HOT ITALIAN PATTIES
I've been making these spicy and satisfying sandwiches for more than a dozen years. On occasion, I substitute country sausage for the Italian sausage and they taste just as good. Served with a zesty sauce for dipping, they're my family's favorite. -Brenda Jackson, Garden City, Kansas

- In a saucepan, combine the tomato sauce, basil, pepper flakes and garlic powder. Bring to a boil over medium heat. Reduce heat; simmer for 15 minutes. , Meanwhile, shape sausage into four thin oval patties. In a skillet over medium heat, cook patties until no longer pink; remove and keep warm. , In the drippings, saute onion until tender. Place a slice of cheese on four slices of bread; layer each with a sausage patty, onion and remaining cheese. Top with remaining bread. Butter the outsides of sandwiches. , On a griddle or in a large skillet, toast over medium heat until both sides are golden brown and cheese is melted. Serve with herbed tomato sauce for dipping.

BRENDA'S REAL SICILIAN STUFFED BELL PEPPERS
There is no real written recipe for these peppers so use whatever you like and have on hand. I learned this dish when I visited my inlaws in Sicily 26 years ago and have been making it ever since. I suggest that you use it as written the first time and then do your own thing next time. I have made this in the microwave, but you have to be careful as green peppers can get bitter. I'm not sure why. My kids were the ones that decided that red peppers would be better and now they make their own with red peppers as well. You can easily control the use of salt, but remember that canned tomatoes, olives and cheese have a lot of salt so don't add too much extra. If you can find low sodium alternatives you will have greater control.

Steps:
- Wash and slice off the top of the peppers, making a cap. Reserve tops. Remove internal membranes and seeds.
- Place peppers, open side up in medium roaster or deep baking dish. There must be room for the rest of the ingredients.
- Blend gently with a fork, meat, egg, breadcrumbs, parmesan cheese, green onions, 1/2 of the salt and 1/2 of the pepper or to taste.
- In bottom of pepper, place a piece of mozzarella and a few pieces of onion.
- Stuff the peppers with meat mixture and replace cap on each.
- Note: if you have extra meat you can roll them into little meat balls to place on top of peppers.
- Sprinkle the rest of the onion, potatoes, garlic, olives, mushrooms, on top of peppers. (also extra meatballs if you have any.).
- Spoon tomatoes, with thier juice, over it all.
- Season top with basil and remaining salt and pepper or to taste.
- Cover and place in 350 F oven for 45 minutes.
- Uncover and bake for another 45 minutes, keeping an eye on the liquid. You may have to add a little water if it appears to be too dry.
- Try to move the veggies away from the edges once in a while so that they don't stick to the sides.
- Plate and serve with a crusty bread.

- In a large bowl, combine 1/3 cup pizza sauce, egg, bread crumbs, onion, oregano, salt and pepper. Crumble beef over mixture and mix well. Shape into six patties. Place on a broiler pan coated with cooking spray. , Broil 6 in. from the heat for 5-6 minutes on each side or until juices run clear, basting frequently with remaining pizza sauce. Top with cheese. Broil 1 minute longer or until cheese is melted., Freeze option: Prepare uncooked patties and freeze, covered, on a plastic wrap-lined baking sheet until firm. Transfer patties to a large resealable plastic bag; return to freezer. To use, cook frozen patties and top with cheese as directed, increasing time as necessary for a thermometer to read 160°.

- In small bowl, combine cheese, olives, and onion.
- Shape ground beef into eight patties, approximately 4 1/2-inch diameter.
- Place approximately 1/4 cup of cheese mixture in center of four patties; top with remaining patties. Press edges firmly together to seal; gently pat to 3/4-inch thickness.
- In small bowl, combine Italian seasoning, garlic powder, and pepper. Press evenly into both sides of each patty.
- Place patties on grill over medium, ash-covered coals. Grill, uncovered, 22 to 24 minutes to medium doneness (160 degrees) or until centers of patties are no longer pink and juices show no pink color; turn occasionally.
- Season burgers with salt, as desired. Line bottom of each roll with one tomato slice; top with burger.
- Add choice of toppings, if desired.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the ground beef, ground pork, bread crumbs, eggs, onion, green bell pepper, salt, ground black pepper, Italian-style seasoning, sage, garlic powder, 1/2 cup pizza sauce and stewed tomatoes. Mix well and form into 24 patties using a 1/4 cup measuring cup OR an ice cream scoop.
- In a separate small bowl, combine the mushrooms and olives and set aside. Arrange 12 patties on 2 ungreased baking sheets. Place 4 slices of pepperoni on each patty, then a small amount of the mushroom olive mixture, and then a slice of mozzarella cheese. Top each patty off with another patty and pinch the edges all around to seal everything into the middle. Finally, top each with a drizzle of remaining pizza sauce and some shredded mozzarella cheese.
- Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes.
