Steps:
- Combine the granulated sugar, 1/2 cup water and chopped dragon fruit in a small saucepan over medium-high heat. Bring to a simmer and cook until the sugar dissolves, about 2 minutes. Mash the dragon fruit with a fork or potato masher. Set aside to cool completely. (The dragon fruit will tint the simple syrup pink while it cools.) Once cooled, strain the dragon fruit pieces and discard. (See Cook's Note.)
- To serve, fill 6 champagne flutes with sparkling wine. Pour about 1 tablespoon of the dragon fruit simple syrup into the bottom of each of the champagne flutes. Top each with 1/4 cup of passion fruit juice. Garnish with the dragon fruit slices.

From purewow.com

- Sangrita. It’s a cross between sweet summer sangria and a citrusy margarita. Swoon. Don’t skimp on the lime sugar garnish that comes together in a flash.
- Beer Bloody Mary. Don’t worry, there’s still vodka in this classic morning sipper, along with tomato juice, horseradish and hot sauce. But it’s crisper and more refreshing, thanks to eight ounces of pale lager.
- Raspberry-Lime Champagne Punch. The most sophisticated way to serve sparkling wine to a crowd. Garnish each flute with fresh raspberries and a lime wheel for a summery finishing touch.
- Grapefruit Wine. Rosé + grapefruit juice = a refreshingly fancy (yet ridiculously simple) brunch cocktail. Want to make it even stronger? Add a dash of gin.
- White Sangria with Peaches and Berries. Instead of adding ice to the pitcher, keep it cold all morning long with frozen peach slices and raspberries. That way, the drink won’t get diluted over time.
- Raspberry Prosecco Ice Pops. Ice pops might not be the first menu item that comes to mind when planning a brunch, but hear us out. One can be propped up inside a glass of white wine or prosecco, where it’ll keep your drink cold and infuse it with fruity flavor as it melts.
- Beer Margarita. Margaritas are already bright and refreshing as is. But add a pilsner-style beer to the mix and it’ll help you beat the heat on the hottest summer day.
- Strawberry Rhubarb Rosé Sangria. Rhubarb and strawberries can do so much more than just pie. Here, the rhubarb is simmered in water and sugar to create a tart syrup.
- 5-Ingredient Xantolo Cocktail. It’s smoky. It’s sour. It’s spicy. It’s damn delicious. Think mezcal and tequila cut with spiced pineapple syrup, lime juice and a chili powder rim.
- Grapefruit Radler. You and summer shandy—that classic 50/50 mix of beer and lemonade—go way back. But have you ever sipped a radler? It’s just as citrusy and crisp, only it stars fresh grapefruit juice.

- The Classic Mimosa. It doesn't get any easier than this! The classic mimosa recipe calls for a bottle of your favorite Champagne, orange juice, and (optional) triple sec.
- Buck's Fizz. The Buck's fizz likely inspired the mimosa. This is another classic cocktail and nearly the same drink, with its simple mix of orange juice and sparkling wine.
- Pineapple Mimosa. The pineapple mimosa offers a few extra layers of flavor for you to enjoy. It begins with a top-shelf pineapple vodka and just a little orange juice.
- Pomegranate Mimosa. It's time for a bright red mimosa and pomegranate juice is the perfect way to get it. This delightfully easy cocktail is one that can add flair to any party, big or small.
- Pomegranate Tequila Sunrise Mimosa. The tequila sunrise is a beautiful drink inside and out. With one small addition, it can become even more amazing and the transformation relies on sparkling wine.
- Bellini. You can take your mimosa in many different ways and use any fruit you like. If you decide to go with peaches, then you have another popular brunch cocktail known as the Bellini.
- Poinsettia. The classic poinsettia is a favorite for holiday parties, but it works year-round and for any occasion. The juice of choice for this cocktail is the popular and easy to find cranberry.
- Christmas Mimosa. All the best flavors of the holidays come together in the Christmas mimosa. This recipe uses both pomegranate liqueur and cranberry juice, along with your favorite sparkling wine.
- St. Germain Cocktail. For spring affairs, a light, airy, and floral Champagne cocktail is a perfect fit. The St. Germain cocktail is one of the best recipes for the season and it requires one simple substitution from the Buck's fizz.
- Champagne and Chambord. You will need just two ingredients for this delightfully simple cocktail. Better yet, there's no guesswork because the name Champagne and Chambord says it all!
