1 medium onion, chopped
1 stalk celery, chopped
3 tablespoons butter or 3 tablespoons margarine
1 lb lean ground beef
1/2 teaspoon black pepper, to taste
1/2 teaspoon salt, to taste
1 medium cabbage, shredded
2 apples, cored and sliced thin (you can peel them, if you like)

Steps:

  • Preheat oven to 350 degrees F.
  • In skillet, saute onion and celery in butter 3 minutes.
  • Add beef and salt and cook, stirring occasionally, another 5 minutes. Drain of extra fat.
  • Spread half the cabbage in 2-quart baking dish and cover with half the apples and all the meat mixture.
  • Add remaining cabbage and apple slices.
  • Cover and bake 1 hour.
  • Nice with mashed potatoes or noodles. Sprinkling Parmesan cheese on top, or grated cheddar, is also good, as is adding a clove of garlic in with the onion.

  • prepare cabbage and cook untill tender.

  • cover with velvetta slices (i use thick slices) 5- crumble ritz crackers and spread over cheese.

1 small head cabbage, shredded
4 potatoes, peeled and sliced
salt to taste
1 (10.75 ounce) can condensed cream of chicken soup
½ (10.75 ounce) can water
1 small onion, diced
4 pork chops

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
  • Place a layer of shredded cabbage into baking dish and then a layer of sliced potatoes. Repeat cabbage and potatoes and salt.
  • Simmer the soup, water and diced onion. Pour over cabbage and potatoes.
  • In a skillet, brown each pork chop in a small amount of oil and place on top of mixture. Bake for 1 1/2 hours uncovered or until chops are tender.

4 pork chops (about 1-inch thick)
1 teaspoon curry powder or 1 teaspoon ground cumin
salt and pepper
1 red onion, sliced
1/2 small head red cabbage, thinly sliced (about 1 lb)
1/4 cup red wine vinegar
1/4 cup fresh dill sprig
1 braeburn apple, cut into 1/2-inch pieces (optional)

Steps:

  • Heat 1 tbsp oil in skillet over medium heat. Season the pork with the curry, 1/2 tsp salt and 1/4 tsp pepper. Cook until browned and cooked through 6-8 minutes per side.
  • Heat the remaining 2 tbsp oil in a second skillet over medium heat. Add the onion and cook, covered, stirring occasionally, for 5 minutes.
  • Add the cabbage, vinegar, 2 tbsp water, 3/4 tsp salt and 1/4 tsp pepper, and apple, if using. Cook, covered, stirring occasionally, until the cabbage is just tender, 5 to 6 minutes. Fold in the dill and serve with pork.

1 two-pound green or white cabbage
1 tablespoon butter
4 loin pork chops, about 1/2 pound each
Salt to taste if desired
Freshly ground pepper to taste
1 cup finely chopped onions
1 teaspoon finely minced garlic
1/2 cup dry white wine
1/2 teaspoon ground cumin
1 bay leaf
1/2 teaspoon dried thyme
2 whole cloves
1/2 cup water
1 pound kielbasa (Polish sausage), cut in half crosswise
Steamed potatoes

Steps:

  • Cut away and discard the core of the cabbage. Cut the cabbage lengthwise into eighths. Cut each piece crosswise into 1/2-inch pieces. There should be about 12 cups loosely packed.
  • Heat the butter in a heavy casserole with a tight-fitting lid. Sprinkle the chops with salt and pepper and add them to the casserole. Cook over moderately high heat about two minutes on each side until lightly browned.
  • Scatter the onions and garlic around the chops and cook, stirring, until wilted. Add the wine and stir. Add the cabbage, cumin, bay leaf, thyme and cloves. Add the water. Cover closely and cook for a total of 30 minutes.
  • Add the pieces of sausage and cover. Continue cooking 15 minutes. Serve with steamed potatoes and, if desired, a salad such as fennel and avocado.

1 small head green cabbage, cored and chopped
3 tablespoons butter
1 small onion, chopped
2 garlic cloves, crushed
3 tablespoons flour
2 cups low-fat milk
1/2 teaspoon mustard powder
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese, sharp preferred
2 tablespoons butter, melted
1 cup crushed cracker crumb
1/4 teaspoon paprika

Steps:

  • Preheat oven to 350. Lightly grease a 13 x 9 baking dish; set aside.
  • Cook cabbage in boiling salted water until tender. Drain well; keep hot and set aside.
  • Meanwhile, melt the 3 tbsp butter in a saucepan. Saute the onion and garlic til soft but not browned.
  • Stir the flour into the butter/onions/garlic until smooth.
  • Gradually stir in the milk and keep stirring until mixture thickens.
  • Add the mustard powder, salt, pepper and cheese. Stir until cheese is melted and sauce is smooth.
  • Mix the cooked cabbage with the sauce and pour into the prepared baking dish.
  • Mix the melted butter and cracker crumbs and sprinkle over top.
  • Sprinkle with paprika.
  • Bake at 350 for 25-30 minutes.

4 strips bacon, coarsely chopped
1 medium onion, cut into 1/2-inch slices
1 head green cabbage (about 2 1/2 pounds), cored and cut into 8 wedges
3 tablespoons all-purpose flour
3 cups whole milk

Steps:

  • Preheat oven to 400 degrees. Set a large heavy roasting pan across two burners over high heat; add oil and heat. Season pork with salt and pepper; brown on one side, 3 to 5 minutes. Flip and cook 1 minute more. Transfer to a plate.
