Provided by Tara Teaspoon

Categories     Dessert

Time 10m

Number Of Ingredients 5

3 sticks unsalted butter
¾ cup unsweetened cocoa
½ cup milk ((2% or whole))
2 tsp vanilla extract
8 cups confectioners' sugar

Steps:

  • In the microwave or on in a saucepan, melt together ½ cup of the butter (1 stick) cocoa and milk and stir until smooth. Cool slightly.
  • In another large bowl, beat remaining butter and vanilla together, then add cooled cocoa mixture.
  • Add confectioners' sugar 1 cup at a time, blending with each addition, until frosting is smooth and creamy. For a stiffer frosting for piping, use all 8 cups of sugar. For a softer frosting for swooping on a cake, use just 7 cups of confectioners' sugar.
  • Use this frosting for your recipe of choice. Some suggestions are my: Almond Cake, Black Cat Cupcakes, or this Classic Yellow Cake.

Time 1h

Yield 24 cupcakes

Number Of Ingredients 19

1 1/2 cups flour
1 cup unsweetened cocoa
1 1/4 teaspoons baking soda
1 1/4 teaspoons baking powder
1 teaspoon salt
2 cups sugar
3/4 cup hot water
3/4 cup milk
2 large eggs
1/2 cup vegetable oil
1 1/2 teaspoons vanilla extract
1 cup unsalted butter
3 tablespoons dark corn syrup
1 teaspoon vanilla
1 pinch salt
2/3 cup unsweetened cocoa, sifted
1 lb confectioners' sugar, sifted
1/2 cup whipping cream
candy sprinkles (optional)

Steps:

  • Cupcakes: sift the flour, cocoa, baking soda, baking powder and salt into the bowl of a heavy mixer fitted with the paddle attachment; add sugar.
  • Turn the mixer on low and add, in order; water, milk, eggs, oil and vanilla; scrape down the sides of the bowl and beat on medium, briefly, to achieve a smooth batter.
  • Scoop the batter into muffin tins lines with paper baking cups; each cup should be about half full; slide the tins onto a baking sheet and bake at 325° until a toothpick inserted into the center comes out clean, about 30 minutes.
  • While cupcakes are cooling, prepare the frosting.
  • Frosting: Cream the butter in the bowl of a mixer, using the paddle attachment; beat in the corn syrup, vanilla and salt.
  • With the machine off, spoon in the cocoa; carefully turn the mixer on low so as to avoid death by cocoa inhalement; do likewise for the sugar, in three parts; last, add the cream then beat until fluffy.
  • .
  • When the cupcakes are completely cool, frost generously and shake on some sprinkles if you like.

CLASSIC YELLOW CUPCAKES WITH MILK CHOCOLATE FROSTING

Time 2h

Yield 12 cupcakes

Number Of Ingredients 16

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
2 large eggs, room temperature
2/3 cup sugar
3/4 cup unsalted butter, melted
2 teaspoons pure vanilla extract
1/2 cup milk
3 1/2 ounces milk chocolate
3 ounces semisweet chocolate
2 cups confectioners' sugar, sifted
1/4 cup milk
1/4 cup (1/2 stick) unsalted butter, softened
2 teaspoons pure vanilla extract
1/4 teaspoon salt
Decorative sugar cookies or marshmallow candies to decorate

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line the muffin tin with cupcake liners.
  • Whisk the flour, baking powder, and salt together in a medium bowl.
  • In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.
  • While mixing slowly, add half the dry ingredients, then add all the milk, and follow with the rest of the dry ingredients. Take care not to over mix the batter. Divide the batter evenly in the prepared tin (about 1/3 cup batter per cup cake).
  • Bake until a tester inserted in the center of the cakes comes out clean, 20 to 25 minutes. Cool cupcakes on a rack in the tin for 10 minutes, then remove. Cool on the rack completely.
  • For icing:
  • Put the chocolates in a medium heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl over, but not touching, the water. Stir the chocolate occasionally until melted and smooth. (Alternatively, put the chocolate in a medium microwave-safe bowl. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue heat until completely melted, about 1 to 2 minutes more.)
  • Add the confectioners' sugar, milk, butter, vanilla extract, and salt and beat with an electric mixer until smooth and creamy. Divide icing evenly between cupcakes and swirl with the back of a spoon or an offset spatula. Top with a sugar cookie or marshmallow candies. Serve.

VEGAN DARK CHOCOLATE CUPCAKES WITH FROSTING

Vegan Dark Chocolate Cupcakes With Frosting image

This recipe is fantastic and the cupcakes turn out very moist because of the applesauce. My entire family raved about them! You don't have to be a vegan to enjoy these, these are also ideal for those with egg or dairy allergies. Make sure you're using trans fat free margarine like Nucoa or Earth Balance (both vegan). This recipe can easily be cut in half as well. (Update: I changed the frosting recipe due to inconsistent results. The new one is much better, in my opinion. Recipe from Vegan Cupcakes Take Over The World).

Time 30m

Yield 30 cupcakes, 30 serving(s)

Number Of Ingredients 15

2 cups boiling water
1 cup unsweetened cocoa powder
2 3/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup margarine, softened
2 1/4 cups white sugar
3/4 cup applesauce
1 1/2 teaspoons vanilla extract
1/2 cup shortening
1/2 cup margarine
3 1/2 cups powdered sugar, sifted
1 1/2 teaspoons vanilla extract
1/4 cup soymilk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line muffin tin(s) with paper liners.
  • In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.
  • In a large bowl, cream margarine and sugar together until light and fluffy. Beat in the applesauce, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Pour mixture into prepared muffin cups, filling each 2/3 full. (If making a cake instead of cupcakes, use 3- 9 inch pans, coated with non-stick spray.).
  • Bake in preheated oven for 20 to 25 minutes (or 25-30 mins for a cake). Allow to cool.
  • Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 more minutes. Add the vanilla and soy milk, and beat for another 5 to 7 minutes until fluffy. Adjust with more soy milk or confectioners' sugar if necessary. Frost cupcakes once they are completely cooled.
