Having done some catering, I especially appreciate interesting, appetizing finger foods. I'm constantly asked to make these popular squares to serve at parties. They're almost like a zippy, crustless quiche. -Linda Wheeler, Middleburg, Florida

1 pound bulk pork sausage
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup finely chopped onion
1 can (4 ounces) chopped green chiles
1 tablespoon minced jalapeno pepper, optional
10 large eggs
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375°. In a large skillet, cook sausage until no longer pink; drain. Place in a greased 13x9-in. baking dish. Layer with cheeses, onion, chiles and jalapeno if desired. In a bowl, beat eggs and seasonings. Pour over cheese. , Bake, uncovered, until a knife inserted in the center comes out clean, 18-22 minutes. Cool for 10 minutes; cut into 1-in. squares.

I wanted an egg & cheese appetizer to add to a brunch that I was preparing. I needed to prepare it a day ahead and didn't have time to make pie crust. My friends asked for the recipe and my family enjoyed them too!

Number Of Ingredients 7

6 eggs
1/4 cup milk
1/2 teaspoon basil
1 -2 tablespoon onion flakes or 1/4 cup sauteed onion
salt, pepper to taste
1/2-1 cup broccoli or 1/2-1 cup mushroom, whichever you prefer
1 cup grated cheddar cheese or 1 cup swiss cheese

Steps:

  • Preheat oven to 350 degrees.
  • Place 1 tbsp butter in a 9 inch square or 10 x 6 inch pan.
  • Melt in the oven about 3 minutes.
  • Beat together eggs, milk, basil, salt, onion, and pepper.
  • Add your filling from above.
  • Stir in 3/4 cup grated cheese.
  • Pour into baking dish.
  • Sprinkle with remaining cheese.
  • Bake 35- 40 minutes until centre puffs up and is firm.
  • A knife inserted near the centre comes out clean.
  • Let stand 5- 10 minutes before serving.
  • Don't under cook as it will be runny and don't over cook as it will be dry.
  • Makes about 24 squares.
  • You can prepare a day or 2 ahead and reheat in oven for a few minutes until warm.

1 1/2 cups all-purpose flour (unsifted)
1 1/2 cups finely crushed butter flavored crackers (Ritz crackers are good)
2/3 cup cold butter (butter-flavor Crisco COLD may be used if desired) or 2/3 cup margarine (butter-flavor Crisco COLD may be used if desired)
1/2 cup water
2 cups swiss cheese (or to taste)
1 1/2 cups chopped ham (crumbled) or 1 1/2 cups cooked sausage, diced pepperoni, crumbled cooked bacon (crumbled)
3/4 cup thinly sliced green onion (with tops)
1/4 cup snipped fresh parsley
1 (4 ounce) jar diced pimentos, well drained (can use more if desired)
5 large eggs
1 cup whipping cream (unwhipped)
1 cup half-and-half cream
salt and pepper

Steps:

  • Set oven to 400 degrees.
  • Prepare an ungreased 15 x 10-inch jelly-roll style pan.
  • FOR THE CRUST: In a bowl, combine flour and the crushed cracker crumbs.
  • Cut in butter until the mixture resembles coarse cornmeal.
  • Sprinkle with 1/2 cup water (a tablespoon at a time).
  • Toss with a fork until crumbs are completely moistened.
  • Press mixture into bottom of ungreased pan.
  • Prick crust WELL with a fork; set aside.
  • FILLING: Sprinkle Swiss cheese, ham (or what ever meat you are using), onions, parsley and pimentoes evenly over crust.
  • Beat eggs, cream, half and half, salt and pepper.
  • Pour over filled crust.
  • Bake for 25-30 minutes, or until set (crust may bubble during baking, and need to be pricked with a fork again).
  • Cool 5-10 minutes.
  • Cut into 1-1/2 - 2-inch sqares/pieces.
  • Serve warm.

