1/2 cup soft breadcrumbs
1 1/2 cups tomato sauce, divided
1/2 teaspoon italian seasoning
1 teaspoon garlic powder
1 teaspoon brown sugar

Steps:

  • Mix beef, salt and pepper, egg, crumbs, and 1/2 cup tomato sauce.
  • Form into 4 loaves.
  • Mix remaining cup tomato sauce with italian seasoning, garlic powder, and brown sugar.
  • Place in small casserole dish.
  • Bake, uncovered at 375* for 20 minutes.
  • Spoon remaining sauce over loaves and bake 10 more minutes.

8 ounces lean ground pork
8 ounces lean ground turkey
1/3 cup old-fashioned oats
4 tablespoons ketchup
1 tablespoon spicy brown mustard
1 teaspoon soy sauce or Worcestershire sauce
1/2 teaspoon finely chopped fresh oregano, plus more for garnish, optional
2 large egg whites
1 medium red onion, grated (about 1/3 cup)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or aluminum foil.
  • Gently combine the pork and turkey by hand in a large bowl. Stir together the oats, 2 tablespoons of the ketchup, 1/2 tablespoon of the mustard, the soy sauce, oregano, egg whites, onions, 1/2 teaspoon salt and 1 teaspoon pepper in a small bowl until combined. Add the oat mixture to the meat mixture and combine by hand until just incorporated.
  • Form the meatloaf mixture into 4 small football-shaped loaves, about 4 inches long and 1 1/2 inches thick, and place on the prepared pan. Stir together the remaining 2 tablespoons ketchup and 1/2 tablespoon mustard in a small bowl. Brush some of the ketchup mixture on each meatloaf.
  • Bake until fully cooked, about 20 minutes. Garnish with additional fresh oregano if desired, and serve.

1 large egg
3 tablespoons Worcestershire sauce
1 small onion, finely minced
1 teaspoon chili powder
2 cloves garlic, grated or finely minced
1 1/2 pounds meatloaf mix (ground beef, pork and/or veal)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
1/2 cup ketchup
1 to 2 tablespoons packed light brown sugar
1 tablespoon apple cider vinegar

Steps:

  • Mix the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 3-to-4-inch oval loaves.
  • Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
  • Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
  • Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.

1 lb. lean ground beef
⅓ cup BBQ sauce, divided
½ tsp. garlic powder
½ tsp. onion powder
¼ tsp. dried thyme
½ tsp. salt
1 Pinch black pepper
1 lb. Brussels sprouts, trimmed (halved if large, quartered if really large)
1 large sweet potato, cut into ½-inch pieces (peeled, if desired)
2 cloves garlic, minced
2 Tbsp. olive oil
Salt and pepper
Optional: fresh parsley, chopped

Steps:

  • Preheat the oven to 400℉.
  • Line a large baking sheet with parchment paper or a silicone baking mat. Place the sweet potato cubes, Brussels sprouts, and minced garlic on the baking sheet. Drizzle oil over vegetables then gently toss to coat and sprinkle with salt and pepper before spreading them out so that they're in a single layer.
  • Place the baking sheet in the oven and roast the vegetables for 15 minutes.
  • While the vegetables are roasting, mix the ground beef with ¼ cup BBQ sauce, garlic and onion powders, thyme, salt, and pepper. Divide the meat mixture into 4 portions and shape each into a football shape about ¾-inch thick. Set aside.
  • After the vegetables have been in the oven for 15 minutes, remove the baking sheet from the oven. Stir vegetables then make a space between them for the meatloaves.
  • Place the meatloaves on the pan and spread the remaining BBQ sauce over each one.
  • Return the baking sheet to the oven and bake for an additional 12-15 minutes or until an instant-read thermometer inserted into the thickest part of the meatloaves registers 165℉.
  • Remove the baking sheet from the oven, sprinkle with chopped parsley (if desired) and serve immediately.

1 large egg
1/2 cup panko
1/4 cup plus 2 tablespoons barbecue sauce
Kosher salt and freshly ground pepper
2 scallions, thinly sliced
Cooking spray
3/4 pound small red-skinned potatoes, cut into small cubes
2 carrots, thinly sliced
2 parsnips, thinly sliced
1 tablespoon extra-virgin olive oil
1 teaspoon fresh thyme, roughly chopped

Steps:

  • Preheat a grill to medium high. Combine the beef, egg, panko, 2 tablespoons barbecue sauce, 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Add the scallions, reserving 2 tablespoons of the greens for topping. Mix well with your hands.
  • Tear off four 20-inch-long sheets of foil and lightly coat with cooking spray. Toss the potatoes, carrots and parsnips with the olive oil, thyme and a big pinch each of salt and pepper in a large bowl. Divide the vegetables evenly among the prepared foil sheets, piling them on one side of the foil. Clear a spot in the middle of the vegetables for the meatloaf.
  • Divide the meat mixture into 4 pieces and shape each into a 3-by-4-inch mini meatloaf on the foil. Fold the foil over the meatloaf and vegetables; fold in the edges to form a packet.
  • Grill the foil packets, 10 minutes, then flip and continue grilling until the vegetables are tender and the meatloaves are cooked through, 5 to 8 more minutes. Carefully open the packets and brush the tops and sides of the meatloaves with the remaining 1/4 cup barbecue sauce. Sprinkle with the reserved scallion greens.

