SHRIMP PASTA SALAD
This easy shrimp pasta salad is ready in minutes! Made with healthy ingredients, veggies and bright lemon dressing. Perfect for potlucks.

Steps:
- Cook the pasta to al dente according to the package instructions. Drain in a colander, then rinse with cold water to stop the cooking. Shake off as much water as possible. Let the colander with the pasta sit in the sink or on a towel to continue draining while you prepare the rest of the salad.
- In a small bowl or large measuring cup, whisk together the dressing ingredients: Greek yogurt, lemon juice, honey, white vinegar, Dijon, salt, black pepper, and cayenne pepper.
- In a large serving bowl, place the shrimp, celery, bell pepper, peas, green onion, and dill. Shake the pasta once more, then add it to the bowl. Drizzle with the dressing and stir gently to combine. Taste and adjust the seasoning as desired.
- If time allows, place the pasta in the refrigerator and chill for 1 hour prior to serving. Enjoy directly from the fridge or at room temperature.

This salad is a compilation of some of my favorite ingredients: shrimp, peas & pasta. Great for many occasions: showers, teas, picnics, side or a main dish with a glass of iced tea and finger sandwiches.

- 1. Cook pasta according to package directions, drain & rinse in cold water.
- 2. In a large bowl combine the shrimp, peas, onions or celery, parsley and stir in pasta.
- 3. In a small bowl combine the mayo, yogurt, lemon juice, dill, salt & pepper. Pour over pasta, toss to coat. Refrigerate for at least 1 hour before serving.

- Cook pasta according to package directions. Drain; rinse with cold water and drain again., In a large bowl, combine pasta, shrimp, peas, green onions and parsley. Mix remaining ingredients; stir into pasta mixture. Refrigerate, covered, at least 2 hours.

CREOLE SHRIMP
Steps:
- Get the pan hot over a medium high flame, saute all ingredients, except flour, tomato paste and tomatoes, in the olive oil and butter until they begin to wilt. Add flour and tomato paste. Season with oregano, thyme, parsley. cayenne pepper, white pepper and black pepper.
- Saute all that until it begins to brown. After 5 minutes when it's quite brown, add the tomatoes. Stir in hot pepper sauce and Worcestershire, to taste. Add sugar and salt. Reduce heat and let the sauce simmer for 1 1/2 to 2 hours.
- Shrimp: In a pan over medium heat, saute shrimp in 1 tablespoon of whole butter. While the shrimp is cooking, splash it with white wine. Then add to taste, some chopped scallions, a pinch of parsley and a bit of cayenne pepper and paprika.
- After the shrimp is almost ready, add it to the sauce for 3 to 4 minutes. so the Creole flavor cooks into the shrimp. Prepare the serving plates with cooked rice. Ladle the shrimp and Creole sauce into the rice beds, making sure there is lots of sauce. (Creole dishes feature "Lots of Gravy"). Garnish with sliced scallions (the green parts) for color and lemon wedges.
CREOLE SHRIMP AND SWEET PEA PASTA SALAD
This salad is for the adventurous only! It is mindboggling good and spicy with a flare that will tantalize your taste buds! This is the best pasta salad I have ever eaten! The others got so humdrum and boring. :) Not so... this one!!! Enjoy! :)

- Cook pasta according to instrucions on box, rinse well and cool.
- Combine cooled pasta, shrimp ( I suggest medium-sized chilled shrimp), cucumber, tomato, and fresh (not canned) or frozen peas.
- Combine all ingredients following the 2 cups fresh peas and mix well.
- Toss this mixture thoroughly with the pasta, shrimp, cukes, tomatoes, and peas.
- If you're worried about the intensity of the cayenne pepper, add it last and add a little at a time. It tends to be hot! But oh so good!
- Chill well for at least 5 hours so that the spices can mingle .
- Then serve on a bed of Romaine.

PASTA ALLA PAMELA WITH SHRIMP AND PEAS

- Bring a big pot of water to a boil. Salt liberally.
- In a large bowl, toss the shrimp with 1 teaspoon salt, 1/2 teaspoon pepper and the baking soda and marinate in the fridge for 15 minutes (this keeps the shrimp moist with a nice crust on the outside).
- Add the pasta to the pot of boiling water and cook according to the package instructions. Drain, reserving about 1 cup of the pasta cooking water.
- Meanwhile, heat a large skillet over medium-high heat until hot. Add the oil to the skillet, then arrange the shrimp in a single layer in the oil. Reduce the heat to medium. Cook, undisturbed, until a nice crust is formed, about 2 minutes. Flip the shrimp, then add the butter and garlic. Cook gently until fragrant, about 1 more minute. Add the wine to deglaze and let simmer for 1 more minute. Add the peas and pasta. Toss to combine. Taste for seasoning and adjust with salt and pepper. Add a generous amount of Parmesan and toss again, adding the pasta water as necessary.
- Transfer the pasta to a large serving bowl. Garnish with more Parmesan and the parsley. Serve.

- Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute the onion, celery, peppers, green onions and garlic in 2 tablespoons butter until tender.
