1 tablespoon freshly squeezed lime juice (about 1 lime)
1 pineapple, peeled and chopped into 1/2-inch pieces
1 1/2 teaspoons extra-virgin olive oil
1 cup loosely packed fresh mint leaves

1 medium pineapple, diced (or canned pineapple to equal approximately 3 cups)
1 lime
1/2 teaspoon salt

  • Into the processor it goes-pulse to desired consistency.
  • If using while grilling I go smooth-If using as a condiment for fish or chicken I don't process at all-just toss ingredients together.
  • Most of the time I just toss, take out 1/4 of the mixture-puree and use that to baste the fish/chicken while grilling.
