PIZZA MUFFINS (WITH VEGGIES!)
These work well to make ahead and warm up for an easy lunch or dinner. These taste best served warm.

Steps:
- Preheat the oven to 375 degrees F and grease a standard muffin tin well with nonstick spray.
- Add the milk, carrot, cheeses, butter, pepperoni (reserving the 2 tablespoons), and egg to a medium bowl. Stir together.
- Stir in the flours, baking powder, baking soda, pizza seasoning, and salt.
- Divide batter among the prepared muffin tin, using about 1/4 cup in each. Top each with pepperoni.
- Bake for 18-20 minutes or until lightly golden brown around the edges and a cake tester inserted into the center comes out cleanly. (There may be some melted cheese on it though!)
- Let cool in the pan for 2-5 minutes, then transfer to a wire rack to cool completely. You may need to use a paring knife around the edges of the muffins to help remove them from the pan.
- Serve slightly warm.

- Preheat oven to 375°F.
- Grease a 12-cup muffin tin with non-stick cooking spray.
- Unroll the refrigerated pizza crust and slice in 12 even sections using a pizza cutter.
- Take one piece of the dough and flatten out in the palm of your hand. Press the dough into a muffin cup, pressing it up the sides as much as you can. Repeat until each muffin tin is filled with dough, set aside.
- In a small bowl, combine the melted butter, garlic salt and Italian seasoning. Using a pastry brush, spread the butter mixture over the dough.
- Put 1-2 tablespoons of pizza sauce into each dough cup. *If the dough slides down the sides, adjust as necessary.
- Sprinkle your pizza toppings, except the cheese.
- Bake the pizza muffins for 15 minutes.
- Add 1-2 tablespoons of cheese on top of each pizza muffin and continue to bake for 10 minutes or until the cheese is browned and bubbly.

- Heat the oven to 400ºF and line 36 mini muffin cups with paper liners or grease a mini muffin pan.
- Sift the flour, cornmeal, sugar, baking powder, and salt into a large mixing bowl.
- In a separate bowl, blend the egg, milk, and oil. Make a well in the center of the dry mixture and add the liquid. Stir just until combined.

- Make the roasted garlic butter: Drizzle the halved head of garlic with the olive oil and wrap tightly in aluminum foil.
