Mini passion fruit no bake cheesecakes image

A base of cookie crumbs topped with the silkiest passion fruit cheesecake mixture makes these no bake cheesecakes the perfect, easy dessert.

200 g (7.05oz) cookies / Graham crackers
1/3 cup melted butter
1 cup (250g) cream cheese (room temperature)
1 cup (250g) Mascarpone (room temperature)
1 can sweetened condensed milk ((385g/13.5oz))
¼ cup lemon juice
1/3 cup passion fruit pulp

Steps:

  • Place cookies/crackers in the bowl of a food processor and process into fine crumbs. Pour in the melted butter and blend until the mixture resembles wet sand.
  • Line a muffin pan with paper liners and add a few spoonfuls of crumbs into the base of each liner. Press down and flatten with the back of a spoon and set aside.
  • To make the filling, combine room temperature cream cheese, mascarpone, condensed milk and lemon juice in a bowl and whip with electric beaters for 2 minutes or until thick and smooth.
  • Beat in the passion fruit (you can strain out the seeds if you prefer). Fill each liner with cheesecake mixture and add a swirl of passion fruit to the top of each cheesecake (optional).
  • Allow the cheesecakes to set in the fridge for at least 12 hours but ideally overnight.
  • Top with whipped cream and serve.

These no-bake Mini Cheesecakes with Passionfruit & Raspberries are super easy to make. Each glass is layered with crushed digestive biscuits, a luscious and creamy cheesecake filling, and topped with seasonal fruits. A fancy but simple dessert.

8 digestive biscuits (such as McVitie's brand)
200 g (7 oz) cream cheese, preferably at room temperature
4 tablespoons icing sugar
250 ml (1 cup) double cream (or thickened cream or whipping cream)
2 tablespoons lemon juice
1 teaspoon vanilla bean extract or vanilla extract
6 passionfruit
raspberries to decorate

Steps:

  • Place the biscuits into a large freezer bag and hit them with a rolling pin until you have fine crumbs.
  • Divide the biscuit mixture between 8 small glasses.
  • Place the cream cheese into a large bowl and beat with a wooden spoon until it is creamy. If you are doing this by hand, it is easiest if the cream cheese is at room temperature. Otherwise, I would suggest using the KitchenAid with the flat paddle attachment.
  • Add the icing sugar, double cream, lemon juice and vanilla bean extract.
  • Beat or whisk the mixture until it thickens to the consistency of a very thick yoghurt. It will look runny at first but keep beating away at a gentle speed.
  • Taste to see if you need to add more sugar or lemon juice.
  • Spoon the cheesecake mixture over the biscuit mixture in each of the glasses. For a cleaner presentation, and especially if you are doubling or tripling this recipe, I would recommend using a piping bag with a large round nozzle.
  • Remove the pulp from the passionfruit and divide evenly between the glasses.
  • Decorate each glass with a few raspberries.

1/4 cup chopped pecans
3 tablespoons butter, melted
3/4 cup raspberries, fresh and crushed
8 ounces cream cheese
10 1/2 ounces sweetened condensed milk
1 cup Cool Whip, thawed

Steps:

  • Line a 12 cup muffin pan with paper cup liners.
  • In a medium bowl, combine graham crackers crumb, crushed pecans and melted butter, mixing well to blend.
  • Spoon mixture evenly into a 12 cup muffin pan lined with paper cup liners.
  • Press mixture with a spoon to firm bottom.
  • Puree raspberries and set aside.
  • Beat cream cheese until fluffy.
  • Add condensed milk and 1/2 cup of the rapberry puree and mix until well blended.
  • Fold in Cool Whip.
  • Spoon evenly into baking cups.
  • Freeze for at least 5 hours.
  • Invert cakes onto individual serving plates.
  • Drizzle remaining raspberry puree over cakes.
  • Garnish with a few whole raspberries.
  • Serve frozen.

1 cup chocolate cookie crumb (about 13 chocolate sandwich cookies)
3 tablespoons granulated sugar
5 tablespoons melted butter
6 ounces fresh raspberries (just about a cup)
3 tablespoons granulated sugar
1 teaspoon cornstarch
2 (8 ounce) blocks cream cheese, room temperature
2/3 cup granulated sugar
1/8 teaspoon table salt
1 teaspoon vanilla
1/2 teaspoon lemon zest (about 1 lemon)
2 large eggs, room temperature
1/2 cup full fat sour cream, room temperature

Steps:

