SWEET SURPRISE CHILI
I've won three chili cook-offs with this recipe. Everyone loves it, and they're always amazed when I reveal the secret ingredient!

Steps:
- In a Dutch oven, brown beef in oil in batches. Remove and keep warm. Add sausage and onion to the pan; cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. , Return beef to the pan; stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 1-3/4 to 2 hours or until beef is tender.

WHITE CHILI SURPRISE
Flavorful and tasty, this is not your typical red chili.

Steps:
- If using dry beans, pick over the beans and rinse them. Cover beans with water by at least 3 inches and soak the beans for 24 hours. Change the water 1 time about 12 hours after the soaking process starts.
- Remove fat and tendons from the chicken and place the chicken breast in a container that can be covered. Zest 1 of the limes and sprinkle the lime zest over the chicken breast. Using a lemon reamer, juice all 3 limes and pour the juice over the chicken breast. Pour the tequila over the chicken and add 1 teaspoon cumin and 1 teaspoon cayenne pepper. Sprinkle red pepper flakes over the chicken and marinate for 3 hours.
- Heat olive oil in stock pot and add onion and saute for about 10 minutes until translucent. Add the garlic, green chilis, cumin, cayene pepper, and cloves and saute for 10 minutes.
- Add beans and chicken stock and bring to a boil. Reduce the heat and simmer until the beans are tender, about 2 hours. (If using canned beans, complete step 5 below and then add the cooked chicken and reduce simmering time.)
- Heat grill after the chili has simmered for about 2 hours. Grill the chicken breast for 5 minutes and pour remaining marinade over the chicken breast on the grill. Turn the chicken breast and grill the second side for 4 minutes. Remove the chicken breast from the grill and cut into small cubes.
- Add the cubed chicken and 1 cup of cheese to the chili and stir until the cheese melts.
- Ladle into bowls and serve with remaining cheese, chopped green onions, and sour cream. Salt to taste.
AIR FRYER SWEET-AND-SOUR MEATBALLS
The secret to these meatballs, made easier with the air fryer, lies in its tasty glaze. Swedish lingonberry jam, balsamic vinegar, and chili sauce are cooked down into sauce that is equal parts sweet, spiced, and sour.

- Make the meatballs: Preheat an air fryer to 375˚ F. Mix the ground beef, panko, milk, egg, onion, rosemary, salt and pepper in a large bowl until well combined. Roll the mixture into 24 to 26 two-inch meatballs.
- Working in batches, arrange the meatballs in the air fryer basket. Cook until browned and cooked through, about 8 minutes.
- Make the sauce: Whisk the jam, chili sauce and balsamic vinegar in a small saucepan. Cook over medium-high heat until thickened, 6 to 8 minutes. Toss the meatballs in the sauce.
MIKE'S SWEET CHILI SURPRISE
A Chili that on first taste seems sweet but then the spice kicks in. First created for a chili cook off at my work.

Steps:
- Brown meat, seasoning with garlic powder and salt and pepper, put into large cooking pot (13L or more).
- Brown onions in small amount of olive oil until almost clear and sweet smelling add to beef.
- Add all 3 bottles of sweet chili sauce to the beef and onions and set to simmer for 1 hour.
- After simmering use cornstarch to emulsify the oil from the sweet chili sauce into the mixture.
- add the beans, tomatoes and peppers.
- Simmer for 3 hours.
- Serve with garlic toast and top with shredded cheese.
- Freezes great for quick meals.
