MINI BBQ CHEDDAR MEATLOAVES
Mini BBQ Cheddar Meatloaves are flavored with melty cheddar cheese and sweet BBQ sauce. This tasty twist on classic meatloaf is a hit with my family!

Steps:
- Cut onion in half then each half into thin slices. Melt butter in a large skillet or pot over medium heat then add onion and a dash of salt. Cook, stirring every couple of minutes, until onions are golden brown and caramelized, about 20 minutes. Turn heat down if onions start to burn. Set aside to cool slightly - can be made ahead of time.
- Preheat oven to 425 degrees. In a large bowl combine ground beef, egg, Worcestershire sauce, 2 Tablespoons BBQ sauce, bread crumbs, salt, pepper, cheese cubes, and caramelized onions, then mix until just combined. Divide mixture into 4 equal-sized portions then form into loaves and place on a foil-lined, non-stick-sprayed baking sheet. Spread 1 Tablespoon BBQ sauce over each loaf then bake for 20 minutes, or until no longer pink in the center, and then serve.
MINI BBQ BACON CHEDDAR MEATLOAF

- Preheat oven to 425 degrees.
- Cook and crumble bacon.
- In a mixing bowl, mix together all meatloaf ingredients except the BBQ sauce.
- Divide the mixture into 8 round loaves. Press a small depression into the middle of the meatloaves.
- Brush BBQ sauce on top of the meatloaves.
- Bake for 25 minutes. Turn on broiler and brown the BBQ sauce for 2 to 5 minutes.
- Let rest 5 minutes before serving.

- Preheat oven to 400°. In a large bowl, mix barbecue sauce, salsa and Worcestershire sauce; reserve 1/2 cup mixture for topping. CHEDDAR BBQ MEATLOAF MUFFINS
These meatloaf muffins--a cross between a meatball and a mini meatloaf--are easy to freeze in individual portions. Make a double batch now and freeze half for dinner next week.

- Preheat the oven to 375 degrees F. Pour the milk over the breadcrumbs in a large bowl and stir to combine. Add the meatloaf mix, 1 cup of the cheese, 1/4 cup of the barbecue sauce, the salt, pepper, green onions, garlic and egg and mix with your hands until just combined.
- Divide and shape the mixture into 6 balls and arrange the balls in a 6-cup nonstick muffin pan. Place the muffin pan on a rimmed baking sheet and brush the remaining 1/4 cup barbecue sauce on top of the meat.
- Bake for 40 minutes, rotating the pan halfway through cooking. Sprinkle with the remaining 1/4 cup cheese. Continue to bake until the meatloaf muffins are cooked through to an internal temperature of 165 degrees F, about 5 minutes more; the interior muffins may take a little longer to cook. Cool 5 minutes in the pan.
- Arrange on a serving platter and serve with mashed potatoes and a green salad.
MINI BBQ CHEDDAR MEATLOAF

- Directions: Over medium heat, the non-stick spray in a large skillet. Cut the onion into thin slices and add the onions to the pan. Sprinkle the onions with salt and pepper and stir. Cook the onions, stirring every couple of minutes, until the onions are caramelized. Turn the heat down if you notice the onions are burning. Once caramelized, set the onions aside to slightly cool. Preheat the oven to 425 degrees. Prepare a large baking sheet by lining it with foil. In a large bowl combine the ground beef, egg, 4 tablespoons BBQ sauce, cheese cubes, caramelized onions, and a dash of salt and pepper. Mix together just until combined. Divide the mixture into 5 equal-sized portions and form them into mini-meatloaves. Place each one of the foil lined baking sheet. Spread 1-2 tablespoons of BBQ sauce over the top of each loaf and then bake for 20 minutes, or until no longer pink the center. (I spread the last BBQ Sauce after it has cooked.)

BBQ CHEDDAR MINI MEATLOAF "MUFFINS"
I've always loved meatloaf- but never could find the right recipe. I especially hate all the fat left in the pan after a regular loaf is baked. This recipe is easy, absolutely delicious, and since you have 12 small "muffins" instead of 1 large loaf, there is not a lot of fat left in the bottom of the tin. If you don't want to stray from traditional meatloaf- go ahead and use ketchup instead- but I recommend trying the BBQ at least once- my family loves it! Also great for potlucks since everyone can have their own individual muffin!

- Preheat oven to 400 degrees. Place all ingredients in gallon zip-loc bag (except 1/4 cup of cheese & BBQ sauce). Squeeze until just mixed. (This keeps the mess out of preparing meatloaf!) Spoon mixture into a 12 cup muffin tin and press down firmly with back of spoon. Top with remaining BBQ sauce and place in oven for 25-35 minutes. Sprinkle remaining cheese on each muffin and bake additional 5 minutes. Allow to cool 5 minutes before removing from tins.

- Cut three 18x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 3-qt. slow cooker. These are so good, everyone loves these, even my grandpa who doesn't like cheese on or in anything, he couldn't even taste it! The sauce is so good! This has become my main meatloaf recipe! I got this from a Ground Beef Cookbook.

- In a bowl beat eggs and milk, stir in cheese, oats, onion, and salt.
- Crumble beef over mixture and mix well.
- Shape into 8 loaves place in 13x9x2 baking dish, I normally make my loaves bigger and can get about 4-5.
- In separate bowl, combine ketchup, brown sugar, and mustard, Mix well.
- The original recipe says to spoon over loafs and bake 45 minutes or until no longer pink and meat thermometer reads 160 degrees, uncovered at 350 degrees. However, I bake mine without the sauce until the last 10 minutes or so and then spoon the mixture over the loaves, replacing them back in oven to finish cooking.
