A truly memorable way to feed a crowd, this dessert alternates between moist coconut cake and rich coconut-lemon curd on the inside and is covered with coconut buttercream frosting and shredded coconut on the outside. Homemade candied Meyer lemon slices and fresh mint decorate the top.

7 tablespoons unsalted butter, room temperature, cut into pieces, plus more for pans
3 cups unbleached all-purpose flour, plus more for pans
1 cup sweetened shredded coconut
1 cup whole milk, room temperature
4 large eggs, room temperature
1 teaspoon pure vanilla extract
1 2/3 cups sugar
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
1/4 cup raw unrefined coconut oil (2 ounces), room temperature (solid)

Candied Lemon Slicesand fresh mint leaves, for serving

Steps:

  • Preheat oven to 350 degrees. Butter two 7-by-2-inch round cake pans. Line bottoms with parchment; butter parchment. Dust with flour, tapping out excess. Bake coconut on a baking sheet until dry but not golden, about 10 minutes; let cool completely.
  • Whisk milk into eggs, then whisk in vanilla. Combine flour, sugar, baking powder, and salt in the bowl of an electric mixer fitted with the paddle attachment; beat on medium-low speed 30 seconds. Continue beating while gradually adding butter and coconut oil until mixture is crumbly, about 3 minutes. Slowly add half of milk mixture; increase speed to medium and beat until fluffy, about 1 minute. Slowly add remaining milk mixture, scraping down bowl as needed. Beat until incorporated, 30 seconds.
  • Divide batter between prepared pans; tap pans on counter to release any air bubbles. Bake until golden brown and tops spring back when lightly touched, 50 to 55 minutes. Let cool in pans on wire racks 5 minutes, then turn out of pans, remove parchment, and let cool completely, top-sides up, on racks. For easy splitting, refrigerate 1 hour.
  • Trim tops of cakes flat. Split each cake horizontally into two equal layers. Place a cake layer on a cake plate. Spread 2/3 cup curd evenly over it; top with a second cake layer. Repeat, spreading 2/3 cup curd between each layer. Finish with a cake layer, bottom-side up. Refrigerate cake, wrapped in plastic, at least 1 hour and up to 1 day.
  • Spread 1 cup buttercream over top and sides of cake evenly to create a crumb coat. Refrigerate 15 minutes. Spread remaining 3 cups buttercream over top and sides. Coat sides with coconut. Garnish with candied lemon and mint. Cake can be refrigerated, wrapped in plastic, up to 5 days; return to room temperature before serving.

1/2 cup Meyer Lemon juice
2 tablespoons unsalted butter

3 1/2 cups confectioners' sugar, sifted
Pinch salt
5 tablespoons milk
2 teaspoons vanilla extract
6 ounces unsalted butter, softened

Steps:

  • For the Cake: Preheat oven to 350 degrees. Cream together the butter, sugar, and lemon zest until smooth and creamy. Sift together the flour, baking powder and salt. Set aside. Combine the milk, vanilla extract and lemon juice. Alternately combine the dry ingredients and the milk mixture with the butter mixture. Beat well until smooth. Add the eggs 1 at a time and mix well. Divide the batter between the 2 cake pans. Bake the cake for about 20 minutes until a skewer inserted in the middle comes out clean. Cool before unmolding.
  • For the Lemon Curd: Whisk together the egg yolks and the sugar. Add the lemon juice. Place the mixture in a heavy bottomed sauce pot. Cook over medium low heat, stirring constantly until thickened. Remove the pot from the heat and stir in the butter. Strain the curd. Stir in the lemon zest. Place the curd in a bowl and cover the surface of the curd with plastic wrap. Refrigerate until cold.
  • For the Easy Buttercream Frosting: Combine powdered sugar with the other ingredients and beat until smooth.
  • Assembly: Cut each cake in half, giving you 4 layers. Layer 1 cake piece with 1/3 of the lemon curd. Gently spread about 1/3 cup of the frosting over the curd. Repeat with 2 more layers of cake, curd and frosting. Place the forth cake piece on top and frost the sides and top with the remaining frosting.

No oven required. This is an easy make-ahead dessert with a light and complex blend of flavors. For the cookies, I use one 9-oz box of Meyer Lemon Thins, Lemon Curd, and some Triple-Ginger Snaps from Trader Joe's. Plan ahead because it needs to sit in the fridge overnight.

