VEGAN MINESTRONE SOUP image

Loaded with veggies, beans and pasta, this Vegan Minestrone Soup is healthy, comforting and so easy to make in one pot and ready in about 30 minutes!

Number Of Ingredients 20

1 tablespoon olive oil or 1/4 cup water for water saute
1 medium onion, diced
2 medium carrots, diced
2 celery ribs, diced
3 - 4 cloves garlic, minced
1 zucchini, cut into half moons
1/3 pound green beans (about 1 1/2 cup), cut into 1 inch pieces
1 can (14oz) kidney beans, drained and rinsed
1 can (14oz) chickpeas (garbanzo beans), drained and rinsed
1 can (28oz) diced tomatoes, with juices
2 teaspoons Italian seasoning blend
generous pinch of red pepper flakes
2 - 3 bay leaves
1 cup small pasta (elbow, shells, mini penne, rotini)
4 cups vegetable broth
2 - 4 cups water
2 handfuls fresh spinach
mineral salt & pepper to taste
lemon, juice of
fresh parsley, chopped

Steps:

  • In a large dutch oven or pot, add the oil or water and saute the onion, carrot and celery for 5 minutes.
  • Alternately, you can skip sauteing and add all the ingredients, except for the spinach, to a large pot, bring to a boil and continue with the recipe as written. This makes for one less step!
  • Add remaining ingredients, except the spinach, bring to a boil, cover askew, reduce heat to low and simmer at a gentle boil for 20 - 25 minutes, stirring occasionally. Soup is done when veggies are tender and pasta is cooked. Add more broth or water as needed.
  • Five minutes before soup is done, add the spinach and stir to mix.
  • Let soup cool a few minutes and serve with a squeeze of lemon and chopped parsley on top. Pairs will with homemade Vegan Cornbread, crusty Artisan Bread or soft and chewy Vegan Naan for soaking up the juices.
  • Serves 4 - 6
  • Leftovers can be stored in the refrigerator for up to 5 days. This soup also freezes well and will last for up to 2 months.

While it's positively packed with vegetables, this soup is still hearty and filling. We rendered the fat from pancetta and used it to cook the vegetables to add more depth of flavor. The addition of white beans and pasta help make it a meal.

3 tablespoons olive oil
4 ounces pancetta, cut into 1/8-inch pieces
3 large carrots, cut into 1/2-inch pieces
2 large celery stalks, cut into 1/2-inch pieces
1 medium yellow onion, chopped
3 cloves garlic, finely grated
2 bay leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
12 ounces small Yukon potatoes, quartered
1 large zucchini, cut into 1/2-inch pieces
One 14-ounce can whole peeled tomatoes, crushed
4 cups packed curly kale leaves, torn
One 15-ounce can cannellini beans plus liquid
1/2 cup dry ditalini or other small pasta shape
Grated Parmesan, for serving

Steps:

  • Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Add the pancetta and cook, stirring occasionally, until the fat has rendered and the meat is golden brown on all sides, 5 to 7 minutes. Transfer the pancetta with a slotted spoon to a large bowl, leaving the fat in the pot.
  • Reduce the heat to medium. Add the carrots, celery, onions, garlic, bay leaves, red pepper flakes, 4 teaspoons salt and 1/2 teaspoon black pepper and cook, stirring occasionally, until tender but not browned, 6 to 8 minutes. Add the potatoes and zucchini and cook, stirring occasionally, until slightly softened, about 5 minutes. Return the pancetta to the pot, stir in the tomatoes and 8 cups water and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the potatoes are just tender, about 20 minutes.
  • Add the kale, beans and their liquid and pasta and continue to cook until the pasta is cooked through and the kale is tender, about 10 minutes. Discard the bay leaves and season with more salt and pepper if necessary. Serve with grated Parmesan.

This vegetable-packed minestrone relies on flavorful dried cannellini beans, which benefit from the long cooking time of a slow cooker (and no soaking is required!).

8 ounces dried cannellini beans (about 1 cup)
3 medium carrots, sliced 1/2 inch thick
3 cloves garlic, thinly sliced
2 bay leaves
2 large stalks celery, sliced into 1/2-inch pieces
1 medium sweet potato (about 10 ounces), peeled and cut into 1/2-inch pieces
1 medium yellow onion, chopped
1/4 teaspoon crushed red pepper flakes
Parmesan rind, optional, for simmering
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
One 28-ounce can diced tomatoes
3 tablespoons tomato paste
2 cups thinly sliced curly kale
Freshly grated Parmesan, for serving
Sliced toasted baguette, for serving
Cooked ditalini pasta, for serving, optional

Steps:

  • Add the beans, carrots, garlic, bay leaves, celery, sweet potato, onion, crushed red pepper flakes, Parmesan rind, if using, 1 tablespoon salt and a few grinds of black pepper to the insert of a 6-quart slow cooker. Stir in the crushed tomatoes, diced tomatoes, tomato paste and 4 cups water. Cover and cook until the beans are tender, 6 hours on high or 8 hours on low.
  • Stir in the kale, cover and let simmer until just wilted, about 10 minutes. Ladle the soup into bowls and garnish with freshly grated Parmesan. Serve with toasted baguette, if desired.
  • If using pasta, spoon 1/2 cup cooked pasta into each bowl and ladle the soup on top. Store the pasta and soup in separate containers.

