OLD SCHOOL HAMBURGER HASH
Hamburger Hash is a budget-friendly meal that is made from ground beef, diced onions and diced potatoes. Serve with some fried eggs!

Steps:
- If you aren't using leftover roasted or cooked potatoes, you'll need to prepare some. These Oven Ready/Grill Ready Little Potatoes couldn't be easier. They come in an aluminum baking tray and the seasonings are already provided.
- In a large skillet over medium-high heat, brown and crumble the ground beef along with the diced shallot. Season well with salt and pepper.
- Drain any excess grease, place 2 tablespoons of butter into the pan to melt.
- Put cooked beef back into the pan, then add in the diced Little Potatoes. Turn the heat up and season the mixture with salt and pepper and stir.
- Using the back of a spatula, press down on the hash mixture. This will help the the beef and potatoes to get a little crisp. Let it cook for a couple of minutes. Then flip it all over and do the same process again.
- At this point, you can turn down the heat and crack a couple of eggs over top, place the lid on and allow them to cook for a couple of minutes. Or you can serve it, as is, on the side.

ROAST BEEF HASH AND EGGS
Steps:
- Place the diced potatoes in a medium saucepan, add water to cover by 2 inches, plus the vinegar and 2 teaspoons salt. Bring to a boil, lower the heat, and simmer for 5 minutes. Drain and set aside.
- Meanwhile, heat a large (12-inch) saute pan over medium heat, add the bacon, and saute for 6 to 8 minutes, until lightly browned. Transfer the bacon to a plate using a slotted spoon. Put the potatoes in the saute pan and cook over medium to medium-high heat, tossing occasionally with a spatula, for 6 to 8 minutes, until the potatoes are lightly browned. If the pan is dry, add a few tablespoons olive oil. Add the bacon, onion, 2 teaspoons salt, and 1 teaspoon pepper, toss well, and cook over medium heat for 8 minutes, tossing occasionally. Add the beef, Brussels sprouts, and Sriracha, and cook for 3 to 4 minutes, tossing occasionally, until heated through and the sprouts are crisp-tender.
- Meanwhile, melt the butter in a medium (10-inch) saute pan. Carefully crack the eggs into the corners of the pan, sprinkle with salt and pepper, and cook over medium heat for 3 to 4 minutes, until the whites are almost cooked. Cover the pan and cook over low heat for one minute, until the whites are cooked but the yolks are still runny.
- Spoon a serving of hash and place a piece of toast on each of 4 dinner plates. Place an egg on top of each piece of toast. Sprinkle with chives and salt and serve hot.
FRENCH ONION MEATLOAF
A family favorite! The French-fried onions really make this meatloaf super yummy! Excellent paired with mashed potatoes and green beans with bacon.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray; spread ketchup and brown sugar over the bottom.
- Combine beef, French-fried onions, bread crumbs, eggs, sour cream, milk, soup mix, garlic, salt, pepper, and ginger in a large bowl. Mix well and shape into a loaf over the ketchup and brown sugar.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Steps:
- Whisk the eggs with sugar and salt.
- Cut the onion to 1 cm pieces and mix it with the ground beef.
- Fry it to desired cooked level.
- Heat 1 1/2 tablespoon oil.
- Fry 1/4 of the egg mixture until the down side is light brown.
- Spread 1/4 of ground beef and onion mixture .
- Fold the fryin eggs in half the engulfing the beef.
- Fry the upper side of the eggs until light brown.
- Serve immediately.
- Repeat 3 more times, making three more servings.
- For garlic lovers, add garlic to beef and onion mix.
- For color, dash paprika on top.

- Heat a pot of lightly salted water, add the edamame, cook for 30 seconds, then drain. If you want the edamame to have a brighter green colour, remove the thin membrane covering each soybean.
- In a bowl, mix the beef with the soy sauce, sake, sugar, salt and sesame oil. Thinly slice the onion.
- Heat a wok over a high flame then add 10ml (2tsp) of cooking oil and swirl the pan to coat it lightly. Add the onion and stir-fry until it’s wilted and crisp-tender.
- Add the beef and marinade to the wok and mix with the onions. Stir-fry constantly until the beef just loses its pink colour – do not overcook. Taste the ingredients and adjust the seasonings, if necessary. Turn off the flame.
