Mexican zucchini rounds simmered in stewed tomatoes, onions, and garlic then loaded with mild cheddar cheese. One of my favorite comfort foods from my childhood.

1 tablespoon vegetable oil
½ small white onion, sliced thinly
2 cloves garlic, minced
4 zucchini, sliced 1/4-inch thick
1 (14 ounce) can stewed tomatoes
salt to taste
1 cup shredded mild Cheddar cheese

Steps:

  • Heat the vegetable oil in a saucepan over medium heat; cook the onion and garlic in the hot oil until soft, about 5 minutes. Add the zucchini slices and stewed tomatoes and stir gently. Cover and cook until the zucchini is tender, 8 to 10 minutes. Remove from heat, season with salt, and add the Cheddar cheese; allow to sit until the cheese has melted.

Calabacitas is a delicious and healthy side dish recipe, perfect for any meal! It just might be the Best Healthy Calabacitas Recipe I've ever had. This side dish is good enough to eat on its own, but it pairs well with other Mexican recipes.

2 medium zucchinis (sliced)
1/2 large roma tomato (chopped)
1/4 medium onion (chopped)
1/4 cup corn kernels (frozen or canned)
1/2 Tbsp light butter
1/2 Tbsp extra virgin olive oil
1/4 tsp kosher salt
1/8 tsp pepper (or to taste)
1/2 cup shredded Chihuahua or light mozzarella cheese (or any other melting cheese)
1/2 cup queso fresco (crumbled (Mexican fresh cheese) (Optional))

Steps:

  • In a large skillet, heat the oil and butter over medium heat.
  • Add the onion and cook about two minutes.
  • Add the zucchini, tomato, corn salt & pepper. Mix all ingredients well.
  • Cover, reduce heat to low, and simmer for 8 minutes. Remove from heat and sprinkle the shredded cheese.
  • Replace the cover on the skillet and allow to sit until the cheese melts, 2 to 3 minutes.
  • Serve warm and sprinkle with some of queso fresco

2 medium zucchini cut into 1/4-inch square 3-inch long sticks -- like fries
Vegetable cooking spray
1 tablespoon dried oregano
1 tablespoon ground cumin
1 tablespoon grill seasoning
1 cup chili sauce or mild taco sauce

Steps:

  • Preheat oven to 500 degrees F.
  • Arrange zucchini on nonstick cookie sheet. Spray zucchini with cooking spray. Combine spices and sprinkle over the zucchini fries. Place in very hot oven and cook 15 to 18 minutes. Serve hot. Top with spoonfuls of chili sauce or taco sauce.

1 egg
1 tablespoon canola oil
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup shredded zucchini
1 tablespoon chopped seeded jalapeno pepper
1 tablespoon finely chopped onion
1/3 cup biscuit/baking mix
2 tablespoons shredded cheddar cheese

Steps:

  • In a small bowl, beat the egg, oil, salt and pepper. Add the zucchini, jalapeno and onion; stir to coat. Stir in biscuit mix and cheese. , Pour into a 15-oz. baking dish coated with cooking spray. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Let stand for 10 minutes before serving.

1 onion, chopped
2 garlic cloves, chopped
2 teaspoons olive oil
8 zucchini, chopped
1 (4 ounce) can mild green chilies
2 (14 ounce) cans stewed tomatoes
2 (15 ounce) cans corn, drained
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups monterey jack pepper cheese, grated

Steps:

  • Saute the chopped onion and chopped garlic. Add the chopped zucchini, green chilies, stewed tomatoes, corn, salt and pepper. Boil until the zucchini are fork tender. Place in 13 x 9 casserole dish. Top with grated pepper jack cheese. Bake covered at 350 degrees for 20 minutes. Serve hot.

3 medium zucchini
1/2 cup self-raising flour
1 purple onion, diced finely
1 egg, whisked
1/4 cup fresh parsley, chopped (continental)
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon sweet paprika
1 teaspoon salt
4 teaspoons olive oil
2 cups salsa
1 cup sour cream
1 cup cheese, shredded

Steps:

  • Trim the ends from zucchini.
  • Coarsely grate the zucchini.
  • Place in a colander and squeeze out as much excess moisture as possible.
  • Transfer to a bowl.
  • Stir in self-raising flour, onions, egg, parsley, spices and, salt.
  • Heat 2 tsp olive oil in a non-stick frying pan over medium-high heat.
  • Drop four 2-tablespoonful measures of zucchini mixture into pan.
  • Cook for 1 1/2 minutes each side or until golden and cooked through.
  • Transfer to a plate lined with paper towel.
  • Repeat with 2 tsp olive oil and remaining zucchini mixture.
  • Serve each fritter with 2 tbs salsa, 1 tbs sour cream and top with shredded cheese.

1/2 onion, diced
1 teaspoon olive oil
4 ounces sliced mushrooms, drained
10 ounces Rotel Tomatoes (I use extra hot, but warning this makes it muy caliente)

Steps:

  • Sauté onion and mushrooms in skillet with oil until onions are tender. Stir in zucchini. Sauté 3-4 minutes.
  • Add Rotel tomatoes and stir. Cook at a low simmer uncovered for thirty minutes stirring occasionally.
  • These are even better reheated.
