SOBA NOODLES WITH VEGETABLES AND MINT
Made with buckwheat flour, soba noodles have a nutty flavor; look for them at Asian grocers and supermarkets.

Steps:
- Prepare an ice-water bath; set aside. Bring a large (8-quart) pot of water to a boil; add salt. Add peas; cook until bright green and crisp-tender, about 2 minutes. Using a slotted spoon, immediately transfer peas to ice-water bath to stop the cooking; drain. Return water to a boil; cook noodles according to package instructions. Drain. Rinse noodles with cold water; drain.
- Transfer noodles to a large bowl. Add oils; toss to combine.Add reserved peas, the carrots, ginger, scallions, tamari soy sauce, and mint; season with pepper. Toss to combine. Serve at room temperature.
MINT AND SCALLION SOBA NOODLES
Steps:
- Cook noodles in a large pot of boiling water until just tender, about 5 minutes, then drain in a colander. Rinse under cold water to stop cooking, then drain well.
- While noodles are cooking, stir together vinegar, oil, soy sauce, sugar, and salt until sugar is dissolved.
- Toss noodles with dressing, mint, and scallions.
COOL SOBA NOODLES WITH SWEET SOY BROTH

Steps:
- Combine 4 cups water, dashi, soy sauce, mirin, sake and sugar in bowl. Whisk until dashi and sugar dissolve; set aside.
- Bring 4 quarts water to boil in large saucepan. Add soba noodles, and cook until tender, about 6 minutes. Drain noodles in colander, rinse with cold water until cool, and drain again.
- Combine wasabi powder and 1 tablespoon water in a small bowl, and stir. Let stand about 6 minutes, until it becomes a thick paste. Using your finger, form 4 small balls.
- To serve, divide noodles among 4 bowls, and ladle broth over them. Arrange wasabi balls, scallion greens, nori and dried bonito flakes (if using) on top of noodles. Using chopsticks, dissolve wasabi balls into broth; do not eat whole. Serve at once.

- In a large pot of boiling salted water, cook noodles until tender according to package instructions. Drain, then rinse under cold water to stop the cooking. Drain well.
- In a small bowl, whisk together soy sauce, lime juice, and oil. In a large bowl combine noodles, scallions, cucumber, peanuts, and mint. Toss noodle mixture with sauce, garnish with additional mint, and serve.

- Whisk together the ingredients for Sweet Ginger Scallion sauce in the bowl. Set aside for 10 -15 minutes for the flavors to develop.
- To the cooked noodles, add the sweet scallion sauce, sesame seeds and toss the noodles to coat, checking the seasoning. Sprinkle lime juice, if desired, and topping with julienned cucumber, giving one final toss.

- Bring a medium pot of salted water to a boil. Add the sliced carrots and blanch until just tender, about 1 minute. Using a slotted spoon, transfer the carrots to a colander in the sink and run cold water over them to stop the cooking process.
