1 tablespoons flour
2 teaspoons brown sugar (, packed)
1/4 teaspoon cinnamon

Steps:

  • Mash together butter, sugar and egg until well mixed.
  • Add in sour cream and vanilla until smooth.
  • Add in flour and baking powder until just combined.
  • In a second bowl, mash together butter, flour, sugar and cinnamon with a fork.
  • Sprinkle crumble over the cake batter
  • Microwave for 90 seconds or until the top of the cake is no longer wet.

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pans
1 3/4 cups all-purpose flour (spooned and leveled), plus more for pans
2 teaspoons baking powder
1 teaspoon baking soda
1 cup sour cream
1 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs
Confectioners' sugar (optional)
1 cup packed dark-brown sugar
1 cup all-purpose flour, (spooned and leveled)
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (1 stick) chilled unsalted butter, cut into small pieces

Steps:

  • Prepare streusel topping: In a medium bowl, stir together brown sugar, flour, and salt. With a pastry blender or two knives, cut in butter until mixture resembles large coarse crumbs; refrigerate until ready to use.
  • Preheat oven to 350 degrees. Prepare muffins: Butter and flour a jumbo 12-cup muffin tin (or two 6-cup muffin tins). In a small bowl, whisk together flour, baking powder, and baking soda; set aside.
  • Using an electric mixer on medium speed, beat together butter, sour cream, granulated sugar, and vanilla until light and fluffy. Beat in eggs, one at a time, until well combined. With mixer on low, beat flour mixture into butter mixture.
  • Divide half the batter among prepared muffin cups. Top with half the streusel mixture, then remaining batter, and top with streusel. Bake 25 to 30 minutes or until a toothpick inserted in center of a muffin comes out clean. Cool in pan 5 minutes, then transfer to a wire rack to cool completely. Dust with confectioners' sugar, if desired.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix then sift flour, sugar, cinnamon, baking powder, and salt together in a large bowl.
  • Mix milk, butter, eggs, and vanilla extract together in a large bowl with an electric mixer. Carefully fold in flour until combined but slightly lumpy. Pour batter into the prepared muffin tins, leaving a little room at the top for muffins to rise.
  • Combine flour, melted butter, sugar, brown sugar, pumpkin pie spice, and salt for the topping in a bowl; mix until crumbly. Add a generous amount on top of each muffin.

This is a delicious and easy coffee cake that my mom used to make frequently when I was younger! It's so simple to whip it up and toss it in the microwave! I've also made this using reduced fat Bisquick, applesauce in place of the oil, and Egg Beaters in the batter to make it a little healthier, and it still tasted fabulous.

1 1/2 cups buttermilk biscuit mix (Bisquick)
1/4 cup white sugar
1/2 cup milk
1 egg
2 tablespoons oil
1/3 cup buttermilk biscuit mix
1/3 cup brown sugar (packed)
2 tablespoons butter
1 teaspoon cinnamon
1/4 cup chopped nuts
3/4 cup confectioners' sugar
1 tablespoon milk

Steps:

  • In mixing bowl, stir together 1 1/2 cups biscuit mix and white sugar.
  • Add 1/2 cup milk, egg, and oil.
  • Beat by hand, mixing well.
  • Pour into greased 8-inch round dish.
  • Blend 1/3 cup biscuit mix, brown sugar, butter, and cinnamon until crumbly.
  • Sprinkle over batter and sprinkle with nuts.
  • Microwave on HIGH for 5-7 minutes. (6 minutes always works perfectly in my microwave.).
  • Cool 15 minutes; drizzle with fine glaze.
  • Serve warm.
  • Glaze: Stir together confectioner's sugar and 1 Tbsp milk.
  • From tip of spoon, drizzle glaze over cake in spoke fashion.

1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, melted
1 egg
1/3 cup milk
1/4 cup brown sugar
1/4 cup walnuts, chopped
3 tablespoons flour
1 teaspoon cinnamon
1 tablespoon butter, melted
1/2 cup powdered sugar
1 tablespoon milk
1 teaspoon vanilla

Steps:

  • MICROWAVE:
  • Prepare topping and set aside.
  • In large bowl, combine flour, granulated sugar, baking powder and salt.
  • Pour in butter; add egg and milk.
  • Stir until ingredients are blended; batter will be soft.
  • Line 6 microwavable muffin-pan cups with double paper liners. Spoon 2 tablespoons of the batter into each cup.
  • Sprinkle 1/4 of the topping over batter.
  • Spoon batter over topping, filling cups about half full.
  • Sprinkle 1/4 of the topping over batter, pressing into the batter.
  • Microwave at high (100%) 2 1/2 to 4 1/2 minutes or until wooden pick inserted in center comes out clean.
  • Rotate dish half turn halfway through cooking. Let stand 5 minutes. Remove from pan. Repeat procedure.
  • Prepare icing and drizzle over warm muffins.
  • TOPPING:
  • In small bowl combine 1/4 cup packed brown sugar, 1/4 cup chopped walnuts, 3 tablespoons all-purpose flour and 1 teaspoon ground cinnamon.
  • Add 1 tablespoon melted butter, stirring until mixture resembles moist crumbs.
  • ICING:
  • In small bowl, combine 1/2 cup powdered sugar, 1 tablespoon milk and 1 teaspoon vanilla, stirring until smooth.

4 tbsp self-raising flour
4 tbsp caster sugar
2 tbsp cocoa powder
1 medium egg
3 tbsp milk
3 tbsp vegetable oil or sunflower oil
a few drops of vanilla essence or other essence (orange or peppermint work well)
2 tbsp chocolate chips, nuts, or raisins etc (optional)

Steps:

  • Add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder to the largest mug you have (to stop it overflowing in the microwave) and mix.
  • Add 1 medium egg and mix in as much as you can, but don't worry if there's still dry mix left.
  • Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again.
  • Centre your mug in the middle of the microwave oven and cook on High for 1½ -2 mins, or until it has stopped rising and is firm to the touch.

85g very soft butter
85g golden caster sugar
2 eggs , beaten
85g self-raising flour
2 tsp instant coffee powder
small handful of walnut pieces (optional)
1 tsp instant coffee powder
1 tsp milk
25g very soft butter
100g icing sugar

Steps:

  • In a medium bowl, beat the butter and sugar together until light and fluffy. Gradually add the eggs followed by the flour and instant coffee. Stir most of the walnuts (if using) into the batter, reserving a few for decoration. Transfer to a microwave-proof dish and cook in the microwave on full power for 2 mins. Reduce the power to medium and cook for 2 mins.
  • After 4 mins, check to see if the cake is cooked - it should be risen and spring back when touched. If it needs a bit longer, cook on medium for 1 min more at a time, checking after each minute until the cake is cooked. Remove and allow to cool.
  • Meanwhile, make the coffee butter cream. Dissolve the coffee in the milk, then add the butter and icing sugar. Beat until smooth, spread over the cake and top with the reserved walnuts.
