8 boneless ribeye (rib) pork chops, 1-inch thick
4 cups orange juice
1 cup soy sauce
2 tablespoons garlic, chopped
1/2 cup Dijon-style mustard
1/2 cup honey
1 teaspoon cayenne pepper

Steps:

  • In a mixing bowl, combine orange juice, soy sauce, garlic, mustard, honey and cayenne pepper. Mix together with a whisk. Pour over pork chops and marinate in the refrigerator for 12-24 hours. Remove pork from marinade; discard marinade. Season pork with salt and pepper and grill for 10-12 minutes, turning once, until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time.

Plan ahead these need to marinade for at least 12 hours but 24 hours is even better, I also throw in some chopped green onions, but that is optional, you will *love* this recipe! :)

8 pork chops (about 1-inch thick)
salt and pepper (to taste)
1 cup soy sauce
1/2 cup dijon-style mustard
1 teaspoon cayenne pepper
4 cups orange juice
2 -3 tablespoons chopped fresh garlic
1/2 cup honey

Steps:

  • In a mixing bowl, combine the soy sauce, Dijon mustard, cayenne pepper, orange juice, garlic and honey; whisk until well combined.
  • Pour over pork chops.
  • Marinate in the fridge for 12-24 hours (24 hours is best).
  • Remove the pork from marinade; discard the marinade.
  • Season pork with salt and pepper.
  • Grill for 10-12 minutes, turning once.
  • Delicious!

1 tablespoon kosher salt
1 tablespoon coriander seeds, cracked
1 tablespoon ground chipotle chile powder
1/2 tablespoon ground cumin
1/2 tablespoon smoked paprika
3/4 teaspoon mustard powder
6 10- to 12-ounce double-cut pork chops
3 tablespoons olive oil

Steps:

  • Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
  • In a small bowl, combine the salt, coriander, chipotle powder, cumin, paprika and mustard powder. Pat the chops dry with paper towels and season both sides with the spice mixture. Rub the exterior of the seasoned chops with the olive oil.
  • Sear the chops over the hot side of the grill until the exterior forms a nice crust, about 4 minutes per side. Move the pork to the low side of the grill, cover the grill and cook until the pork reaches an internal temperature of 140 degrees F, 10 to 12 minutes. Transfer the pork to a cutting board, let it rest for 5 to 10 minutes and then serve.

1/4 cup olive oil
2 tablespoons Dijon mustard
2 tablespoons apple juice
2 tablespoons chopped fresh parsley, plus more for serving
1 teaspoon lemon zest plus 1 tablespoon lemon juice (1/2 lemon)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cloves garlic, minced
4 bone-in or boneless pork chops, thick sliced
1 tablespoon olive oil
1/2 Vidalia onion, diced
1 1/2 cups fresh or frozen mango chunks
2 tablespoons apple juice
1 piece lemon peel plus 1 tablespoon lemon juice (1/2 lemon)
1 tablespoon sugar
1/2 teaspoon ground cumin
2 apples, such as Gala or Pink Lady, peeled, cored and chopped
1 cinnamon stick

Steps:

  • For the grilled pork chops: Whisk together the olive oil, mustard, apple juice, parsley, lemon zest and juice, salt, pepper and garlic in a medium bowl.
  • Put the pork chops in a baking dish or resealable gallon-sized bag. Pour the marinade over the meat. Marinate for at least 1 hour at room temperature and up to 8 hours refrigerated.
  • For the apple-mango chutney: Meanwhile, heat a medium saucepan over medium-high heat. Add the olive oil and heat until hot and shimmering. Add the onion and cook until softened, 2 to 3 minutes. Add the mango, apple juice, lemon peel and juice, sugar, cumin, apples and cinnamon stick. Cook over medium heat, stirring often and allowing the mixture to bubble and reduce, 15 to 20 minutes. Remove the lemon peel and cinnamon stick before serving. The chutney can be stored in an airtight container for up to a week.
  • Preheat an indoor grill pan to medium heat.
  • Grill the pork chops until an instant-read thermometer inserted into the thickest part of the chops registers 145 degrees F, 4 to 5 minutes per side. Let the meat rest for 5 minutes before serving. Garnish with the chutney and chopped parsley.
