One-Dish Microwave Spaghetti image

Quick and easy comfort food. Complete meal on it's own, but garlic bread and a tossed salad make great additions.

1 lb ground beef or 1 lb Italian sausage
1 teaspoon garlic salt
1 tablespoon dried onion
1 (26 ounce) jar spaghetti sauce, plus
19 1/2 ounces jars water
4 ounces mushrooms
1 teaspoon parsley flakes
1 teaspoon oregano
1/2 teaspoon dried basil
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 lb spaghetti, broken into 2 inch pieces (uncooked)
1/3 cup parmesan cheese, grated

Steps:

  • Crumble ground beef into a microwave-safe casserole; add garlic salt& onion.
  • Microwave on high until no longer pink (about 4 minutes); stirring once.
  • Drain; stir to break meat into smaller pieces.
  • Add tomato sauce, water, mushrooms, remaining seasonings and spaghetti.
  • Cover with casserole lid; microwave for 10-12 minutes or until spaghetti is tender, stirring twice.
  • Let stand 5 minutes, sprinkle with Parmesan cheese and serve.

This is a really quick and easy way to use up leftover spaghetti and still make it a little bit different than the original meal. I can't find my original recipe and I'm sure this could be jazzed up a bit to make it a bit more interesting - let me know your suggestions.

3 cups leftover cooked spaghetti
1 cup shredded mozzarella cheese
1/4 cup shredded romano cheese
1/2 cup chopped green pepper
1 cup spaghetti sauce

Steps:

  • If desired, lightly cook the green pepper in frying pan.
  • Combine the spaghetti, mozzarella, and green pepper in a medium sized bowl.
  • Grease a 3 quart microwave casserole dish.
  • Spread the spaghetti mixture into the casserole dish.
  • Spread the spaghetti sauce over the spaghetti mixture.
  • Sprinkle with shredded Romano cheese.
  • Place glass cover on the casserole dish.
  • Microwave at 75% power for 7 minutes, or until heated through.
  • Uncover and allow to sit about 5 minutes before serving.

One of the pleasant surprises about squash is that it's so low in calories. That means I can "splurge" a little with the other ingredients. Spaghetti squash is fun to work with and so "tender tasty"!

1 spaghetti squash (about 1-1/2 pounds)
1 medium sweet red pepper, thinly sliced
1 small onion, thinly sliced
2 garlic cloves, minced
1 tablespoon olive oil
1 medium tomato, chopped
1 medium zucchini, thinly sliced
1 cup sliced mushrooms
1 tablespoon tarragon vinegar
1 teaspoon dried tarragon
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Pierce squash with a fork. Place on paper towel in microwave; cook on high for 3-1/2 minutes per pound or until squash is soft. Let stand 5-10 minutes. Cut in half; remove seeds and scoop out pulp. Set aside. In a 2-qt. casserole, toss red pepper, onion, garlic and olive oil. Cover and microwave on high for 1-1/4 minutes or until slightly soft. Add tomato, zucchini, mushrooms, vinegar, tarragon, salt and pepper. Cover and microwave on high for 2 minutes or until crisp-tender. Toss with squash and serve immediately.
