Steps:
- Mash and prepare your potatoes to be ready when the mince is completely cooked. On medium heat in a large skillet, brown the beef and onions.Once cooked, add flour to mixture.Pour beef stock over mixture, lower heat and simmer 15-20 minutes.Serve the mashed potatoes with the meat - or serve the mashed potatoes on top of the meat - your preference!
- Kitchen Tip: I simmered the mince longer and added a smidge more flour for a consistency I desired. If you are a cook who likes to tweak recipes, this recipe can be easily tweaked for the preference of the audience regarding consistency and optional vegetables or Worcester sauce.

HAGGIS, NEEPS & TATTIES
Enjoy a traditional Scottish meal of haggis, neeps and tatties - it's perfect for any Burns Night dinner or simply when you fancy something comforting

Steps:
- Heat the haggis following pack instructions. When the haggis has 30 mins cooking time remaining, tip the potatoes into a large pan of generously salted cold water, then bring to the boil over a medium heat and cook for 10-12 mins until very tender when pierced with a fork. Drain well and leave to steam-dry in the colander for 10 mins.
- Add half the milk and two-thirds of the butter to the pan used to cook the potatoes, and warm over a low heat until the butter is melted and the milk is just steaming. Remove from the heat and return the potatoes to a pan, then use a potato masher to mash everything together. Or, pass the potatoes through a medium sieve into the pan in batches using the back of a spoon or ladle. (Using a sieve will give you a very fine, no-lump texture.) Season well with salt and pepper.
- Meanwhile, cook the swede and carrots in a pan of boiling water for 18-20 mins until very tender when pierced with a fork. Drain well and leave to steam-dry in the colander for 10 mins. Return the vegetables to the pan along with the remaining milk and butter, then coarsely mash using a potato masher - you don't want a smooth texture here. Season well. Serve the haggis with the neeps and tatties alongside.

- Brown beef in a large skillet over medium-high heat, breaking meat up with a wooden spoon if necessary. Once beef starts to brown add onions to the skillet. Cook for a few minutes until vegetables start to soften, but not brown. Add garlic and cook stirring for 1-2 minutes. Add wine and deglaze pan by scraping the bottom with spoon. Allow wine to reduce and evaporate by more than half.
- Meanwhile, place potatoes and bay leaves (if using) into a large sauce pan and cover with 2-3" of cold water. Add 1 tsp of salt and bring to a boil over high heat. Reduce heat to a strong simmer and cook for around 20-25 minutes until tender.

- Place a large saucepan over a medium high heat and brown the mince, breaking it up with a fork to separate it. Crumble in the Oxo cube, add the onions and continue to cook on a high heat until the mince has browned and no traces of pink remain.
- Add the diced carrots, the gravy or beef stock and the Worcestershire sauce, if using. Turn the heat to low-medium, pop on a lid and cook for at least an hour or until the mince is nice and soft and the gravy has thickened. Season to taste. That's all there is to it!
- Cook your tatties, mash them with lots of butter (some people add milk but I don't usually bother) and season to taste with salt and pepper.
