CREAMED PEARL ONIONS

Steps:
- Blanch the pearl onions by placing them into a large pot of rapidly boiling water. Cook them for about 1 minute. Remove the onions from the water with a strainer, then plunge into an ice bath to stop the cooking process. Drain them, then remove the skins.
- Put the onions in a 3-quart saucepan and place over low-medium heat. Add the cream, bay leaves, parsley, garlic and nutmeg. Season with salt and pepper. Cover and let simmer for 10 minutes, stirring occasionally, until thickened. Then, remove the cover and add stock. Season again. Allow to cook down for 5 minutes to tighten up the cream sauce. Discard the garlic clove and bay leaves before serving.
EASY CREAMED ONIONS
My great-grandma's recipe. Always a favorite at Thanksgiving dinner. Worth using fresh onions instead of frozen.

Steps:
- Bring water and salt to a boil in a small saucepan; cook onions in the boiling water until just tender, 5 to 10 minutes. Drain, reserving 1/2 cup water in saucepan, and return onions to pan. Add butter to onions.
- Mix milk and quick-mixing flour together in a bowl; add to onion mixture. Cook and stir over medium-low heat until thickened, 10 to 15 minutes. Stir in more quick-mixing flour if mixture is too thin.

- Put the onions in the bowl with the fat or butter. Cover the bowl and microwave for 10 minutes on high.
- Take off the cover, and stir the onions--there should be good bit of liquid in the bowl. Microwave (uncovered) for approximately 10 more minutes, but keep an eye on it. It should get brown around the edges, so stir it periodically.
- Eventually it'll be a brown mass of onions. If you like them crispy, microwave them a bit longer but, again, keep an eye on them--it's a real short moment between crispy and burnt.
- You can do this in a conventional oven too, but it takes longer; say around 20 minutes at 350°F with the cover on and another 20 min with the cover off, stirring periodically. Once again, keep an eye on it.

MICROWAVE CREAMED SPINACH
This is a top-notch version of the steakhouse classic. We make it with fresh spinach, which stays deep, bright green when cooked briefly in the microwave, and finish it with a crisp topping of toasted breadcrumbs or fried onions.

- Place spinach and 2 tablespoons water in a microwave-safe large bowl. Cover tightly with plastic wrap; cut a small slit in the center with the tip of a paring knife to vent excess steam. Microwave on high (at 100 percent power), stirring halfway through, until the spinach is just wilted, 3 minutes in an 1,100-watt oven or 6 minutes in a 700-watt oven. (When removing the plastic wrap, be careful to avoid the hot steam.)
- Scatter the onions, garlic, butter, 1/4 teaspoon salt and a couple grinds of black pepper in a microwave-safe 8-inch square baking dish. Cover tightly with plastic wrap; cut a small slit in the center. Microwave on high (at 100 percent power) until the onions are soft and translucent, 5 minutes in an 1,100-watt oven or 8 minutes in a 700-watt oven. If the onions are still a little hard, microwave again, covered, in 30-second increments, stirring after each.
- Squeeze the wilted spinach completely dry, and place in the baking dish with the onion mixture. Add the heavy cream, cream cheese, Parmesan, cayenne, nutmeg, 1/4 teaspoon salt and a few grinds of black pepper, and stir to combine. Microwave, uncovered, on high (at 100 percent power) for 5 minutes in an 1,100-watt oven or 7 minutes in a 700-watt oven. The spinach should be hot and bubbly and the cream slightly thickened. Add the lemon juice, and stir. Top with breadcrumbs or fried onions and some lemon zest.
MICROWAVE 'FRIED' ONIONS (FAT FREE)
Simple alternative to pan fried onions in a fraction of the time and with a fraction of the mess to clear up. I do it without fat but you could always add a little oil or butter and that works very well. Perfect for hot-dogs and burgers when in a hurry and especially convenient for those quick meals for one person.

- Slice the onion/s just as you would for frying them for burgers or hot-dogs and place on a microwaveable plate (or in a microwaveable bowl if doing lots of onions to feed several people).
- Add oil or a knob of butter if desired.
- Microwave for 2 - 3 minutes or until done, gently stir/mix halfway through cooking time.
- Microwaves vary greatly in strength, but as a guide, for one medium onion - enough for a good sized hot dog, in my 1000W machine I microwave on high for 1 minute 30 seconds then loosely mix with my fingers. I then set the microwave for another 1 minute 30 seconds but I don't press start until the sausages/burgers etc are almost finished being grilled then press start just before serving so that the onion is piping hot.
- They have a bit more 'kick' to them than pan-fried onions if you do them without the fat. If using oil or butter do go easy as very little is required.
- It's a viable and very handy way of 'frying' onions whether you're a healthy-eating fanatic like me or not!

- Slash edges of pork chops.
- Combine flour and sage.
- Dredge chops in flour.
- Place in casserole with tenderloin inside.
- Top with onion.
- Whisk soup, milk, bouillon, steak sauce and remaining flour until smooth.
- Pour over chops, coating all.
- Cover and microwave at 30% for 15 minutes.
- Turn and rearrange chops and push beneath sauce.
- Cover and microwave 15 more minutes at 30%, then let stand for 10 minutes.
- Skim off excess fat and serve.

CREAMY BAKED ONIONS

- Heat the oven to 200C/fan 180C/gas 6. Peel and trim the roots of the onions but leave them whole. Cook in a large pan of boiling water for 25 mins until tender, then drain, reserving a little cooking water.
- Season the cream and mix in 2 tbsp of the onion water. When the onions are cool enough to handle, slice each in half through the root. Lay the onion halves, cut side down, in a large baking dish with the bay leaves. Pour over the cream, scatter with the Parmesan, and bake for 25 mins until the cream is bubbling and the onions are just beginning to brown.

- Peel onions and cut in half horizontally. Place in a 1-quart casserole dish.
- Top each onion half with salt and pepper to taste. Add a pat of butter, using 1/2 teaspoon to 1/2 tablespoon per onion.
- Cover and cook at 100% power (HIGH) for 8 to 10 minutes, or until onions are soft.
- Uncover and top each half with shredded cheese to taste.
- Pop back in microwave and zap just long enough to melt the cheese.
- If you prefer, bake the onions one hour in a conventional 350-degree oven, topping with cheese when baking has finished.
- An alternate topping: Prepare onions as above, but top each half with 1/2 tablespoon EACH butter and brown sugar.
