NESTLE TOLL HOUSE MINI MORSEL COOKIES
This is a recipe I have had for years, and I don't remember ever making them. The ingredients sound basically the same as chocolate chip cookies, with the exception of the mini morsels. I thought I'd pass it on to everyone and maybe someone would like to try it and crytique it for us!!

Steps:
- Combine flour, baking soda and salt in small bowl.
- Beat butter, sugars, and vanilla in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture.
- Stir in morsels and nuts.
- Drop by rounded tablespoon onto ungreased baking sheets.
- Bake in preheated 375F oven for 9-11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
- FOR PAN COOKIE VARIATION: Prepare dough as above. Spread into greased 15x10-inch jelly roll pan. Bake in preheated 375F oven for 20-25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.
- FOR HIGH ALTITUDES (5200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with the flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375°F Bake drop cookies for 8-10 minutes and pan cookies for 17-19 minutes.

- Preheat the oven to 475 degrees F.
- Sift the flour and salt together into a bowl Add the lard and cut together with a pastry cutter. Use a fork to stir in the buttermilk gently. Gently knead the dough a few times, adding more flour if you need to.
- Roll out the dough and cut out biscuits with a small round cutter. Place on baking sheets and bake for 10 minutes. Brush with butter when you remove them from the oven.
- Serve with slices of Christmas ham.

- Combine flour, sugar, baking powder and salt in large bowl. With pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in morsels. Beat 3 eggs, milk and vanilla in medium bowl. Add to flour mixture all at once; stir with fork to form a soft dough. Turn dough onto well-floured surface. Knead 6 to 8 times. Pat dough to 3/4" thickness. cut with floured 2 1/2" biscuit cutter. Transfer to lightly greased baking sheets. Beat remaining egg and milk in small bowl; brush over biscuits. Bake in preheated 400 degree oven for 14 to 16 minutes or until golden brown. Remove to wire racks; serve warm.

These are quick and easy. Always nice to have fresh Biscuits with a meal that don't take much work.

Steps:
- Mix flour, baking powder and salt together.
- Cut in the butter until crumbly.
- Add milk.
- Turn out on a lightly floured surface and roll to about 3/4" thick.
- Cut out circles. To do this, my mother taught me to use drinking glass. Just turn it upside down and press into the dough. Perfect rounds every time.
- Place rounds on a lightly greased cookie sheet.
- Bake at 425 for 20 minutes.

- For topping, combine brown sugar, melted butter, and flour. Stir in nuts and 1/2 cup chips. Combine flour, baking powder, soda, and salt. Set aside. Beat butter, sugar, and vanilla until creamy. Add eggs one at a time, beating well after each addition. Gradually add flour mixture alternately with sour cream. Stir in remaining chocolate chips. Spoon into greased or paper lined muffin cups, filling about half full. Sprinkle evenly with topping. Bake at 350 degrees for 20-25 minutes or until wooden pick inserted in center comes out clean. - Preheat oven to 400 degrees F (205 degrees C). Grease a baking sheet.
- Combine flour, baking powder, and salt. Cut shortening in until mixture has a fine crumb texture. Stir in milk with a fork to make a soft dough. Knead 8 to 10 times, and then roll out to a thickness of at least 1/2 inch. Cut into rounds with a cookie or biscuit cutter. Place on cookie sheet, and allow to rest for a few minutes.

Came from a news paper. It's super easy. They can be very crumbly b/c there is no egg to hold them together. You can mix in shredded cheese, or cinnamon and brown sugar, etc. to make them your own.

Steps:
- Mix dry ingredients, cut in margarine until crumbly.
- Add 1/2 cup of milk then mix, add the last 1/4 as needed. Dough should be wet, but not sticky.
- Roll into roughly 5cm (2 inch) balls. Flatten slightly and stack them 2 high.
- Oven 425, cook 10-12 min or until slightly golden.
