MILLIONAIRE'S PIE
This luscious, silky pie calls for a baked pie shell, and the flaky contrast with the gooey filling is really good. But if you're running short on time, you can substitute a graham cracker crust to eliminate that step. Do remember to chill the pineapple though. Simply put the can in the refrigerator as soon as you bring it home from the grocery store. Taken from the "From Storebought to Homemade" cookbook. Note: cooking time is refrigeration time.

Steps:
- If using a traditional pastry shell, bake it according to package directions.
- Combine the cream cheese, sugar, pineapple and Cool Whip; blend well.
- Transfer the filling to the pie shell and, if you wish, sprinkle the top with chopped pecans.
- Cover and chill for several hours.

Steps:
- Drain the pineapple in a fine mesh strainer before beginning, pushing as much juice from the pineapple pieces as possibly with the back or a spoon. Set aside.
- In a large bowl with a hand-held mixer or a whisk beat the sweetened condensed milk with the lemon juice until slightly thickened.
- Fold the thawed whipped topping into the sweetened condensed milk and lemon juice until completely combined.
- Add the crushed pineapple, shredded coconut and pecans to the bowl. Fold the ingredients together with a large spoon or spatula.
- Once all of the ingredients are combined well pour the pie filling into the graham cracker crust. Smooth the top and cover the pie with the plastic pie crust lid.
- Place in the freezer and freeze over night.
- About an hour before serving spread the second container of whipped topping over the top of the pie. Garnish with maraschino cherries and chopped nuts if desired.
- Makes 10 servings.

This is a great recipe for a quick pie that does taste like a million bucks. My daughter has been making this every Thanksgiving since she was 11. Very easy preparation. The recipe calls for 2 graham cracker crusts, but we have also made it with the chocolate crumb crusts as well. They are delicious as well.

- To make the pie filling, grab a large bowl and combine coconut, crushed pineapple, maraschino cherries, 1/4 cup pecans, condensed milk, lemon juice and maraschino cherry juice. Once all those ingredients are mixed together, gently add in 1 1/2 cups of the whipped topping (half the container). Pour the mixture into the pie crust.
- Garnish the pie with the rest of the whipped topping and the other 1/4 cup of pecans, plus more cherries and coconut if you like. Refrigerate the Millionaire Pie for a total time of at least three hours; overnight works, too. Then slice, serve and enjoy! You can also freeze the pie part way, which helps if you want clean cuts to the pie when you serve it.
