1 tablespoon extra-virgin olive oil
2 garlic cloves, minced
1 onion, thinly sliced
1 medium-sized eggplant, cubed
1 lb. boneless skinless chicken breasts, diced
1 15 oz. can organic diced tomatoes
1 tablespoon Italian seasoning
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
1/2 tsp red pepper flakes (optional)
3 cups fresh organic spinach
1 tablespoon fresh basil

Steps:

  • Heat oil in a large sauté pan over medium heat. Add garlic, onion and eggplant and let cook for 5 minutes, stirring often until onions are translucent and eggplant is beginning to soften.
  • Add chicken and let cook until no longer pink on the outside, about 5 minutes.
  • Add tomatoes and spices and let simmer until chicken is cooked through and the sauce has slightly thickened, about 7-10 minutes.
  • Add in fresh spinach, mix and let cook until spinach wilts.
  • Garnish with fresh basil and season to taste.

14 ounces coconut milk
1/4 cup fish sauce
3 tablespoons sugar
1/2 cup sliced eggplant
1/8 cup bamboo shoot
6 kaffir lime leaves
1/4 cup basil leaves
red chili pepper (to garnish)

Steps:

  • Combine chicken with sauce ingredients and bring to a boil. Continue to simmer until chicken is done (approx. 8 minutes).
  • Add eggplant, bamboo shoots and lime leaves. Cook until eggplant is tender (approx. 3 minutes). Garnish with basil leaves and chili pepper before serving. Serve with rice.

2 small eggplant, peeled
1/4 cup dried bread crumbs
1/2 teaspoon dried oregano
1 tablespoon mayonnaise
1 cup spaghetti sauce
1 cup shredded part-skim mozzarella cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Cut eggplant into 3/4-in. slices. In a shallow bowl, combine the bread crumbs and oregano. Brush one side of each eggplant slice with mayonnaise. Dip mayonnaise side into crumb mixture; place crumb side up in a shallow 2-qt. microwave-safe dish. , Cover and microwave on high for 6-8 minutes or until tender. Drizzle with spaghetti sauce and sprinkle with cheeses. Cook, uncovered, 1 minute longer or until sauce is heated through.

We love Chicken and Eggplant at our local Chinese food restaurant; however, I would love to make it at home. I found this recipe on the internet and it is courtesy of Panda Express (a local Chinese fast-food takeout) here. Haven't tried it yet, but placing here for safe-keeping. Prep time does not include marinating time for chicken.

6 ounces chicken breasts, sliced
1/2 ounce green onion, sliced
cornstarch, mix (50% water, 50% cornstarch, need 1 1/2 tbsp.)
2 tablespoons vegetable oil
1 teaspoon sesame oil
12 ounces Japanese eggplants, sliced lengthwise into quarters (depending upon size)
2 tablespoons fresh garlic, chopped
2 ounces red bell peppers, chopped
1 teaspoon cooking wine (rice wine)
2 tablespoons soy sauce
1 tablespoon oyster sauce
3/4 cup water
cooked rice, for serving
1 egg white
2 tablespoons cornstarch
1 tablespoon vegetable oil
1 pinch salt

Steps:

  • Combine marinade ingredients and marinate chicken for a minimum of 2 hours in the refrigerator.
  • In a large wok, heat 2 tablespoons oil for 20 seconds. Add chicken and stir quickly (separating chicken) for 30 seconds. Remove chicken and drain.
  • Place 2 tablespoons garlic and red bell pepper in wok and cook for 5 seconds. Add cooking wine, soy sauce, oyster sauce and water to wok. Slice off eggplant stem and slice eggplant. Add eggplant and stir until the mixture boils. Turn heat to low, cover and cook 2-3 minutes (make sure mixture does not run dry). After 2 minutes check to see if eggplant is tender; then add cornstarch mixture slowly. Return chicken to wok; stir and fold until mixed well with sauce again. Add green onion and sesame oil and stir & fold until thoroughly mixed.
  • Serve with steamed or fried rice.

Castronovo and Falcinelli insist that Sicilians outdo everyone in Italy when it comes to eggplant dishes. This sweet & sour variation was a recent discovery "The distinctive flavor is just killer." 2 tablespoons water
2 tablespoons sugar
2 tablespoons red wine vinegar
28 ounces peeled Italian tomatoes, crushed
2 garlic cloves, thinly sliced
1/2 cup extra virgin olive oil
salt
fresh ground white pepper
crushed red pepper flakes (for that extra zing)
2 large eggplants, sliced crosswise 3/4 inch thick (about 1 1/4 pounds each)
1/2 cup shredded ricotta salata
2 tablespoons chopped mint

Steps:

  • In a saucepan, combine the water and sugar and stir over high heat until the sugar dissolves.
  • Cook without stirring until a light amber caramel forms, about 2 minutes.
  • Off the heat, add the vinegar.
  • Cook the caramel over very low heat just until it softens, about 1 minute.
  • Add the tomatoes, garlic and 1/4 cup of the oil and season with salt and white pepper.
  • Simmer over moderately low heat until thickened, about 30 minutes.
  • Meanwhile, preheat the oven to 400°F
  • Brush a large rimmed baking sheet with 2 tablespoons of the oil.
  • Arrange the eggplant on the sheet and brush with the remaining 2 tablespoons of oil; season with salt and white pepper.
  • Roast the eggplant for 10 minutes, then flip and roast for 10 minutes longer, until tender and lightly golden.
  • Arrange the eggplant slices in an 8x11-inch baking dish in slightly overlapping rows.
  • Spoon two-thirds of the tomato sauce on top and bake for 20 minutes, until bubbling and browned around the edges.
  • Sprinkle the cheese and mint on top and serve warm or at room temperature, passing the remaining sauce on the side.

1 teaspoon fresh ginger, finely chopped
3 tablespoons orange marmalade
3 tablespoons dark soy sauce
8 chicken thighs, with skin
2 tablespoons sesame seeds, to garnish

Steps:

  • Mix the garlic, ginger, orange marmalade and soy sauce together in a large bowl.
  • Add the chicken thighs, stir, cover and set aside for 15min.
  • Put the chicken in a roasting tin and roast at 425°F for 35min, basting and moving the chicken around in the tin so that it cooks evenly and is cooked to the centre. Lift the chicken out of the tin and keep warm.
  • Skim the fat off the juices in the roasting tin, discard the fat, bring the juices to the boil and bubble for 30sec. Spoon the juices over the chicken, sprinkle the sesame seeds over and serve with boiled white rice.
