THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

Throw away the canned version this one is just as good, actually better I think. I prefer the real thing vs. Diet Dr. Pepper, but either one would work, I think. My Sister-In-Law contributed this to our family cookbook.

- Cook 5 minutes.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

This is a recipe of my mother's that we always wanted for parties. It is shredded meat in sauce. Actually, we know it by the name Beef Barbecue, but I think barbecue means different things depending on where you're from.

- Simmer meat several hours until it falls apart when pierced with a fork; then remove meat from liquid and shred with a fork (liquid may be used as stock in other recipes).
- Combine onions, green pepper, butter, brown sugar, tomato paste and salt, and simmer 15 minutes,or until tender.
- Add mustard, Worcestershire sauce, Tabasco, pepper, red pepper and catsup, and simmer 5 more minutes.
- Combine sauce with meat.
- Serve hot on hamburger buns to make sloppy joes.
- Note: It is also possible to use ground beef.
- Brown in frying pan; remove as much fat as possible, and stir in sauce.

POBLANO PEPPER SLOPPY JOES
I love this low calorie sloppy joes. While your making this check the heat in your pepper. If your pepper is too hot for your taste then cut the poblano pepper in half and substitute the rest with a small green pepper. Don't substitute canned corn; you need the firmness and full flavor of frozen corn.

- In a dutch oven or 12" heavy skillet put in your oil and set your stove to medium-low heat.
- Add the Red Skin Potatoes. Cook for 3-5 minutes stirring occasionally. You want the potatoes warm and slightly softened.
- Put in the rest of the vegetables and the salt and cook for 5-10 minutes or until most of moisture has cooked out of the corn. This should be a gentle cooking time so reduce heat to were you just hear the sizzle.
- Add the rest of the spices and let it cook for just a minute or two more to help integrate the flavors. If you don't have a Dried Chipotle Powder mix try the Southwest Chipotle Seasoning (recipe #162886) found on RecipeZaar.
- Remove the vegetables and set aside. Remember they're hot, so use an appropriate storage vessel.
- Brown the meat and drain off any fat or extra juice and discard the liquid.
- Bring back the vegetables to the pan and add the rest of the ingredients.
- Cook for 10-15 covered or until the potatoes are tender.