  • Begin by taking out all of your cold filling ingredients so they can come to room temperature. Preheat oven to 300°F
  • Crust:.
  • In a food processor, mix all ingredients until they resemble wet sand -- umm. dirt. Press I Tbsp of the cookie crust into each cupcake liner that you have set into standard muffin pan. Press the crust down with your fingers. Cover the entire pan and place in the refrigerator to harden.
  • Raspberry sauce:.
  • Mix all ingredients in a cold saucepan, and heat until bubbling. Break down the raspberries by mashing them. I used my potato masher for this. Remove from heat when thickened. Transfer to a glass container and cool in the refrigerator until needed.
  • Filling:.
  • Mix all room temperature ingredients in a stand mixer, on low. You don't want to mix on high because it will put too much air into the batter. Using an ice cream scoop, fill the cupcake papers. I found the cupcake scoop to be the perfect amount of batter. Next, add three "drops" of the cooled raspberry sauce on top of the filled cheesecake batter. I used a baby spoon for this. Use a chopstick or knife to swirl the raspberry sauce into the cheesecake batter.
  • Bake on 300 F for 18-22 minutes. The center should still be a little bit "jiggly" and still slightly moist looking. Remove and allow them to cool. Cover and refrigerate overnight or for several hours.
  • Tip:.
  • to release the papers from the pan after chilling overnight, you may find that they stick down. The paper liner allow the melted butter to bleed a little, and with chilling, the butter can tend to stick to the pan. If this happens, set the whole pan in a larger pan (or sink) of warm water for a few minutes to warm that butter up again. Another alternative would be to use an outer, foil liner. I didn't want to bake the cheesecake in foil liners, as I have heard they impart a metallic taste (yuck). But if you use an inner paper liner and an outer foil liner, this may help.

9 whole graham crackers, finely crushed
3/4 cup plus 2 Tbsp. granulated sugar, divided
1/2 cup plus 2 Tbsp. unsalted butter (room temperature), divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 tsp. vanilla
1 large whole egg
3/4 cup frozen passion fruit pulp, divided
1 Tbsp. cornstarch
3 egg yolks

Steps:

  • Preheat oven to 325°F.
  • In a food processor, combine graham cracker crumbs, 2 Tbsp. sugar and 5 Tbsp. butter. Press onto bottom of 4 (4-inch) tart pans. Bake for 12 minutes or until golden. Let them cool completely.
  • Beat cream cheese, 1/4 cup of the remaining sugar and vanilla with mixer until well blended. Add 1 whole egg; mix on low speed until blended. Add 1/4 cup passion fruit pulp and mix until blended. Pour over the individual crusts.
  • Bake for 15 minutes. Lower the oven temperature to 300°F and bake for another 5 minutes or until the centers are almost set. Cool and refrigerate for at least 1 hour.
  • In a small saucepan, mix remaining 1/2 cup passion fruit pulp, remaining 1/2 cup sugar, cornstarch and the 3 egg yolks. Cook for about 10 minutes on low temperature until thickened, stirring the whole time. Add remaining 5 Tbsp. butter, 1 Tbsp. at a time, cooking and stirring after each addition until melted. Pour into a small bowl and cover with plastic wrap, placing plastic wrap directly on top of the curd to prevent a skin from forming. Refrigerate for 2 hours before using.
  • Remove the cheesecakes from their tart pans and spread the cooled passion fruit curd over the top.
  • Decorate the mini cheesecakes with raspberries or any other fresh fruit/berries of your choice.

  • Preheat the oven to 325 degrees F (165 degrees C). Line 16 muffin cups with paper liners.

3 Tbsp. butter, melted
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 tsp. vanilla
1/2 cup plus 2 Tbsp. sugar, divided
2 oz. BAKER'S White Chocolate, melted
2 eggs
1 cup fresh raspberries, divided

Steps:

  • Heat oven to 325°F.
  • Combine cookie crumbs and butter; press onto bottoms of 12 paper-lined muffin cups, adding about 1 Tbsp. crumb mixture to each cup.
  • Beat cream cheese, vanilla and 1/2 cup sugar in large bowl with mixer until blended. Add melted chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Spoon over crusts.
  • Reserve 12 raspberries for garnish. Process remaining raspberries with remaining sugar in food processor or blender until smooth. Pour through fine-mesh strainer into bowl. Discard strained solids.
  • Pour strained raspberry sauce into resealable plastic bag. Cut small piece off one bottom corner of bag; use to pipe 3 small dots raspberry sauce onto batter in each muffin cup. Use toothpick to swirl raspberry sauce into heart-shaped designs as shown in photo.
  • Bake 18 to 20 min. or until centers of cheesecakes are almost set. Cool cheesecakes completely. Refrigerate 2 hours.
  • Cut reserved raspberries in half; place, cut sides down, on tops of cheesecakes.
