These bite-sized cheesecakes are easy to make and a big hit at parties. Garnish with melted chocolate or your choice of sliced fruit or berries.

2 (8 ounce) packages cream cheese, softened
2 eggs, beaten
½ cup white sugar
24 chocolate sandwich cookies (such as Oreo®)

Steps:

  • Move oven rack to middle tier and preheat oven to 350 degrees F (175 degrees C). Line 24 mini-muffin cups with miniature paper liners.
  • Beat cream cheese, eggs, and sugar together in a bowl until smooth.
  • Put 1 cookie into the bottom of each paper liner. Spoon the cream cheese mixture atop the cookies.
  • Bake in preheated oven until nearly set in the middle, about 15 minutes.
  • Move tins to a wire rack to cool slightly before refrigerating until the cheesecake layer sets firmly, about 3 hours.

These delicious Mini Oreo Cheesecakes are made with a creamy cheesecake filling and Oreo cookie pieces. Baked in a muffin pan for the perfect dessert. Made with only 5 ingredients and takes less than 30 minutes to make!

16 Oreos
16 ounces cream cheese; softened* ((2- 8 ounce packages))
1/2 cup sugar
2 whole eggs
1 tsp. vanilla extract
3/4 cup Large and small Oreo cookie crumbs; chop Oreos with a knife to get both large and small cookie chunks.Reserve a few tablespoons for topping cheesecakes Do not use a food processor as it will turn the cookies into fine crumbs.

Steps:

  • Preheat oven to 350 degrees F. Line a REGULAR cupcake baking pan with 16 paper liners and place one Oreo cookie in each liner. Set aside.
  • In a large mixing bowl beat together the cream cheese, sugar, eggs and vanilla extract with an electric mixer for a 2-3 minutes until smooth. Sprinkle in the Oreo cookie crumbs and fold in with a spatula until combined.
  • With a tablespoon, spoon the Oreo cheesecake mixture evenly on top of the Oreo cookies, about two tablespoons of cheesecake batter per cupcake cup. Sprinkle each cheesecake with more Oreo cookie crumbs.
  • Bake for 14-16 minutes or until the middles are set. Be sure not to over-bake. Let the cheesecake cool for at least 30 minutes and remove paper wrappers. Place in the refrigerator until ready to serve. It's best to let the cheesecake bites get cold, about 2 hours in the refrigerator. Optional: top with whipped cream and more crushed Oreos!

½ cup sugar
2 eggs
12 OREO Cookies
3 (1 ounce) squares BAKER'S Semi-Sweet Baking Chocolate
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350 degrees F.
  • Beat cream cheese and sugar in large bowl with mixer until well blended. Add eggs, 1 at a time, beating on low speed after each just until blended.
  • Place 1 cookie in bottom of each of 12 paper-lined muffin cups. Fill with batter.
  • Bake 20 minutes or until centres are almost set. Cool. Refrigerate 3 hours. Melt chocolate as directed on package; drizzle over cheesecakes. Top with COOL WHIP.

  • Preheat oven to 325 degrees F. Line a 12-cavity (regular sized) cupcake pan with cupcake liners and set aside. Blend full oreos in a food processor or powerful blender to form crumbs (make sure the crumbs are all even sized and you don't have big pieces.) Do not remove the vanilla creme in the oreos before blending.
  • Make sure your cream cheese, sour cream, and eggs are all at room temperature. Reduce the heat to 300 degrees F.
  • Place the chopped chocolate in a heat-safe bowl. Bring the heavy cream to a simmer on the stove top, stirring occasionally. Just as soon as you see a simmer, remove from heat and poor over chocolate chips. Place a plate or lid over the chocolate chips and heavy cream mixture and let sit (without touching) for 5 minutes. Remove the plate or lid and whisk the chocolate until it becomes a smooth chocolate ganache.