CRUST:
2 cups Pillsbury BEST® All Purpose Flour
1 tsp. salt
3/4 cup Crisco® Butter Shortening or 3/4 stick Crisco® Butter Shortening Sticks
5 tbsps. cold water
FILLING:
2 cups (8 oz.) shredded Swiss cheese
2/3 cup chopped ham, crumbled cooked sausage, diced pepperoni or crumbled cooked bacon
3/4 cup thinly sliced green onions, including tops
1/4 cup snipped fresh parsley
1 (4 oz.) jar diced pimentos, well drained
5 large eggs
1 cup heavy cream
1 cup half-and-half
1/4 tsp. pepper

Steps:

  • HEAT oven to 400 degrees F. Spray a 15 x 10-inch jelly-roll pan with no-stick cooking spray.
  • CRUST:
  • COMBINE flour and salt in medium bowl. Cut in shortening using pastry blender or 2 knives until all flour is blended in to form pea-size chunks. Sprinkle with water, 1 tablespoon at a time. Toss lightly with fork until dough forms ball.
  • ROLL out dough between sheets of waxed paper to fit jelly-roll pan. Place dough in prepared pan, folding edges under. Flute edges. Prick crust with fork.
  • FILLING:
  • SPRINKLE cheese, ham, onions, parsley and pimentos evenly over crust. Beat eggs, cream, half-and-half, salt and pepper in medium bowl. Pour over filled crust.
  • BAKE 35 minutes or until set. Cool 5 to 10 minutes. Cut into 2 x 1 1/2-inch pieces.

A great way to use up an abundant zucchini crop, add some other vegetables and you have an easy to make appetizer. I usually serve this with sour cream and chives on the side.

3 cups zucchini, grated and well-drained
1 large carrot, grated
1/2 cup red pepper, diced
1/2 cup red onion, finely chopped
4 eggs, slightly beaten
1/2 cup grated parmesan cheese
1/2 cup strong cheddar cheese, grated
2 tablespoons fresh parsley, chopped
2 garlic cloves, finely chopped
1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon seasoning salt
1/2 teaspoon dried oregano leaves
1/2 teaspoon hot pepper sauce
1/4 cup butter, melted

Steps:

  • Heat oven to 350ºF.
  • Make sure your zucchini is well drained, I put it in a clean tea towel and squeeze it dry.
  • Grease bottom and sides of rectangular pan, 13x9x2 inches.
  • In a medium bowl, mix eggs, parmesan cheese, pepper sauce, parsley and vegetables. Set aside
  • Combine dry ingredients and stir into liquid mixture.
  • Stir in melted butter.
  • Spread mixture evenly into the baking dish.
  • Sprinkle grated cheddar cheese over top.
  • Bake about 30 - 35 minutes or until golden brown.
  • Cool slightly, cut into tiny 1" squares, serve warm or cold, I prefer these at room temperature.

This is a great appetizer for your holiday parties. The crusts may bubble during baking and need to be pricked with fork again. Also to make this vegetarian, omit the meat and increase the roasted red peppers to 1 1/2 cups.

3/4 cup Crisco shortening
5 -6 tablespoons cold water
2 cups swiss cheese, grated
2/3 cup pepperoni, diced or 2/3 cup bacon, cooked, crumbled
3/4 cup green onion, thinly sliced, including tops
1/2 cup roasted red pepper, well drained, diced
1/4 cup fresh parsley, chopped
5 eggs
2 cups carnation regular evaporated milk or 2 cups carnation evaporated 2% milk
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°F Grease or line a 10x15 - inch jelly roll pan with parchment paper.
  • CRUST:.

Low carb appetizer that can be served hot or cold, an alternative to the artichoke dip recipe that's so popular. I have not tried this yet, this was adapted from our local paper, but I just might make it for our Thanksgiving appetizer.

1/3 cup dry sherry or 1/3 cup apple juice
2 tablespoons chopped red onions
2 cloves garlic, minced
1 cup grated mozzarella cheese
1/2 cup ricotta cheese
1 (10 ounce) jar marinated artichoke hearts, drained and coarsely chopped
3 egg whites, lightly beaten
1 egg, lightly beaten
1/4 cup whole wheat bread crumbs
3 tablespoons fresh minced parsley
1/4 teaspoon marjoram or 1/4 teaspoon basil
1 pinch cayenne pepper

Steps:

  • Preheat oven to 350*.
  • In medium non stick skillet over medium heat, heat sherry or apple juice, add onion and garlic.
  • Cook until soft, but not brown,stirring frequently for about 3 minutes.
  • Spoon mixture into medium bowl, and add all the other ingredients,and mix well.
  • Pour batter into a lightly oiled 8 inch square baking pan.
  • Bake in 350* oven for 30 minutes, or until set and lightly browned.
  • To serve, cut into squares.
  • Can be served hot or cold.
