- Beat eggs and milk with fork in large microwaveable mug until blended. Stir in bacon bits.
- Microwave on HIGH 1 min. 15 sec. to 1 min. 30 sec. or until eggs are almost set.

Steps:
- Combine butter and onion in small microwave-safe dish and cook on high for three minutes or until onion is soft and then stir it to make it sure it is combined.
- Beat eggs with sour cream in a small cup or bowl and then pour over onion.
- Cook on high about 1 1/2 minutes, stirring several times.
- Sprinkle bacon along rim of dish and cook on high for 30 seconds.

- Place Canadian bacon on bottom of a 6-oz. ramekin or custard cup coated with cooking spray. Pour egg substitute over top. Microwave, uncovered, on high for 30 seconds; stir. Microwave 15-30 seconds or until egg is almost set. Top with salsa; sprinkle with cheese. Microwave just until cheese is melted, about 10 seconds., Line bottom of English muffin with spinach. Place egg and Canadian bacon over spinach; replace English muffin top.
