2 cups sugar
6 cups water
2 cups fresh lemon juice
1/2 cup mint leaves

Steps:

  • To make simple syrup: Place 2 cups sugar and 2 cups water in a saucepan and bring to a boil. Stir until sugar is dissolved and let cool. Place lemon juice in a large pitcher, add remaining 4 cups water and 1 cup of the simple syrup or more to taste. Stir in mint leaves and refrigerate for 1 hour. Serve over ice.

Steps:

  • Bring water to a boil in a saucepan. Meanwhile, peel the lemon, leaving the bitter white pith on the lemon and only removing the yellow peel.
  • Add the lemon peel and mint leaves to the boiling water, stir once and boil for 1 minute. Strain tea into teacups and serve hot, passing sugar if desired.

1 quart boiling water
1/4 cup sugar
1/2 large lemon, sliced into 1/4-inch slices
1 bunch fresh mint, washed
2 cups cold water

Steps:

  • Brew tea in boiling water, letting steep for 10 minutes. Pour brewed tea into a serving pitcher. Add sugar and lemon, and swirl in the mint, holding it by the stems and using it to stir and dissolve the sugar. When sugar is dissolved, drop mint into pitcher and add 2 cups cold water. Refrigerate until thoroughly chilled. Strain mint out before serving and serve cold.

  • Remove from the heat and add the fresh mint leaves. Steep for 3 to 5 minutes, depending on desired strength.
  • Add optional sweetener. Start with 1 teaspoon per cup and add more as desired.
  • If serving iced, fill tall glasses with ice and pour the tea over. If serving hot, pour the tea into mugs. Garnish with optional lemon slices and/or lemon juice to taste.

1 quart refrigerated lemonade (freshly made or store-bought)
2 lemons, quartered and seeded

  • Add in tea bags; remove pan from heat, cover, and steep for 10 minutes.