1 1/2 pounds Ground Beef (93% lean or leaner)
1/3 cup panko bread crumbs
1/3 cup finely chopped onion
1/3 cup milk
1 egg (lightly beaten)
1 clove garlic (minced)
1/2 teaspoon salt
1/4 teaspoon pepper
12 slider buns
Lettuce leaves (torn into approximate 3-inch pieces)
Tomatoes (sliced)
Onion (sliced and rings separated)
Ketchup

Steps:

  • Preheat oven to 350°F.
  • Combine all meatloaf ingredients in a large bowl, mixing lightly but thoroughly.
  • Divide mixture evenly into 12 equal portions. Press into the cups of a 12-cup mini bundt pan, leveling tops.
  • Bake for 20 minutes, or until internal temperature reaches 160°F.
  • Remove bundts from pan and let stand for 5 minutes before serving.
  • Note: The bundts will be light brown in color. If you prefer a darker outside (like with a burger) then take the bundts out a few minutes early. Remove bundts from pan and transfer to a rack positioned in a sheet pan. Broil for a few minutes.
  • Place a bundt, some lettuce pieces, a tomato slice, and 1 or 2 onion rings inside each slider bun.
  • Serve with ketchup or any other toppings to your preference.

The benefit of these Mini Bundt Meatloaves is that you can cook them in a shorter time than making one big meatloaf. These also can be frozen for a quick dinner idea later on. But I have been wondering, what is the history of meatloaf? Apparently, it goes all the way back to medieval Europe in the 5th century where scraps of food were combined for a meal. But meatloaf has been a traditional meal in Germany, Belgium and Scandinavia for a long time. Without a doubt, meatloaf is also very popular and a staple in the United States. Enjoy!

1 ½ pounds of ground meat (beef, turkey, pork, veal or a combination)
1 egg
1 onion, chopped
½ red bell pepper, finely chopped (optional)
2 cloves garlic, minced
1 cup milk
1 cup of breadcrumbs (I used Panko)
Salt and pepper, to taste
2 tbsp brown sugar
2 tbsp yellow mustard
⅓ cup ketchup
1 tsp thyme, chopped
1 tsp Worcestershire sauce
½ cup ketchup
¼ cup packed brown sugar

Steps:

  • Preheat oven to 350 degrees F. In a bowl, mix the last three ingredients and set the ketchup sauce aside. In a pan, sauté the peppers, onions and garlic until just translucent. Take off the heat and set aside to cool. In a large mixing bowl, combine all of the first 12 ingredients and mix with your hands to create the meatloaf mixture. Lightly grease a 6 cup Bundt or a 6-cup large muffin pan. You can also use a 12-cup muffin pan as well. Divide the meat mixture into equal portions in the 6 cups. Spoon the ketchup sauce over the 6 meatloaves. Bake for 30-40 minutes or until the internal temperature reaches 160 degrees F. This serves 6 and goes well with mashed potatoes and sautéed slivered Brussel sprouts as one option!

Nonstick cooking spray, for the pan
1 1/2 cups regular oats
1 cup whole milk
2 1/2 pounds ground turkey
4 slices bacon, cut into very small bits
3 tablespoons finely minced fresh parsley, plus more for serving
1/2 teaspoon seasoned salt, such as Lawry's
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
1 cup ketchup, plus more if needed

Steps:

  • Preheat the oven to 350 degrees F. Generously coat 18 standard muffin cups (from two 12-cup muffin pans) with cooking spray.
  • Put the oats in a small bowl and slowly pour the milk over them. Stir to make sure the oats are all coated and then let them sit for a few minutes.
  • Put the turkey and bacon in a separate large bowl and add the oats and any extra milk from the bowl to it. Add the parsley, seasoned salt, black pepper, red pepper flakes and 1/4 cup of the ketchup. Use your hands to mix it all together. Place a 1/4-cup scoop of the mixture in each greased muffin cup. Squirt about 1/2 teaspoon of the remaining ketchup on top of each meatloaf. Use a spoon to smear the ketchup evenly over the top, then use it to nudge the edges of the meatloaves away from the pan a bit (this just neatens them up a little).
  • Bake for 25 minutes, then carefully squirt another 1/2 teaspoon of ketchup on top of each, spreading it carefully with a spoon to cover as much of the surface as possible. Continue to bake until completely cooked through and sizzling around the edges, about another 30 minutes. If there are any large areas without ketchup, go ahead and squirt/spread more as needed.
  • Sprinkle the meatloaves with parsley, then let them sit in the pan for 5 to 7 minutes before serving. Run a sharp knife around the edges of the loaves to loosen them if they stick. Serve them warm with a veggie on the side

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

An updated retro favourite that makes a cheap and easy family meal

4 tsp olive oil
1 onion , finely chopped
1 carrot , finely chopped
50g fresh breadcrumb
175ml passata
2 tsp Worcestershire sauce
1 egg , beaten
500g lean beef or pork mince
2 tsp thyme leaves
2 plum tomatoes , halved, seeds scraped out
1 tsp sugar

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
  • Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).
