½ cup lightly packed fresh mint leaves
2 cups lime cordial
2 cups club soda
4 slices lime

Steps:

  • Reserve 4 mint leaves for garnish. Place the remaining mint leaves and lime cordial into the container of a blender, and process until mint is finely ground. Stir in the club soda. Serve in tall glasses over ice. Garnish with fresh mint leaves and lime slices.

4 cups chopped cucumbers ( vellarikai / kheera )
1/4 cup chopped mint leaves ( pudina )
1/2 cup sugar
2 tbsp lemon juice

Steps:

  • Wash the cucumbers. Cut off the ends of the cucumbers and peel them. Chop them into cubes.
  • Take the chopped cucumbers in a blender or mixer. Add chopped mint leaves.
  • Then add sugar.
  • Finally add the freshly squeezed lemon juice.
  • Blend these together in the blender or mixer to a smooth puree.
  • Strain the puree through a fine mesh strainer, into a large bowl, pressing the puree with a spoon to ensure all the juice is strained. Discard the remaining pulp. Add 6 cups water to the strained juice and stir well. Cucumber mint juice is now ready to be served or you can refrigerate and serve chilled.

2 medium lemons, sliced
1/2 cup lemon sherbet, softened
1 liter ginger ale, chilled

Steps:

  • For mint ice cubes, combine the water, mint and lemon juice; pour into 2 ice cube trays. Freeze until set. In a pitcher, combine the lemons and sherbet; slowly stir in ginger ale. Add the mint ice cubes.

1/4 cup sugar
1/4 cup lightly packed mint sprigs, plus more for serving
6 cups peeled, chopped watermelon
1/3 cup fresh lime juice
1 ounce tequila (optional)

Steps:

  • In a small heatproof bowl, pour 1/2 cup boiling water over sugar and mint; stir until sugar has dissolved. Let cool completely, about 20 minutes. Strain syrup into a blender; discard mint.
  • Add watermelon, lime juice, and 1 3/4 cups cold water; blend until smooth. Strain through a fine-mesh sieve.
  • Serve over ice, garnished with a mint sprig, or refrigerate in an airtight container up to 3 days. If using tequila, stir a shot (1-ounce) into each glass before serving.
