This crowd-pleaser takes only 15 minutes of prep time. Purchased frozen meatballs and condensed soup make this recipe a snap. Serve with a tossed salad and breadsticks.

2 10.75 ounce cans condensed cream of mushroom soup or cream of onion soup
2 cups milk
1 cup sour cream
1 teaspoon salt
¼ teaspoon black pepper
2 10 ounce packages refrigerated red-skinned potato wedges
2 16 ounce packages frozen cooked meatballs
2 16 ounce packages frozen stir-fry vegetables (any combination)

Steps:

  • Preheat oven to 350°F. In a large bowl, combine soup, milk, sour cream, salt, and pepper. Stir in potatoes, meatballs, and frozen vegetables.
  • Transfer mixture to two ungreased 13x9x2-inch baking dishes. Bake, covered, about 1 hour or until heated through.

2 cans (8 ounces each) tomato sauce, divided
1 large egg
1/4 cup dry bread crumbs
1/4 cup chopped onion
1 teaspoon salt
1 pound lean ground beef (90% lean)
1 package (10 ounces) frozen mixed vegetables
1/2 teaspoon dried thyme
1/8 teaspoon pepper
1 package (16 ounces) frozen shredded hash brown potatoes, thawed
1 tablespoon butter, melted
3 slices process American cheese, cut into 1/2-inch strips

Steps:

  • In a large bowl, combine 2 tablespoons tomato sauce, egg, bread crumbs, onion and salt. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan and bake at 375° for 15-20 minutes or until meatballs are no longer pink; drain. , Meanwhile, in a large skillet, combine remaining tomato sauce with vegetables and seasonings. Cover and simmer 10-15 minutes or until heated through; stir in meatballs and set aside. , Place potatoes in a greased 11x7-in. baking dish. Brush with butter and bake at 375° for 15-20 minutes or until lightly browned. Remove from the oven; top with meatball mixture. Arrange cheese strips in a lattice pattern on top. Bake, uncovered, for 20-25 minutes longer or until heated through and cheese is melted.

⅓ cup chopped green onions
¼ cup Italian seasoned bread crumbs
3 tablespoons grated Parmesan cheese
1 pound ground beef
1 (1 pound) loaf Italian bread, cut into 1-inch cubes
1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
1 teaspoon Italian seasoning
¼ teaspoon freshly ground black pepper
2 cups shredded mozzarella cheese
3 cups spaghetti sauce
1 cup water
2 cloves garlic, minced

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Mix together onions, bread crumbs, Parmesan cheese and ground beef. Roll into 1 inch diameter balls, and place in a baking pan. Bake for 15 to 20 minutes, or until beef is no longer pink. Reduce the oven temperature to 350 degrees F (175 degrees C).
  • Arrange the bread cubes in a single layer in an ungreased 9x13 inch baking dish. Mix together the cream cheese, mayonnaise, Italian seasoning and black pepper until smooth. Spread this mixture over each bread cube. Sprinkle with 1/2 cup of the grated mozzarella cheese.
  • In a large bowl, mix together spaghetti sauce, water, and garlic. Gently stir in meatballs. Pour over the bread and cheese mixture in the baking pan. Sprinkle the remaining mozzarella cheese evenly over the top.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, or until heated through.

3/4 cup uncooked oatmeal
1 cup evaporated milk
1 tablespoon instant onion flakes
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup catsup
2 tablespoons vinegar
1/2 cup water
2 tablespoons sugar

Steps:

  • Combine meat, oatmeal, milk, onion flakes, salt and pepper.
  • Mix well, shape into 8 large meatballs and place in 2 quart casserole.
  • Combine catsup, vinegar, water, and sugar and pour over top of the meatballs.
  • Bake at 350°F for 1 1/2 hours.

4 potatoes, cut in 1 to 2 inch pieces

Steps:
