BAKED VIDALIA ONIONS
Vidalia onion recipes are some of my favorites to whip up. Served alongside any of a variety of fish and meats, these tender onions are a nice change of pace. Folks find it a fun and flavorful side dish. -Norma Durham, Rogersville, Tennessee

Steps:
- Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.

MICROWAVE BAKED ONIONS
If you have a microwave oven, this recipe will become as basic for you as baked potatoes. It is SO easy, yet tasty and impressive, too. The onions may also be baked in a conventional oven.

Steps:
- Peel onions and cut in half horizontally. Place in a 1-quart casserole dish.
- Top each onion half with salt and pepper to taste. Add a pat of butter, using 1/2 teaspoon to 1/2 tablespoon per onion.
- Cover and cook at 100% power (HIGH) for 8 to 10 minutes, or until onions are soft.
- Uncover and top each half with shredded cheese to taste.
- Pop back in microwave and zap just long enough to melt the cheese.
- If you prefer, bake the onions one hour in a conventional 350-degree oven, topping with cheese when baking has finished.
- An alternate topping: Prepare onions as above, but top each half with 1/2 tablespoon EACH butter and brown sugar.

- Peel 2 medium onions, and cut a thin slice from bottom and top of each one. Scoop out a 1-inch-deep hole from the top of each onion. Place onions, top sides up, in a 2-qt. microwave-safe dish with a lid. Add 1 beef bouillon cube and 1/2 Tbsp. butter to shallow hole in each onion; cover with lid. Microwave, covered, at HIGH for 8 to 10 minutes or until onion is tender. Garnish each serving with fresh parsley sprig and pepper, if desired.
- If you'd rather grill, wrap each filled-and-topped onion in heavy-duty aluminum foil (or a double layer of regular aluminum foil). Grill over high heat (400° to 450°) 15 to 20 minutes or until tender. Let stand 10 minutes.