3 cups heavy cream
1/4 cup superfine sugar
3 tablespoons fresh lemon zest (from 2 lemons)
9 ounces lemon wafer cookies
20 gingersnap cookies
10 ounces lemon curd
2 tablespoons flaked coconut (optional)

Steps:

  • Whip the cream until stiff peaks form. Fold in sugar and 2 tbsp of the lemon zest.
  • Spread a very thin layer of the cream in the bottom of a 8 x 12 pan. (You can use a 9x13 pan also but the cake will be thinner.) Place the gingersnap cookies in an even layer over the cream, breaking some in half to fill in holes if necessary.
  • Very carefully heat the lemon curd slightly over a pan of boiling water, or microwave it for 10-15 seconds (be very careful or it will burn!) Drizzle some lemon curd over the cookie layer.
  • Spread a layer of cream over the cookies and lemon curd.
  • Repeat each layer with the lemon thins, curd, and cream, ending with a layer of cream on the top. Sprinkle with the remaining lemon zest and coconut.
  • Refrigerate overnight and cut with sharp knife to serve.

1 cup sweetened shredded coconut
1 cup sugar
1 tablespoon cornstarch
1 teaspoon finely grated lemon zest, plus 1/2 cup fresh juice (from 2 to 3 lemons)
1 teaspoon finely grated Meyer-lemon zest, plus 1/4 cup fresh juice (from 1 to 2 lemons)
1/2 teaspoon kosher salt
8 large egg yolks
10 tablespoons unsalted butter, cut into pieces

Steps:

  • Preheat oven to 350 degrees. Bake coconut on a baking sheet until dry but not golden, about 10 minutes. Let cool.
  • In a medium saucepan, whisk together sugar, cornstarch, both zests, and salt. Whisk in egg yolks, then both lemon juices. Add butter and cook over medium heat, whisking constantly, until butter has melted, mixture is thick enough to coat the back of a spoon, and bubbles are forming in center of pan, about 9 minutes.
  • Pass mixture through a fine-mesh sieve into a bowl. Press a piece of plastic wrap directly on surface of curd. Let cool 30 minutes, then refrigerate until very firm and cold, at least 2 hours and up to 3 days. Before using, whisk to loosen, then stir in coconut.

  • Heat oven to 350 deg F. Butter a 9x5 inch loaf pan, trim a piece of parchment paper so it fits lengthwise and hangs over the long edges by a few inches. Butter the parchment paper then lightly flour, tapping out any excess.
  • In a large mixing bowl rub together the sugar and zest with your fingers until the sugar is very fragrant. Add in the oil and mix well either with a whisk or hand mixer. Add in the eggs, ricotta cheese, lemon juice and extract and mix again well. Add in the flour, baking powder, baking soda and salt then stir to combine, batter will be a little lumpy. If you want you can whisk together the flour, baking powder, soda and salt together in a small bowl first but this step isn't really needed. It can be done all in one bowl.
  • Bake for 40-45 minutes or until golden on the top and a toothpick inserted into the middle comes out with just a few crumbs.

Pour the “ice cream” over the crust and smooth the top with a silicone spatula. Blend until completely smooth, stopping to scrape the sides as necessary. This step can take anywhere from 1-3 minutes depending on the strength of your machine. Pour the blended cashew layer over the partially frozen blueberry layer. Smooth the top with a rubber spatula until even and gently tap the pan against the kitchen counter to release any air bubbles that are trapped in the filling. Sprinkle the sliced almonds over the top of the cashew layer and press in gently with the palm of your hand. Place the pan back in the freezer for 6-8 hours or overnight until completely set.
  • Place the spring form pan on the counter at room temperature and let it sit for 10-15 minutes. Gently remove the side wall of the pan from the cake. Slice and serve. Store any uneaten cake completely wrapped in the freezer.

Reduce the heat if the mix is threatening to burn or become lumpy.
  • Whisk coconut milk, agar powder, salt, maple syrup and rice syrup together in a large saucepan. Place over high heat and bring to a boil, whisking often to avoid the bottom burning. Lower heat and simmer for 5 minutes to make sure that the agar has completely dissolved.
  • Level off the tops of the cakes with a knife if need be to create flat, even surfaces. Place one cake on your cake stand/serving plate then top with about 1/2 cup of the frosting. Drizzle about 2 tbsp of lemon curd over the top, then top with the next cake layer, repeat. When you reach the top layer, spread a thin layer of frosting over the top and sides of the cake and place in the fridge to chill for 30 minutes or so (if you are after a 'naked' cake look, this is all the frosting you need!). Now spread another layer of frosting on the top and sides of the cake, as much as you'd like (you may have some frosting left over if you aren't after a thick coat). Smooth it off and decorate the cake as you see fit.

  • Prepare the cake – Slice your angel food loaf cake into 3 horizontal slices. Place 1/3 of the Honey Lemon Lavender whipped coconut cream on top of the bottom layer of the prepared angel food cake and spread evenly. Place another slice of your angel food cake on top of the Honey Lemon Lavender whipped coconut cream. Repeat the process for a total of 3 layers. The top and final layer should have a lovely dollop of Honey Lemon Lavender whipped coconut cream.
  • Garnish your cake – top your Icebox Lavender Lemon Angel Food Cake with Honey Candied Meyer Lemon Slices and sprigs of dried or fresh lavender.
