KETO CUSTARD - SUGAR FREE (1G CARBS)
This easy Keto Baked Egg Custard is a great low-carb dessert to make when you are feeding a crowd. It's smooth, creamy and no one will guess that it's sugar-free.

Steps:
- Preheat your oven to 150C/300F. Grease an 8in deep pie dish and set aside.
- Place the eggs and sweetener (swerve) in a large bowl and whisk together for 5 minutes, until they have paled in color.
- Add the vanilla and 1/2 cup of the cream. Whisk well.
- Add the remaining cream and almond milk and whisk until the ingredients are well mixed.
- Pour into your prepared pie dish and sprinkle over the nutmeg.
- Place the pie dish into a large roasting dish and make a water bath but adding enough hot water to go halfway up the side of the pie dish.
- Place in the oven and cook for 1 hour 15 minutes, until it jiggles in the center.
- Leave to cool for 15 minutes before serving.
- Serve warm or cold, on its own or add a little Keto Whipped Cream.

SUGAR FREE KETO EGG CUSTARD

- Preheat oven to 350 degrees F. Place 5 ramekins in a 9 by 13 baking dish.
- Add all ingredients into a blender and blend until smooth. Pour evenly into ramekins.
- Place 9 by 13 baking dish into the oven. Pour hot water into the baking dish until it reaches half way up the sides of the ramekins.
- Bake for 30 minutes or until the tops are golden brown, but custard is still a bit jiggly. (If you have a gas oven, you may need 40 minutes). Remove from oven and allow to cool and set for about 10 minutes.
- Enjoy warm or refrigerate and top with sugar free whipped cream.

- Warm milk, sweetener and vanilla bean paste in a pot on stove until gently heated, but do not boil. Then remove from heat and sett aside.
- In a separate bowl, whisk egg yolks and cornflour until combined
- Whilst still whisking the egg mixture, pour the warmed milk into the bowl and continue to whisk until all combined
- Return custard mixture to saucepan, on LOW heat, until custard gradually thickens (stirring occasionally) This could take around 15 minutes or so.
- Once thickened to your liking, take it off the heat.

- Make the puff pastry: Cut the butter into 3/4 cup flour in a medium bowl with a fork, then knead with your hands until the dough comes together. Transfer the "oil dough" to a piece of plastic wrap and pat into a 7 1/2-inch square; wrap in the plastic and refrigerate 20 minutes.
- Meanwhile, mix the egg, water and remaining 3/4 cup flour in a separate bowl, then knead with your hands until the dough comes together, adding more flour as needed if the dough is too sticky. Transfer the "water dough" to a piece of plastic wrap; wrap in the plastic and refrigerate 20 minutes.
- Unwrap the "water dough" and roll out into an 11-inch square on a lightly floured surface. Place the "oil dough" square on top and turn it so that it looks like a diamond. Fold the sides of the "water dough" over the "oil dough" to enclose completely.
- Roll out the folded dough into an 11-inch square and mark it into thirds. Fold in the outer thirds over the center third, like a letter. Roll out the folded dough into a large square again. Repeat twice (folding like a letter, then rolling into a square), refrigerating the dough as needed if it becomes too soft.
- Mark the square of dough into fourths. Fold the outer fourths into the center, then fold in half like a book and roll out again. Wrap the dough in plastic wrap and refrigerate at least 20 minutes.
- Butter 12 small (2 1/2- to 2 3/4-inch-diameter) fluted tart pans. Unwrap the dough and roll it out on a lightly floured surface to a 1/4-inch thickness. Cut out circles with a round cutter (about 1/4 inch larger than your tart pans). Refrigerate 20 minutes, then press the dough into the tart pans. Refrigerate until ready to use.
- Make the egg custard: Heat the sugar and water in a saucepan over medium heat until the sugar dissolves, 3 to 5 minutes. Let cool completely.
- Whisk the eggs into the cooled sugar syrup, then stir in the evaporated milk, vanilla and salt. Strain through a fine-mesh sieve into a large measuring cup.
- Preheat the oven to 350˚ F. Arrange the tart pans on a baking sheet. Divide the custard among the pans, filling each about three-quarters full. (Do not overfill or the tarts could overflow; you may not use all of the custard.)
- Bake until the crusts are golden and the filling puffs slightly, about 45 minutes. Let cool 5 to 10 minutes in the pans, then carefully tap the bottoms to remove the tarts and transfer to a rack to cool completely.
EGG CUSTARD ~ LOW CARB, SUGAR FREE KETO ATKINS
This is an Atkins/Keto friendly dessert. This egg custard is made with heavy cream instead of milk and I use Splenda instead of sugar but you could probably use Stevia or something (adjust for sweetness difference) You can even have this one on phase one of Atkins! Enjoy!

