2 cups basil, tightly packed
1/3 cup almonds
1-2 cloves garlic
1.5 teaspoon salt (or to taste)
1/2 teaspoon fresh cracked pepper (or more to taste)
2 tablespoon nutritional yeast
2 tablespoon fresh lemon juice
1/3 cup olive oil

Steps:

  • Measure and add all ingredients to a food processor and puree until combined.
  • You can toast the almonds if you'd like to, we recommend it as this will increase the almond flavor!
  • Before removing from the food processor, taste and adjust flavors as you see fit.
  • Taste a little bland? Try adding more salt, pinch at a time.
  • Taste okay, but a little dull? Try adding more lemon juice, 1 teaspoon at a time.
  • Doesn't taste cheesy enough? Add more nutritional yeast

This Almond pesto is a vegan basil pesto recipe with fresh basil leaves and almonds that tastes delicious like traditional pesto. And I'm sure you will make this easy vegan pesto recipe again and again!

100 gms fresh basil leaves (around 5 cups fresh basil leaves)
100 gms almonds (around 3/4 cup)
100 gms extra virgin olive oil (approximately 3/4 cup extra virgin olive oil)
2 garlic pods
1/2 tsp pepper powder
1/2 tsp lemon juice
Salt to taste

Steps:

  • Take a food processor or blender jar.
  • Add almonds, garlic, black pepper powder, salt, basil leaves, olive oil, and lime juice to the food processor in that order. We want to grind the almonds first and then basil leaves.
  • Blend everything to form a rough paste. If you wish, you can grind it into a smooth paste. I like it to be a little gritty.
  • Store the pesto sauce in the clean and dry glass jars. Top the almond pesto with some olive oil to prevent oxidization.

  • Put all the ingredients into a food processor or chopper and run it through until finely chopped. Makes about 2/3 cup.

1/2 cup toasted slivered almonds
1 large onion, finely chopped
1 garlic clove, crushed (I use1/2 tsp liquid-y chopped garlic)
2 tablespoons olive oil
1 (8 ounce) can tomato sauce
2 teaspoons paprika
1 teaspoon ground red chile (I used red pepper flakes)
1/4 teaspoon ground red pepper (I used cayenne)

Steps:

  • Put the almonds in a food processor and pulverize until finely ground.
  • Cook onion and garlic in oil over medium heat, stirring frequently, until onion is tender (about 10-15 minutes).
  • Stir in all the other ingredients except the ground almonds. (I found it easier to turn the heat off first, then add the tomato sauce followed by everything else, then put the heat back on.).
  • Heat to boiling; reduce heat. Simmer 1 minute stirring constantly;.
  • stir in almonds.
  • Serve hot with some corn chips and/or arepas, and enjoy!. Makes about 1 3/4 cups of sauce.
