ICED SWEET MINT TEA
If you enjoy having a soothing, refreshing glass of iced tea in the summertime, I hope you will try my version of sweet mint tea. I grew up drinking mint tea and still enjoy it so very much today. If you don't care for sugar in your tea, just leave it out, it will still be just as satisfying.

Steps:
- In large tea pot (or two small tea pots) pour boiling water over tea bags and mint and allow to steep for 20 minutes.
- Place sugar in 2-quart pitcher (that will tolerate some heat).
- Pour freshly brewed tea (minus mint and tea bags) into sugar and stir until sugar is dissolved.
- Place in refrigerator until ready to serve.
- To serve, pour into tall glasses over ice.
- Serve with lemon slices.
- Serves 8.
SWEET MINTED TEA

- Combine the sugar, mint (stems and all) and 1 cup water in a small pot. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Reduce the heat to medium low and simmer 5 minutes. Remove from the heat, cover and let steep 30 minutes. Discard the mint; refrigerate the syrup until ready to use.
- Put 2 quarts water in a pot and add the tea bags. Bring to a boil over medium-high heat, then remove from the heat, cover and let steep 20 minutes. Discard the tea bags. Pour the tea into a pitcher and add the mint syrup to taste. Refrigerate until cool.
- Serve the tea over ice. Garnish with lemon and mint, if desired.
MINT SWEET ICED TEA
All the mint sweet tea recipes I've come across call for fresh mint, and that can be tough to find sometimes without breaking the bank. I've come by this recipe after quite a bit of experimentation, and the great part is that it can be made just about anywhere, as long as you have the ability to cool the tea back down after brewing!

- Combine the sugar and water in a small saucepan and bring to a boil, stirring until sugar is dissolved.
- Turn off heat and add tea bags, steeping to desired strength (for me, 3-5 minutes).
- Remove tea bags and add ice until cool.
- Serve in a tall glass over ice!
SWEET TEA
Steps:
- Bring the water to a boil. Remove from heat, pour into a pitcher, and steep the tea bags about 5 minutes. Mix the sugar mixture into the iced tea. Mix well.
- Pour the drink mix over ice cubes in a glass. Garnish with 2 slices of lemon and a sprig of mint.
- Bring 1 cup of water to a boil and add sugar. Stir to combine.
SWEET TEA MOJITO

- Steep 4 or 5 black tea bags, 2 cups turbinado sugar and 2 handfuls of fresh mint in 3 cups simmering water for 5 minutes, stirring to dissolve the sugar. Strain into a pitcher; add the juice of 3 limes, 1 1/2 cups light rum, 1 cup cold water and another handful of mint. Stir vigorously, crushing the mint with a wooden spoon; chill. Serve over ice with lime and more mint.
MINT ICED TEA

- Brew tea in boiling water, letting steep for 10 minutes. Pour brewed tea into a serving pitcher. Add sugar and lemon, and swirl in the mint, holding it by the stems and using it to stir and dissolve the sugar. When sugar is dissolved, drop mint into pitcher and add 2 cups cold water. Refrigerate until thoroughly chilled. Strain mint out before serving and serve cold.

GINA'S SWEET MINT TEA

- In a pot, boil the water with the tea bags. Once liquid has boiled, remove the pot from heat. Remove tea bags after desired bold/mild flavor.
- In a small saucepan, add water, sugar and mint and place over medium heat. Bring liquid to a boil then remove from the heat. Allow the syrup mixture to cool. Pour syrup into tea and mix together well. Serve tea over a glass of ice.
MINT SIMPLE SYRUP FOR SWEET TEA

- Take a few leaves of the mint in one hand and sharply clap your other hand on top, then drop the leaves into a teapot or cafetiere. Repeat with the rest of the mint, saving a few small sprigs for each glass as a garnish.
- Fill up the pot with boiling water and let it infuse for 2-3 mins or until the liquid starts to take on a slight pale yellow/green hue. Strain the tea into cups or heatproof glasses and sweeten with honey to taste. Drop the reserved mint into the cups to decorate if you like.

MINT TEA
Steps:
- In a stove-top teapot, add the tea leaves and cover with the 3 tablespoons of water. Bring to a quick boil and immediately pour off the water, being carefully that no tea leaves escape. (This gets rid of the some of the bitterness, and allows the tea to seep longer with mint.)
- Add the sugar to the wet grounds and cover with the remaining 3 cups of water. Over medium heat, with the lid open or off, bring to a boil.
- Pour half of the liquid into a bowl or Pyrex measuring cup; reserve. Stuff the mint into the teapot, pressing it against the bottom of the pot with a spoon to gently and slightly crush the leaves. Return the reserved liquid to the teapot.
- Simmer over low heat for a few minutes to let the mint infuse. Pour a glassful into a clear drinking glass and then back into the pot, from as high as possible without spilling to aerate the tea and blend the flavors. Repeat this two or three more times, as the color of tea changes from clear to a cloudy caramel.
- Begin tasting for sweetness and flavor. Add more sugar if desired, or let it simmer another few minutes to make it stronger. Continue to pour glassfuls in and out of the pot until satisfied with both the sweetness and strength of the tea.
- Serve in small clear tea glasses. Do not pour tea into them from the teapot, but from the glass used for mixing and testing (this will help trap any sediment).
- If adding pine nuts, sprinkle into the glasses of tea before serving.
MINT TEA PUNCH
Tea, mint, sugar, orange and lemon juices make this a quick and easy, refreshingly delicious drink on a hot summer's day, given to me by a true Southern lady. Goes great with Cajun or spicy foods too. Every time I serve this someone asks me for the recipe!
