All you do is brown the Italian sausages and your slow cooker does the rest in this warming dish with colorful bell peppers, rich tomato sauce, and fresh basil.

4 sweet Italian sausage links
4 hot Italian sausage links
1 red bell pepper, sliced
1 sweet onion, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
2 cloves garlic, minced
1 (24 ounce) jar Ragu® Old World Style® Traditional Pasta Sauce
1 loaf hearty bread
1 bunch fresh basil, leaves removed and torn

Steps:

  • Heat oil in a large skillet over medium-high heat. Cook sausages, turning to brown all sides, 4 to 5 minutes.
  • Place browned sausage in slow cooker. Add the peppers, onions, garlic, and Ragu® Old World Style® Traditional Pasta Sauce to the slow cooker; stir. Turn to low and cook for 6 to 8 hours.
  • Serve over slices of hearty fresh bread; garnish with fresh basil.

1 (26 ounce) jar spaghetti sauce
1 green bell pepper, seeded and sliced into strips
1 onion, sliced
6 hoagie rolls, split lengthwise

Steps:

  • Place the Italian sausage links, spaghetti sauce, green pepper and onion into a slow cooker. Stir to coat everything in sauce.
  • Cover, and cook on Low for 6 hours. Serve on hoagie rolls.

This is a very easy recipe I found and tastes yummy! I serve it with french bread, or rice to soak up the juices. Enjoy!

2 -3 lbs mild Italian sausage
2 (14 ounce) cans stewed tomatoes
1 (24 ounce) jar spaghetti sauce (I use Prego Traditional, but you can use your favorite)
3 -4 bell peppers, sliced (red, orange, yellow)
1 onion, sliced

Steps:

  • Place onions and peppers, then sausage in crock pot. Pour the stewed tomatoes on top of the sausage, then the spaghetti sauce. Sometimes I add a touch of water to make more sauce.
  • Cook in crock pot for 6-8 hours on low, 3-4 hours on high.

A friend gave me a recipe that required roasting in the oven, but I could never get it right. Instead I experimented with it in the crockpot and it is SOOOO good! Easy, hearty, cheap, and comfort food at its best!

2 -3 lbs red potatoes
24 ounces frozen stir fry vegetables, pepper and onion
2 cups water

  • Cut sausages and potatoes into bite sized chunks.
  • Dump all ingredients into large crock pot.
  • Cook on low 6 hours.
  • Drain liquid and serve.
  • Delicious!

This is another simple recipe I came up with using some ingredients that became available on island.

300 g frozen oregon bean medley
150 g frozen assorted bell peppers (julienned-style)
1/2 large onion (quartered and sliced)
250 g spicy sausage (cut to bite size)
5 slices bacon (julienned)
1 (15 ounce) can diced tomatoes with juice
2 tablespoons tomato paste
1 tablespoon minced garlic
1 tablespoon parsley flakes
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon sage
1/4 teaspoon ground cloves
1/2 teaspoon mustard powder
1 teaspoon white pepper
1 teaspoon soy sauce
2 cups chicken broth or 2 cups bouillon
1/4 cup flour

Steps:

  • Place all the ingredients, except bouillon and flour, into the crock pot.
  • Thoroughly mix flour into chicken broth.
  • Pour mixture over ingredients in the crock pot.
  • Cover and cook on high for 5 to 6 hours, stirring occasionally.
  • ***For a quick and tasty lunch, combine the Bean Medley and Sausage Stew with a toasted combo "baby cheese", onion cheese, and mushroom cheese sandwich.

  • Lightly coat a 6-quart or larger slow cooker with nonstick spray. Heat a large skillet over medium high. Add 1/2 tablespoon oil. Once the oil is hot, add half of the sausages in a single layer (do not crowd the pan or the sausages will not brown properly). Cook for 1 to 2 minutes on all four sides, or until the outsides are golden brown (the sausages do not need to be cooked all the way through.) Transfer to the slow cooker. Add the next 1/2 tablespoon olive oil and repeat with remaining sausages.
  • Increase the heat slightly. Add the final 1/2 tablespoon oil, then the onions, 1 tablespoon water, salt, and pepper. Cook until the onions are starting to brown and become tender, 5 to 6 minutes. Add the garlic and red pepper flakes and cook 1 additional minute, then add the wine. Let cook until the wine evaporates, scraping up any bits that have stuck on to the bottom of the pan. Transfer the onions and any pan juices to the slow cooker with the sausages.
  • Add the bell peppers and crushed tomatoes to the slow cooker. Cover and cook for 5 to 6 hours on low or 2 to 3 hours on high, or until sausages are cooked through and tender. (I prefer and recommend the low, long cooking time, as it makes the sausages more tender, but high works if you are in a hurry.) Serve over pasta or inside rolls with provolone cheese on top.
