CLASSIC BANANA PUDDING
The key to this simple, but delicious banana pudding is the homemade vanilla custard, which sets up to the perfect consistency. It's not too thick, but not too thin. The addition of a small amount of heavy cream also gives the custard a luscious texture with just the right amount of richness.

Steps:
- Whisk 1/4 cup sugar, the cornstarch and egg yolks in a large bowl to make a paste. Combine the milk, 1/2 cup each heavy cream and sugar and the salt in a medium saucepan and bring to a simmer over medium heat. Slowly pour the hot milk mixture into the egg yolk mixture while whisking. Return the mixture to the saucepan and bring to a boil over medium heat. Boil, whisking constantly, until smooth and thickened, about 3 minutes. Remove from the heat and whisk in the butter and vanilla. Set the pudding aside to cool slightly, about 10 minutes.
- Spread 1/2 cup pudding in a 2-quart baking dish. Layer about one-third of the banana slices on top, followed by half of the cookies and a heaping cup of the pudding. Top with another one-third of the banana slices and another heaping cup of pudding, then top with the remaining banana slices, cookies and pudding. Cover with plastic wrap and refrigerate 6 hours or overnight.
- When ready to serve, beat the remaining 1 cup heavy cream and 2 tablespoons sugar in a medium bowl with a mixer on medium-high speed until stiff peaks form, about 2 minutes. Spread on top of the pudding. Top with crushed cookies.

Steps:
- Combine flour, sugar and salt in a heavy sauce pan.
- Beat egg yolks. Combine egg yolks and milk, mixing well. Stir into dry ingredients.
- Cook over med heat, stirring constantly until smooth and thickened. Remove from heat.
- Stir in 1 tsp vanilla.
- Layer one-third of wafers in 3 qt baking dish. Slice bananas and layer over wafers. Pour 1/3 of cusard over bananas. Repeat layers twice.
- Beat egg whites until foamy. Gradually add 1/4 c plus 2 tbsp of sugar, 1 tbsp at a time, beating until stiff peaks form.
- Add 1 tsp vanilla and beat until blended.
- Spread meringue over custard, sealing edges of dish. Bake at 425 for 10-12 min or until golden brown.

MAMA'S BANANA PUDDING

- In a large bowl, place one layer of sliced bananas, then a layer of wafers until bowl is filled, making sure top layer is wafer. Set aside. In a medium saucepan beat eggs, add sugar and mix well, add flour, milk, vanilla. Bring to boil, pour over bananas and wafer mixture. Chill and Serve.
- TIP: FRIED PLANTAINS
- To peel easily, soak in cold water and peel off skin with knife. Cut into 2-inch diagonal slices and fry in 380 degree oil until golden.

- Mix cream cheese and Eagle Brand milk.
- Add milk and pudding; mix well.
- Stir in ½ Cool Whip.
- Save other half for topping.
- In a large bowl, make several layers of pudding mixture, bananas and vanilla wafers.

- Stir together the sugar, corn starch, salt and milk. Microave this on high for 8-9 minutes stirring every 2 minutes.
- Remove some of this liquide and stir slowly into egg yolks - too much and you will cook them. Once mixed slowly add to the hot mixture. Microwave on high for 1-2 minutes until thick and glossy. Stir in butter and vanilla.

- Fill a 9 x 9 x 2 1/2" baking pan with the bread cubes and sprinkle the raisins on top.
- (Use enough bread to come to the top of the pan. You might not use the whole loaf).
- Whisk the remaining ingredients together to make a batter, pour over the top of the bread and stir lightly. Allow the bread to soak 1/2 hour. The pan will be very full. If you have too much batter, discard the excess. If there's not enough, add a little more milk to the pan.
- Bake in a 325° oven for about 40 minutes until the pudding is golden brown and puffed up around the edges. The center should be "set" but still a little soft. You can make this ahead of time and heat it in the microwave oven later.
