Raita Recipe- an Indian yogurt sauce with cucumber, mint and cilantro. Cooling and refreshing, serve this with spicy Indian dishes to cool the palate.

Number Of Ingredients 13

¾ cup whole milk plain yogurt ( or sub coconut yogurt)
½ cup finely diced or grated cucumber (removed seeds first)
1 tablespoon finely chopped red onion (optional, sub chives or green onion)
2 teaspoons lemon or lime juice, more to taste
1 tablespoon olive oil
½ teaspoon cumin seeds, toasted, crushed ( or use ground)
½ teaspoon coriander seeds, toasted, crushed ( or use ground)
2-3 tablespoons chopped mint
2-3 tablespoons chopped cilantro
¼ teaspoon salt, more to taste
¼ teaspoon pepper
for heat, add 1-2 teaspoons finely minced serrano peppers- optional
garnish with fresh herbs, chive blossoms or chili flakes

Steps:

  • Place all ingredients in a bowl and stir.
  • Refrigerate until ready to serve.

CUCUMBER-MINT RAITA

Raita (a cold yogurt condiment) is often served with Indian food to cut the heat of the spicy dishes.

Yield Makes 8 servings

Number Of Ingredients 5

1 large unpeeled English hothouse cucumber, halved, seeded, coarsely grated
2 cups plain whole-milk yogurt
1/4 cup (packed) chopped fresh mint
1 teaspoon ground cumin
1/4 teaspoon plus pinch of cayenne pepper

Steps:

  • Wrap grated cucumber in kitchen towel and squeeze dry. Whisk yogurt, mint, cumin, and 1/4 teaspoon cayenne pepper in medium bowl to blend. Add cucumbers and toss to coat. Season raita to taste with salt and pepper. Cover and refrigerate at least 2 hours. (Can be prepared 1 day ahead. Keep refrigerated.) Sprinkle raita with pinch of cayenne pepper and serve.

This cooling sauce is similar to a raita - perfect for serving as a buffet or dinner party side dish to tame hot curries and spiced meats

½ cucumber
large pack mint , leaves picked, plus extra, to serve
1 garlic clove
small piece of ginger , peeled
100g natural yogurt

Steps:

  • Peel the cucumber and coarsely grate the sides, discarding the seeds. Season generously with salt. Tip into a colander or sieve and leave for 10 mins to drain, then squeeze out as much liquid as you can and tip into a bowl.
  • Tip the remaining ingredients into a mini chopper or food processor and blitz. Pour the sauce over the cucumber and stir, then chill until needed. Serve scattered with mint.

CORIANDER & MINT RAITA

Try this creamy raita as a side dish in an Indian feast. As well as cooling coriander and mint, it has a little kick from the addition of green chilli

Number Of Ingredients 7

1 tsp cumin seeds
1 tsp mustard seeds
1 small pack mint
1 small pack coriander
1 green chilli , ¾ roughly chopped, the remainder sliced, to serve
200g Greek yogurt
1 lime , juiced

Steps:

  • Toast the spices in a dry pan until fragrant, then tip into a mortar and grind to a powder with a pestle. Tip into a food processor with all the remaining ingredients except the lime juice. Blitz, adding a splash of water to loosen, then season and add the lime juice to taste. Leave in the fridge while you prepare the rest of the dishes. Scatter with the remaining chilli, to serve.

50g mint leaves
2 x 20g packs coriander
2 fresh green chillies , deseeded
½ tsp salt
2 tsp caster sugar
2 tbsp lemon juice
2 x 150ml pots natural yogurt
poppadums , to serve

Steps:

  • Put the herbs in a food processor along with the chillies, salt, sugar, lemon, 1 tbsp water and 2 tbsp yogurt. Blend really well to make a green paste. Tip into a bowl.
  • Spoon off 4 tbsp and mix with the rest of the yogurt to make raita. Cover and chill both overnight.

  • Wash mint and coriander leaves in lot of water and drain them. Dry roast cumin and cool it. Add cumin to a blender jar and powder.
  • Add 1 tbsp of yogurt, mint, coriander, sugar, salt and chili to the jar. Blend well and mix with the rest of the yogurt.
  • If desired you can add few chopped onions or cucumber pieces. (refer notes) Serve mint raita with any pulao, biryani, tehri or with kababs.
