • Store in refrigerator & serve over ice.

12 sprigs of fresh mint
3 lemons, peeled and juiced
8 cups boiling water
1 1/2 cups superfine sugar
8 cups cold water
1/3 cup orange blossom water
mint sprigs and lemon slice (to garnish)

Steps:

  • Steep tea bags in boiling water, add mint, sugar and lemon peel. Stir until sugar dissolves. Allow to stand for up to four hours. Discard lemon peel and mint. Strain lemon juice and add to tea. Add cold water and orange blossom water, and plenty of ice cubes.
  • Serve in tall, clear glasses, garnished with lemon slices and fresh mint sprigs.
  • Orange blossom water is available in Middle Eastern grocery stores, and in the specialty aisles of some supermarkets.

1 cup sugar
1 large navel orange
1 to 2 tablespoons orange blossom water or 1-1/2 to 2-1/2 teaspoons orange extract
Optional: Orange slices and additional fresh mint

Steps:

  • Place water and mint in a 6-qt. slow cooker. Cover and cook on high for 6 hours or until heated through. Strain tea; discard mint., Whisk in sugar until dissolved. Cut orange crosswise in half; squeeze juice from orange. Stir in juice and orange blossom water. Transfer to a pitcher. Refrigerate until cold, 4-6 hours. Serve over ice with orange slices and additional mint if desired.
