OAXACA OLD FASHIONED
Steps:
- Mix the tequila, mezcal, agave nectar, and bitters in a mixing glass with ice. Strain over a fresh rock in an Old Fashioned glass. Flame an orange peel over the top of the drink, and rest the twist in the glass as a garnish.
LA PINA (MEZCAL COCKTAIL WITH PINEAPPLE AND CILANTRO)
A spicy cocktail from Amá. The mezcal gives it some edge, and the pineapple makes it easy drinking.

- Put the large ice cube in an old-fashioned glass. Muddle the serrano chile with the cilantro leaves in a cocktail shaker. Add the mezcal, pineapple juice, simple syrup, lime juice, and ice cubes. Shake vigorously and strain over the large ice cube in the glass. Garnish with the pineapple leaf.
EVERYTHING GOOD COCKTAIL
This make-ahead cocktail, created by San Francisco bartender Gillian Fitzgerald, is lightly smoky and wonderful with dessert. The chocolate bitters make the drink-and they're available online. Adding water along with the ingredients, then freezing the batched drink, means you won't need to shake it over ice.

Steps:
- Mix honey and 2 Tbsp. boiling water in a quart-size jar. Stir to dissolve honey; let cool. Stir in mezcal, orange liqueur, bitters, and 1/2 cup plus 1 Tbsp. water. Seal and freeze at least 2 hours and up to 2 weeks.
- To serve, turn jar gently to mix. Place ice in a rocks glass and pour in cocktail. Squeeze oils from orange twist over, rub peel around rim of glass, then garnish glass with peel.
MEZCAL OLD FASHIONED
Try this twist on the traditional old fashioned cocktail, which uses mezcal instead of whiskey. The mezcal gives it a smoky flavor, while the anejo tequila balances out the smoke while giving the drink a golden hue with hints of oak, reminiscent of whiskey.

- Combine liquids in a cocktail shaker with a generous handful of ice. Stir until well chilled. Strain into a rocks glass filled with ice.
- Hold a lighted match over drink in one hand and orange peel in other hand, with orange side facing flame and about an inch away. Carefully and quickly squeeze orange peel until oils spark. Put out match and drop peel into cocktail.
