Sour cream, taco seasoning, and shredded Mexican cheese bring south-of-the-border flair to deli turkey in the rapid wraps. The yield will be determined by the number of tortillas you use and the thickness of the slices.

⅔ cup sour cream
½ cup pico de gallo salsa, drained
2 tablespoons taco seasoning
6 (8 inch) flour tortillas
1 cup shredded Mexican cheese blend
½ pound thinly sliced deli turkey breast

Steps:

  • Mix sour cream, pico de gallo, and taco seasoning in a bowl; spread onto each flour tortilla. Sprinkle Mexican cheese blend over sour cream mixture layer. Top each with turkey. Roll each tortilla around the filling. Wrap each with aluminum foil and refrigerate 8 hours to overnight.
  • Remove aluminum foil and slice each wrap cross-wise into 3/8-inch slices. Arrange slices on a plate.

2-1/2 cups cubed cooked turkey
1-1/2 cups sour cream, divided
3 teaspoons taco seasoning, divided
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted, divided
1-1/2 cups shredded cheddar cheese, divided
1 small onion, chopped
1/2 cup salsa
1/4 cup sliced ripe olives
10 flour tortillas (6 inches)
Shredded lettuce
Chopped tomatoes
Additional salsa and sliced ripe olives, optional

Steps:

  • In a bowl, combine turkey, 1/2 cup sour cream, 1-1/2 teaspoons taco seasoning, half the soup, 1 cup cheese, onion, salsa and olives. Place 1/3 cup filling on each tortilla. Roll up and place, seam side down, in a greased 13x9-in. baking dish. Combine remaining sour cream, taco seasoning and soup; pour over tortillas. Cover and bake at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese. Serve with shredded lettuce and chopped tomatoes. Top with additional salsa and sliced ripe olives if desired.

2 tablespoons plus 1 teaspoon olive oil
1 pound ground turkey
Kosher salt and freshly ground black pepper
3 garlic cloves, finely chopped
1 red onion, chopped
2 teaspoons chili powder, plus more to taste
1 1/2 cups frozen corn kernels
One 15.5-ounce can black beans, drained and rinsed
8 to 12 bibb lettuce leaves
1 cup pico de gallo, recipe follows
2 avocados, diced
1/2 cup queso fresco, crumbled
2 tablespoons fresh cilantro, chopped
2 limes cut into wedges
4 Roma tomatoes, chopped
1 small jalapeno, seeds removed and finely chopped
Juice of 1 lime
1/2 white onion, chopped
1 tablespoon chopped fresh cilantro
1/2 teaspoon kosher salt

Steps:

  • Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the turkey and season with salt and pepper. Cook the meat, breaking it up into very small pieces, until cooked through, about 6 minutes. Remove to a plate.
  • Add the remaining teaspoon of olive oil, the garlic and red onion to the skillet. Reduce the heat to medium-low and cook, stirring, until tender, about 5 minutes.
  • Return the turkey to the skillet. Add the chili powder and 1 cup water and increase the heat to medium-high. Cook until most of the water has evaporated, about 3 minutes. Add the corn and beans and cook until no liquid remains, about 3 minutes. Season with a sprinkling of salt and pepper.
  • Pile the turkey filling onto the lettuce leaves. Top with some pico de gallo, avocado, queso fresco, cilantro, and a squeeze of lime. Serve with additional lime wedges.
  • Combine the tomatoes, jalapeno, lime juice, onion, cilantro and salt in a small bowl and mix.

1 tbsp sunflower oil
1 onion , finely sliced
3 garlic cloves , crushed
1 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
400g can black beans , drained but not rinsed
about 150g cooked chicken
4 pickled chillies , chopped
3 tomatoes , roughly chopped
small handful coriander leaves , chopped
4 floured tortillas (seeded or wholemeal if you prefer)
100g cheddar , grated
100g plain yogurt
50g chipotle sauce
1 lime , quartered
guacamole (optional)

Steps:

  • Heat the oil in a frying pan, tip in the onion and fry for 5 mins until golden. Stir in the garlic, cumin, paprika and oregano and cook for 2 mins. Tip in the beans and the chicken and heat through, then stir in the chilli, tomatoes and coriander, season and keep warm.
  • Lay a tortilla in a non-stick pan, sprinkle with cheese and heat until melted. Slide the wrap onto a board, spoon over a quarter of the chicken filling and roll up tightly. Repeat to make three more wraps. Mix the yogurt and chipotle sauce and serve on the side with guacamole and lime wedges for squeezing over.

Number Of Ingredients 12

2 lbs frozen turkey thighs, thawed and skinned
1 (4 ounce) can chopped green chilies
1/3 cup chopped onion
2 tablespoons Worcestershire sauce
2 tablespoons chili powder
1 (8 ounce) can tomato sauce
1/4 teaspoon garlic powder
8 large flour tortillas, at room temperature
3/4 cup shredded cheddar cheese
2/3 cup sour cream
diced fresh tomato
shredded lettuce

Steps:

  • Place turkey thighs in crockpot.
  • Add tomato sauce, chiles, onion, worcestershire, chili powder and garlic powder.
  • Cover and cook on low for 10 to 12 hours.
  • Remove turkey from bones; discard bones.
  • Shred turkey and return to pot.
  • Stir to combine well with sauce.
  • Spoon meat and sauce onto a tortilla and roll up.
  • Garnish with cheese, sour cream, tomatoes and lettuce.
  • Repeat with remaining tortillas.

1 tbsp Cajun spice mix
4 turkey breast steaks (about 500g/1lb 2oz in total)
1 tbsp olive oil
330g can sweetcorn , rinsed and drained
1 red chilli , deseeded and finely chopped
zest and juice ½ lime
8 flour tortillas
150ml pot soured cream and salad leaves, to serve

Steps:

  • Sprinkle the spice mix evenly over the turkey. Heat the oil in a large pan, add the turkey and fry for 4 mins on each side until cooked through. Rest for 2 mins before thinly slicing.
  • Meanwhile, mix the sweetcorn with the chilli, lime zest and juice to make the salsa. Set aside until ready to serve.
  • Warm the tortillas following pack instructions. To serve, assemble each wrap by spreading with a little soured cream, if liked, then pile on some sliced turkey and add a spoonful of salsa. Roll up and serve with crisp salad leaves.