- 1. Preheat oven to 325.
- 2. Using a wire whisk, stir together heavy cream and eggs until smooth and completely blended.
- 3. Stir in Splenda, salt and vanilla
- 4. Sprinkle nutmeg on top. Swirl around with whisk to make pretty.
- 5. Place Ramekins into a 9x13 glass casserole. Pour custard mixture into individual ramekins 4-6 oz.
- 6. Boil water. Pour water carefully into glass casserole until 1/4-1/3 up the sides of ramekins.
- 7. Bake in 325 oven for 45 minutes.
- 8. TIP: be careful when opening the oven. There will be a lot of steam inside, so don't get burned!
MIKE'S EGG CUSTARD (SUGARLESS)
My hubby"s craving for baked egg custard, and his sugar-restricted diet, led to this recipe. I add 2 Tablespoons of "Thik'n'Thin Not Sugar" which adds a little syrupy texture, but it is optional. Adjust the amount of Spenda to your own liking; just start with the least amount and taste. Add more as desired. This is good warm, room temperature and cold/ Nice with a caramel sauce (sugar0free, of course) or with fresh berries.

- Preheat oven to 300 degrees F. Lightly coat 6 ramekins or a one-quart baking dish with non-stick spray. Put a kettle of water on to boil (you'll need about 6 cups for the Bain Marie.
- In a 2-cup glass measure, microwave the half&half until hot, but not boiling, 3 to 4 minutes on high, checking after each minute. Whisk in cinnamon, if using mixing well.
- In a large mixing bowl, beat eggs and yolks well, until slightly thickened. Add salt and vanilla and mix well.
- Stir the 1/2 cup Spenda into the hot cream, mixing until disolved. (If using Thik'n'Thin, combine it with the Splenda before adding it to the cream).
- Very SLOWLY, while whisking continuously, dribble the hot cream into the eggs, As the eggs are tempered, add the cream a bit more quickly until it's completely incorporated. Taste and adjust sweetener, if needed.
- Pour into prepared dish(es), though a strainer, if necessary. Place custard dish(es) in a deep 9'x9" pan. Pour in the boiling water up to the level of the custard, being careful not to get water in the custard. Dust top with freshly grated nutmeg, if desired.
- Bake at 300 degrees F for 30 minutes for the ramakins, 35 minutes for the quart dish, until the custard is set - a bit "jiggly" in the center but a khife inserted about half-way from the rim comes out clean.
- Serve with caramel sauce of fresh berries.

- 1. Preheat oven to 300°F.
- 2. Place six 4-ounce ovenproof cups (you can use ramekins, or coffee cups marked as oven-safe) in a deep baking pan just large enough to hold them.
- 3. In a medium saucepan, bring the milk to a simmer over medium-low heat.
- 4. Meanwhile, in a separate bowl, whisk together the eggs, yolks, sugar, and vanilla.
- 5. Slowly pour the egg mixture into the simmering milk, whisking gently to combine.
- 6. Pour the mixture through a fine strainer into the cups (if the strainer clogs, use a spoon to scrape it clean), then sprinkle lightly with the nutmeg.
- 7. Pour hot (not boiling) water into the pan until it reaches halfway up the sides of the cups.
- 8. Bake until the custard is just set (it can still be a little loose), 30 to 35 minutes.
- 9. Let the custard cool in the water bath for about 2 hours before serving.
BASIC SUGAR FREE CUSTARD
I modified this from recipe #96081 because I needed a custard that was sugar free for my diabetic husband and lactose free for me. My husband loved it and asked for two pieces. I had some when it was warm and some cold in the morning for breakfast - it was good both ways.

- Whisk all ingredients, except nutmeg, together for one minute.
- Pour into prepared dish.