1 large onion, chopped

1 tablespoon minced fresh parsley
1 ½ teaspoons dried oregano
1 teaspoon salt
¾ teaspoon dried thyme

½ cup elbow macaroni
4 cups chopped fresh spinach
¼ cup finely grated Parmesan cheese, or more to taste

Steps:

  • Combine vegetable broth, tomatoes, kidney beans, onion, celery, carrots, green beans, zucchini, garlic, parsley, oregano, salt, thyme, and black pepper in a 6-quart slow cooker.
  • Cook on Low for 6 to 8 hours.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
  • Stir spinach and macaroni into minestrone; cook another 15 minutes. Top with Parmesan cheese.

This is one of my family's absolute favorite soups. The tender, succulent tofu nuggets are a big hit with non-vegetarians too. We always serve it with a loaf of freshly-cooked bread cut in thick slices... *drool*

1 lb firm tofu, frozen and thawed
2 -3 tablespoons tamari
1/2 teaspoon garlic powder
1 onion, chopped
2 carrots, sliced
1 zucchini, peeled and sliced (or 2 small)
4 cups water
2 cups low-sodium tomato juice (I use V8)
2 -3 teaspoons dried basil
1 1/2 teaspoons dried oregano
1/2 teaspoon garlic powder
1/4 tablespoon black pepper
salt, to taste
3 ounces whole wheat spaghetti, broken or 3 ounces other pastas, shapes
2 cups low-sodium kidney beans (I cook my own) or 1 (19 ounce) can kidney beans

Steps:

  • Gently squeeze excess water from the tofu. Dice it into small-ish cubes, and transfer to a large bowl. Pour in the tamari, 1 Tbsp at a time, stirring to coat evenly. Stir with a wooden spoon to avoid breaking the cubes.(All the tamari will be soaked up- this is fine.) Sprinkle on the garlic powder and stir again.
  • Place the cubes in a single layer on a cookie sheet and bake around 325 F for 10 minutes. Turn the cubes and bake about 5 more minutes, till golden brown on all sides (don't they smell good!)Set aside.
  • Meanwhile, soften the carrot, onion and zucchini in a little water, in a large pot. When onions are softened, add all the other ingredients EXCEPT the pasta, and beans if canned.
  • Bring to a boil, and add the pasta. Reduce the heat to a simmer for 15 minutes. About 5 minutes before serving, add beans.
  • Sprinkle each bowl of soup with a handful of tofu cubes.
  • When storing leftovers, put the tofu in a seperate container and warm the cubes briefly in a toaster oven (for crispiness)or microwave before adding to the soup.

From Louise Hagler's Tofu Cookery. We can hardly wait for the first minestrone of the season and practically make a ceremony out of it, then make it all winter long. This is the best recipe I've found. We keep it in the fridge and eat it often. Reheats like a dream in the microwave.

1 lb tofu, frozen, thawed, squeezed, and cut into 1/4-inch cubes
3 tablespoons soy sauce
1/2 teaspoon garlic powder
2 tablespoons olive oil
1 medium onion, chopped
2 carrots, chopped
1 medium zucchini, chopped
28 ounces canned diced tomatoes, undrained
4 cups water
2 cups tomato juice
2 teaspoons basil
1 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
3 ounces broken spaghetti
15 ounces canned kidney beans, drained & rinsed

Steps:

  • Preheat oven to 375°F.
  • Mix together the soy sauce and 1/2 tsp garlic powder.
  • Toss with the tofu cubes and spread on oiled cookie sheet.
  • Bake 15 minutes, flip and bake another 15 minutes until cubes crisp up.
  • When done, set aside.
  • Meanwhile heat oil and add the onion, carrots and zucchini.
  • Sauté for 10 minutes.
  • Then add the tomatoes, water, juice, basil, oregano, garlic powder, salt & pepper.
  • Bring to a boil and add the broken spaghetti; simmer for about 15 minutes.
  • Add the kidney beans and the browned tofu cubes.
  • Heat through and serve.

Whip up this classic Italian vegetable soup with a rich tomato base and pasta. It's low in calories and packed with fibre and vitamin C

3 tbsp olive oil, plus extra to serve
1 onion, finely chopped
1 celery stick, finely chopped
1 carrot, peeled and finely chopped
1 courgette, finely chopped
70g diced smoked pancetta
1 large garlic clove, crushed
½ tsp dried oregano
1 x 400g can cannellini beans
1 x 400g can chopped tomatoes
2 tbsp tomato purée
1.2 litre vegetable stock
1 bay leaf
70g small pasta
100g greens - kale, chard or cavolo nero work well
handful of basil
finely grated parmesan, to serve

Steps:

  • Heat the oil in a large saucepan or casserole pot over a low-medium heat and gently fry the onion, celery, carrot, courgette and pancetta for 10 mins. Add the garlic and oregano, and cook for 1 min. Tip in the beans, chopped tomatoes, purée, stock and bay leaf. Season to taste. Bring to the simmer and cook for 30 mins.
  • Add the pasta and greens, and cook for a further 10 mins. Ladle into bowls and scatter with the basil and some parmesan.

  • Heat the oil in a dutch oven over medium heat. Once the oil is shimmering, add chopped onions, chopped carrots, chopped potatoes, and chopped celery. Cook for 7–10 minutes, stirring occasionally until vegetables are tender.
  • Next add the canned tomatoes (including the liquid) water, bouillon, and pasta. Give it a stir and add the 2 bay leaves. Increase heat to medium-high and bring the pot to a boil. Reduce heat to a gentle simmer, partially cover the pot with a lid (to create a vent). Simmer for 15 to 20 minutes, until the carrots are tender.
  • Remove the lid and add beans, chopped zucchini, chopped spinach, basil, and oregano. Stir and then continue simmering for another 5 to 10 minutes, until the pasta is cooked according to your preferences.
