A local restaurant served a version of this recipe. I went crazy over it and decided to create my own. It's great served warm or cold.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large mixing bowl, mix eggs, milk, sugar, and vanilla until smooth. Stir in bread, bananas, and chocolate chips, and let rest 5 minutes for bread to soak. Pour into prepared pan.
- Line a roasting pan with a damp kitchen towel. Place loaf pan on towel inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with water to reach halfway up the sides of the loaf pan. Bake in preheated oven for 1 hour, or until a knife inserted in the center comes out clean.

- Beat pudding mix and milk with whisk 2 min.
- Spoon half the pudding evenly into 4 dessert glasses; cover with layers of bananas and half the COOL WHIP. Top with remaining pudding and COOL WHIP.

CHOCOLATE BANANA PUDDING
Steps:
- In the bowl of a stand mixer or a large bowl whisk together the can of sweetened condensed milk and 1 cup cold water until combined.
- Add the pudding mix and beat with a whisk or the whisk attachment. The mixture should be smooth and all pudding ingredients dissolved.
- Cover and refrigerate for 2-3 hours or overnight, or up to two days ahead of serving. Make sure to allow the pudding enough time to set up.
- In a large bowl, or the bowl of a stand mixer, whip the heavy cream in a clean bowl for a few minutes (this takes about 3-4 mintues in a stand mixer) on high until the cream is stiff. Reduce speed on mixer and add 3 tabelspoons of unsweeteend cocoa. Mix again on lower speed until blended well.
- Using a rubber spatula, fold the chocolate whipped cream into the set up pudding mixture until no streaks of pudding remain. Don't beat with a mixer; gently fold mixture so the cream doesn't deflate! You may use a large whisk and whisk by hand.
- To assemble dessert, use a large glass bowl, trifle bowl, 9x13 pan or (10-20) 4-8 oz cups. If making in small individual containers, I like to use a 1/4 cup measure and place pudding in the bottom of the bowl or cup first, then layer sliced bananas and a layer of cookies, both the Nilla Wafers and Oreo Thins. Repeat and end with a little pudding mixture on top. Cover and let chill for 4-8 hours.
- When ready to serve, slice a few bananas and place an Oreo Thin, or crushed Oreo's on top of each serving if making individual portions. If making in a bowl, arrange in three layers and end with either wafers or pudding on top.

- Place chocolate in a bowl. In a separate large bowl, sift together sugar, cocoa, cornstarch and salt; whisk in egg yolks and 1/2 cup milk until smooth.
- In a large saucepan over high heat, bring remaining 1 cup milk and 1/2 cup cream to a simmer. Pour over chopped chocolate and whisk until smooth. Whisking constantly, slowly pour hot chocolate mixture into egg mixture until completely incorporated and cocoa is dissolved.
- Return custard to saucepan. Cook, stirring constantly, over medium heat, until thickened, about 10 minutes. Do not let mixture reach a simmer. If custard begins to steam heavily, stir it, off the heat, a moment before returning it to stove top. Strain through a fine-mesh sieve. Stir in vanilla.
- Spread several tablespoons pudding evenly into an 8-inch square pan (or a glass bowl). Top with an even layer of bananas; arrange whole cookies on top of bananas. Cover with remaining pudding. Top with whipped cream and sprinkle with crushed cookies. Chill at least 3 hours or overnight before serving.

ALEX'S RAW CHOCOLATE PUDDING
It may seem odd to have a banana and avocado in the same recipe, but the banana completely hides any taste of the avocado. The avocado is there simply for texture and nutritional value. Even my kids love this recipe! You can use any unsweetened milk in this recipe - almond, soy, rice, or coconut - and for a little crunch, use raw cocoa nibs instead of the cocoa powder.

MILK CHOCOLATE BANANA PUDDING

- Place milk in a medium saucepan and bring to a simmer. Whisk in both chocolates and heat until melted and smooth. Remove from the heat.
- Whisk together the yolks, sugar, and cornstarch in a large bowl. Slowly whisk in the chocolate-milk mixture and then return the mixture to the saucepan over medium-high heat and whisk until thickened. Remove from the heat, stir in the vanilla, and transfer to a clean bowl. Place a piece of plastic wrap over the surface of the pastry cream and let cool to room temperature.
- Spoon about 1 cup of the pastry cream into a 9 by 13-inch glass dish. Layer the cookies, bananas, and pastry cream in the bowl, ending with the pastry cream. Cover tightly and refrigerate until chilled, at least 4 hours or overnight. Just before serving, spread the whipped cream over the top of the pudding and sprinkle with the chocolate shavings.
COCONUT BANANA PUDDING
Steps:
- In a food processor, puree 4 of the bananas until smooth, then set aside. In a large saucepan set over medium heat, whisk together the agave, cornstarch, salt, egg yolks and coconut milk until smooth. Bring the mixture to a rolling boil, then reduce the heat to a simmer. Cook, stirring constantly, until thick, about 10 minutes. To check for doneness, coat the back of a spoon with the pudding and run your finger down the center of the spoon. The pudding should hold a clear, clean line. Remove from the heat, then fold in the pureed banana. Refrigerate until cool, at least 2 hours or up to overnight. The pudding will continue to thicken as it cools.
- Slice the remaining banana. Crumble 2 wafers into the bottom of four 10-ounce ramekins. Divide the pudding among the ramekins. Top each serving with banana slices, toasted coconut flakes and another crumbled wafer.
- Serve cold or at room temperature.

- Place milk in a medium saucepan and bring to a simmer.

- In a large bowl, combine graham-cracker crumbs, coconut, pecans, and sugar. Add melted butter, stirring until well combined. - Preheat oven to 325F.
- Dump brown sugar, granulated sugar and melted butter into a large mixing bowl.
- Stir until combined.
- Add the vanilla extract and eggs to the bowl.
- Stir well.
- Add the flour, cocoa powder and salt to the bowl.
- Stir until all of the ingredients are fully combined.
- Add the chocolate chips to the bowl.
- Stir the chocolate chips into the brownie batter.
- Line a 9 x 13 inch baking pan with aluminum foil and spray it well with cooking spray.
- Pour the brownie batter into the pan and spread it out evenly.
- Place the baking pan in the oven and bake the brownies until a toothpick inserted in the center comes up almost clean with just a few crumbs. 18 - 20 minutes.
- Set the brownies aside to cool while you prepare the pudding mixture.
- Pour the instant pudding mix and milk into a large mixing bowl.
- Use an electric mixer to beat the pudding mix and milk until a very thick mixture forms.
- Add the chopped banana to the bowl.
- Continue mixing with the electric mixer until no large chunks of banana remain.
- Add the Cool Whip to the bowl.
- Use a rubber spatula to fold the Cool Whip into the pudding mixture.
- Once the brownies are slightly warm but not too hot, dump the pudding mixture on top of the brownies and spread it out evenly.
- Place the banana slices on top of the pudding mixture.
- Sprinkle the vanilla wafer cookie crumbs on top.
- Place the pan in the refrigerator and chill for at least 3 hours to set.
- After 3 hours remove the pan from the refrigerator and use the foil to lift the brownies from the pan.
- Slice the brownies into 24 squares.
- Serve and enjoy!
