BAKED SWEET POTATOES
Sweet potatoes are in the same family as other potatoes but cooking them requires a different approach to get the fluffy interior and sweet caramelized flavor we all love. After testing several techniques-wrapping in foil, pricking and not pricking, using a roasting pan-we found the following method delivered on all fronts, with minimal effort. Pricking with a fork allows steam to release and the potato flesh to separate from the skin, something that didn't always happen otherwise. Baking the potatoes on a wire rack nested in a baking sheet also helped the potatoes cook more evenly (and made cleaning up much easier). Lastly, allowing the potatoes to rest in the turned-off oven for 30 minutes after baking allowed the flavors to develop even further, though you can skip this step if you are short on time.

- Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil, then set a wire rack inside the baking sheet.
- Prick each of the sweet potatoes 5 times with a fork and place on top of the prepared rack, keeping space between potatoes to allow heat to circulate. Bake the sweet potatoes until a paring knife can easily go through without resistance, about 1 hour. Turn the oven off and let the potatoes rest inside for 30 minutes more. Remove from the oven and cut each potato in half lengthwise. Season with salt and pepper and top with butter if using.

I bake this in a foil dish on my outdoor grill, either way oven or out door grill these are delicious!

- Preheat oven to 375 degrees F.
- Grease an 11 x 7-inch baking dish.
- Place the potato cubes into the baking dish and toss with salt.
- In a small saucepan combine the butter, brown sugar with cinnamon and corn syrup over low heat stir until butter has melted and ingredients are combined (do not allow to boil).
- Pour over the cubed sweet potatoes and toss to coat.
- Bake uncovered for about 45 minutes or until the sweet potatoes are just fork tender (do not cook until soft and mushy, cooking time will depend on the size you cut the potatoes).

SLOW-BAKED SWEET POTATOES
In this easy Thanksgiving side, jewel-toned sweet potatoes are roasted low and slow. - Preheat oven to 325°. Rub each potato all over with a scant 1/2 teaspoon lard. Cut parchment squares just large enough to wrap around each potato individually. Wrap potatoes, twisting ends in opposite directions to form a tight seal. Transfer to a foil-lined rimmed baking sheet.
- Bake until potatoes are very soft and collapsing, about 1 1/2 hours. Leave wrapped in parchment until ready to serve, then split each lengthwise, dollop with ham-ginger butter, and sprinkle with salt.
BAKED SWEET POTATO
This is the BEST way to eat a sweet potato. We have baked sweet potatoes with our steaks instead of Idaho potatoes. It's a nice complement to chicken and beef - or any other meat that I can think of! This can also be made on the grill or tossed in the coals if you are camping!

Steps:
- Preheat oven to 400°F.
- Bake yams for 45 to 75 minutes (bigger yams take longer to cook).
- When they are done, the outside will have darkened and the inside will be soft.
- You may see liquid from the potato oozing out and charring.
- When the potato is sliced open, the inside of the skin will be charred black from the caramelizing sugar in the potato.
- This is a perfectly cooked potato.
- Mix the sugar and cinnamon together and set aside.
- To serve, slice a potato down the center.
- Add two Tbs of whipped butter, then sprinkle some cinnamon/sugar over the top.
