1 Tbsp. butter
1-3/4 cups graham cracker crumbs, divided
1/2 cup packed brown sugar, divided
1/4 cup chopped walnuts
2 tsp. ground cinnamon, divided
2 eggs
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Place butter in 2-qt. microwaveable round dish at least 2 inches deep. Microwave on HIGH 30 sec. or until melted. Add 1/2 cup graham crumbs, 1/3 cup sugar, nuts and 1 tsp. cinnamon; mix well. Set aside.
  • Beat eggs in large bowl with wire whisk. Add COOL WHIP, remaining graham crumbs, sugar and cinnamon; stir just until blended. Spread over crumb mixture in dish.
  • Microwave on MEDIUM (50%) 9 to 10 min. or until cake starts to pull away from side of dish, turning dish after 5 min. (Top will still be slightly moist.) Place serving plate on top of dish; invert cake. Remove dish. Sprinkle any crumbs remaining on bottom of dish over cake. Fluff crumb topping with fork. Serve warm.

This is a delicious and easy coffee cake that my mom used to make frequently when I was younger! It's so simple to whip it up and toss it in the microwave! I've also made this using reduced fat Bisquick, applesauce in place of the oil, and Egg Beaters in the batter to make it a little healthier, and it still tasted fabulous.

1 1/2 cups buttermilk biscuit mix (Bisquick)
1/4 cup white sugar
1/2 cup milk
1 egg
2 tablespoons oil
1/3 cup buttermilk biscuit mix
1/3 cup brown sugar (packed)
2 tablespoons butter
1 teaspoon cinnamon
1/4 cup chopped nuts
3/4 cup confectioners' sugar
1 tablespoon milk

Steps:

  • In mixing bowl, stir together 1 1/2 cups biscuit mix and white sugar.
  • Add 1/2 cup milk, egg, and oil.
  • Beat by hand, mixing well.
  • Pour into greased 8-inch round dish.
  • Blend 1/3 cup biscuit mix, brown sugar, butter, and cinnamon until crumbly.
  • Sprinkle over batter and sprinkle with nuts.
  • Microwave on HIGH for 5-7 minutes. (6 minutes always works perfectly in my microwave.).
  • Cool 15 minutes; drizzle with fine glaze.
  • Serve warm.
  • Glaze: Stir together confectioner's sugar and 1 Tbsp milk.
  • From tip of spoon, drizzle glaze over cake in spoke fashion.

5 Minute Spice Cake in Microwave image

Inspired by Recipe#361967, I experimented and made up this cake for the two of us. I did try it with twice as much baking soda and baking powder, reduced them both to 1/8 as the cake touched the microwave "ceiling" and started to curve down; tasted fine but sure looked bizaar. Think it needs these ingredients to get a cake texture. I doubt that this recipe can be reduced and work out. Thank you especially to debbwl and diner524 for trying to help me improve this recipe for two.

4 tbsp self-raising flour
4 tbsp caster sugar
2 tbsp cocoa powder
1 medium egg
3 tbsp milk
3 tbsp vegetable oil or sunflower oil
a few drops of vanilla essence or other essence (orange or peppermint work well)
2 tbsp chocolate chips, nuts, or raisins etc (optional)

Steps:

  • Add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder to the largest mug you have (to stop it overflowing in the microwave) and mix.
  • Add 1 medium egg and mix in as much as you can, but don't worry if there's still dry mix left.
  • Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again.
  • Centre your mug in the middle of the microwave oven and cook on High for 1½ -2 mins, or until it has stopped rising and is firm to the touch.

2 tablespoons canola oil
4 cups all-purpose flour
1/2 cup granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/2 cup milk
2 teaspoons pure vanilla extract
1 cup light-brown sugar, firmly packed
1 1/2 teaspoons ground cinnamon
1 cup unsalted butter, melted and cooled
confectioners' sugar, for dusting

Steps:

  • Place rack in center of oven, and preheat oven to 325°F Lightly brush a 9-by-12 1/2-inch baking pan with canola oil, dust with flour, and tap to remove excess. Set aside.
  • In a medium bowl, sift together 1 1/2 cups flour, the granulated sugar, baking powder, and salt; set aside.
  • In a second bowl, whisk together the egg, milk, canola oil, and vanilla.
  • Using a rubber spatula, fold dry ingredients into egg mixture.
  • Spread batter evenly into prepared pan, and set aside.
  • In a medium bowl, combine remaining 2 1/2 cups flour, brown sugar, and cinnamon.
  • Pour melted butter over flour mixture, and toss with a rubber spatula until large crumbs form.
  • Top batter evenly with crumb topping.
  • Bake for 35 to 40 minutes or until the cake tests done.
  • Turn the pan once during baking.
  • Transfer pan to a wire rack to cool.
  • Dust with confectioners' sugar.
  • Using a serrated knife or bench scraper, cut into 3-inch squares, and serve. Note: This cake can be stored, refrigerated, in an airtight container for up to 3 days.

100ml sunflower oil, plus extra for pan
175g caster sugar
140g plain flour
3 tbsp cocoa
3 tsp baking powder
2 large eggs
1 tsp vanilla essence
chocolate sprinkles, to serve
100g dark chocolate, broken into pieces
5 tbsp double cream

Steps:

  • Grease a 22cm silicone microwaveable cake pan with a little oil and place a circle of baking parchment in the bottom.
  • Mix the sugar, flour, cocoa and baking powder in a bowl. In a jug, whisk the oil, eggs, vanilla and 100ml hot water until combined.
  • Add the liquid ingredients to the dry ingredients and mix thoroughly until you have a lump-free batter. Pour the mixture into the cake pan and gently tap to pop any air bubbles. Cover with cling film.
  • Microwave on Full power (800 watts) for 7 mins. Remove and check if the cake is cooked by poking a skewer into the middle: if it comes out clean, the cake is ready. Allow the cake to stand for 5 mins, then remove the cling film and turn out onto a cooling rack.
  • For the ganache, melt the chocolate on Half power (600 watts) for approximately 2 mins, stirring every 30 secs until melted. Add the cream and mix thoroughly until smooth and glossy.
  • Once the cake is cool, spread over the ganache and scatter with the sprinkles. The cake will keep for up to 3 days in an airtight container.

2 tablespoons whisked eggs
2 tablespoons cream cheese
1/4 cup flour

Steps:

  • In a mug, place a tablespoon of butter and soften it in the microwave for 10-15 seconds. Then, go ahead and add 2 tablespoons of sugar and whisk until light and fluffy. Then, take 2 tablespoons of cream cheese and mix them until most of the cream cheese has been mixed in (its okay if theres some chunks).   • Then pop it in the microwave for 1 minute, allow it to cool for another minute and enjoy.
