BUTTERSCOTCH CHOCOLATE CHUNK COOKIES

The weather is cooling off and that means it is time to turn on those ovens to bake cookies. In case you haven't noticed, I am obsessed with cookies.

3 1/4 c. All-purpose Flour
1 1/2 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Sea Salt
1 c. Unsalted Butter, At Room Temperature
1 1/2 c. Packed Brown Sugar
1/2 c. Granulated Sugar
2 Large Eggs
2 tsp. Pure Vanilla Extract
1 c. Butterscotch Chips
1 c. Chocolate Chunks
Sea Salt, For Sprinkling On Cookies

Steps:

  • Preheat oven to 350ºF. Line a large baking sheet with a Silpat baking mat or parchment paper and set aside.In a medium bowl, whisk together flour, baking powder, baking soda, and sea salt. Set aside.Using a stand mixer, cream butter and sugars together for about 3 minutes. Add eggs and vanilla and mix until combined. With the mixer on low, slowly add dry ingredients. Stir in butterscotch chips and chocolate chunks. Form the cookie dough into balls, about 2 tablespoons of dough. Place on prepared baking sheet, about 2 inches apart. Sprinkle with sea salt, if desired.Bake cookies for 10-12 minutes or until edges are slightly golden brown. Remove from oven and let cookies cool on the baking sheet for 2-3 minutes. Transfer to a wire cooling rack and cool completely.

2 tablespoons butter, softened
2 tablespoons shortening
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup English toffee bits or almond brickle chips
1/4 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter, shortening and brown sugar until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in toffee bits and pecans. Shape into a 10-in. roll; wrap in plastic. Refrigerate 4 hours or until firm., Preheat oven to 375°. Unwrap dough and cut into 1/2-in. slices. Place 2 in. apart on baking sheets coated with cooking spray. Bake 9-11 minutes or until lightly browned. Cool 1-2 minutes before removing from pans to wire racks. Freeze option: Place wrapped logs in resealable plastic freezer bag; freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake as directed.

18 ounces refrigerated sugar cookie dough (1 roll)
1/3 cup packed light brown sugar
1 teaspoon vanilla
3/4 cup old fashioned oats
1/2 cup butterscotch chips
2 (1 5/8 ounce) hershey's milk chocolate candy bars

Steps:

  • Heat oven to 350°F.
  • Spray 1 or 2 sheets with cooking spray.
  • Break up cookie dough into bowl.
  • Stir in brown sugar and vanilla.
  • Stir in oats, butterscotch chips and finey chopped candy bars.
  • Dough will be stiff.
  • Drop 10 large cookies on the cookie sheets and flatten them to 1/2" thickness.
  • Bake 13-18 min, or until cookies are slightly puffed and edges are golden brown.
  • Cool 1 min on sheet, then transfer to cooling rack.

3/4 cup butter, cubed
1 can (5 ounces) evaporated milk
1 package (3.4 ounces) instant butterscotch pudding mix
3-1/2 cups old-fashioned oats
3/4 cup butterscotch chips
1/2 cup chopped pecans

Steps:

  • In a large saucepan, combine sugar, butter and milk. Bring to a boil; boil 1 minute. Remove from heat. Stir in pudding mix and oats until blended. Stir in chips and pecans. Drop by tablespoonfuls 1 in. apart onto parchment-lined baking sheets. Let stand until set.
