BAKED PEACHES
Baked Peaches are DELICIOUS and EASY! Fresh peaches with maple syrup, brown sugar and cinnamon, baked until warm and tender. Add ice cream or caramel or enjoy them just as they are!

- Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
- In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
- Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with vanilla ice cream, Greek yogurt, or a pour of heavy cream, as desired.

Steps:
- Mash peaches with a potato masher.
- Combine peaches with pectin, sugar, ascorbic acid, and lemon juice, if desired, in a deep 2-quart casserole.
- Cover and microwave 3 to 4 minutes or until mixture boils 1 minute.
- Remove from microwave, continue to stir 2 minutes.
- Pour into freezer containers; cover and freeze.
- To serve, let jam thaw in refrigerator.
- Store jam in freezer up to 1 year, or in refrigerator up to 1 month.
- Yield: 2 half pints (about 14 calories per tablespoon).

- Place peaches in a square 8 X 8 X 2 microwave safe dish.
- Mix remaining ingredients until crumbly and then sprinkle over the peaches.
- Microwave uncovered on 100% power for 6 minutes. Rotate dish 1/2 turn.
- Continue to microwave uncovered until peaches are tender, 4-6 minutes longer.

PEACH OATMEAL
I have created one delicious oatmeal! It sort of reminds me of the Quaker peaches and cream oatmeal. I still prefer this oatmeal however, which is healthier, to packaged any day.

Steps:
- Cut up peach slices into small pieces.
- In a bowl add oats, water, and peaches with juice.
- Microwave in 500watt microwave for 2 minutes, stir, microwave for another 2 minutes, stir, then microwave in 1 minute intervals until cooked. In a 1200watt microwave, microwave for 30 seconds, stir, microwave for another 30 seconds, stir, and then continue microwaving in 30 second intervals until cooked.
- Once cooked, add cinnamon, butterscotch extract, and sweetener.
- NOTE: This serving seems small since it is only 1/4 cup of oats, but with the addition of peaches, it is quite filling, especially when served with a glass of milk; Feel free however, to increase one serving size to double this amount for a very hearty breakfast.

- In a small microwavable bowl, combine peaches, 2 tbsp. brown sugar, and ½ tsp. cinnamon. Heat in microwave on high for 1 ½ minutes or until peaches are completely defrosted. Stir mixture.
- Place butter into a microwavable ramekin. Heat on high for 30 seconds or until butter is completely melted. Evenly pour peach mixture over butter. Set aside.
- In a small mixing bowl mix flour, milk, ½ tsp. cinnamon, granulated sugar, extract, baking powder, and salt. Spread flour mixture on top of peach mixture.
- Heat in microwave for 1 minute or until dough is done. Do not overcook. Remove from microwave and immediately sprinkle 1 tbsp. brown sugar on top of cobbler.
