1 large head cauliflower
1 tablespoon table salt
4 tablespoons unsalted butter (divided)
¼ cup heavy cream
¼ teaspoon ground white or black pepper
2/3 cup shredded (sharp cheddar cheese)
2 tablespoons grated Parmesan cheese (optional)
Garnish: chopped fresh chives

Steps:

  • Cut the stalk off the cauliflower and chop the cauliflower head into 2-inch pieces.
  • Fill a Dutch oven or stockpot 2/3rd full of water and bring it to a boil over medium-high heat.
  • Add 1-tablespoon table salt and the cauliflower and reduce the heat to medium-low. Cook the cauliflower until very tender, about 20 minutes.
  • Drain the cauliflower, and return it to the pot.
  • Set the heat to LOW, and cook just until the excess moisture from the cauliflower cooks off, about 1 minute. Remove pan from the heat.
  • Add 2 tablespoons butter, heavy cream, and pepper. Use an immersion blender or countertop blender to puree the cauliflower.
  • Add the cheeses and season to taste with kosher salt, if needed.
  • Serve immediately with a tab of butter and a sprinkle of fresh chives.
  • Enjoy!

It might be tough to imagine that anything could taste better than mashed potatoes. But cauliflower mash captures all the flavors of beloved potatoes, and you won't be able to taste the difference. Not only is this mash cheesy, buttery and silky smooth, it also brings along a stellar lineup of vitamins and nutrients. Plus it's lower in carbohydrates and calories than its potato counterpart.

6 cups (810 grams) cauliflower florets
8 garlic cloves
1 cup (120 grams) shredded Cheddar
1/4 cup (60 milliliters) heavy cream
2 tablespoons salted butter, plus more for serving
1/4 teaspoon sea salt, plus more to taste
1/8 teaspoon freshly ground black pepper, plus more to taste
1 tablespoon chopped fresh chives, for garnish

Steps:

  • Bring an inch of water to a boil in a large saucepan. Place the cauliflower in a steamer basket set over the boiling water. Cover and steam for about 5 minutes, until the florets are fork tender. Transfer the florets to a high-powered blender or food processor.
  • Add the garlic, cheese, heavy cream, butter, salt and pepper to the cauliflower. Blend until smooth and creamy, 1 to 2 minutes. After 1 minute, if there are still chunks, use a rubber spatula to scrape down the sides, then process again until light, fluffy and completely smooth. Taste and adjust the seasoning if needed.
  • Let the mash sit for 2 minutes to settle. Top with chives and serve with extra butter.

Steps:

  • Chop the head of cauliflower into florets.
  • Bring a medium pot of water to boil over medium-high heat. Add a pinch of salt and the cauliflower and boil for 15 minutes, or until the cauliflower is soft.
  • Drain the cauliflower, then return to the pot.
  • Add the butter, salt, and milk to the cauliflower.
  • Mash the ingredients together until most of the milk is absorbed and the texture is creamy.
  • Add pepper and the cheddar cheese and stir to combine.
  • Add the chives and mix.
  • Garnish with chives and more cheddar cheese.

1 large head of cauliflower
1 tsp minced garlic, optional
3 Tbsp heavy cream
2 Tbsp butter
3 oz sharp cheddar cheese shredded
1 Tbsp chives, dried
salt to taste
fresh ground pepper to taste
2 slice bacon, fried and crumbled.

Steps:

  • 1. Clean and trim the cauliflower; break in to pieces. Place in a microwave safe dish, add garlic, 2 tbsp of cream and 1 tbsp butter. Microwave on high for 5 to 6 minutes uncovered, remove from microwave and stir to coat cauliflower with the cream and butter mixture. Return to microwave and heat on high an additional 5 to 6 minutes uncovered.
  • 2. Transfer the hot cauliflower and any cream and butter that was left in the bowl to a high speed blender. Add remaining 1 tbsp of cream, and 1 tbsp butter as well as the cheese (reserve a little of the to sprinkle on top), salt, pepper and chives. Process, scraping down sides as needed until creamy. NOTE: This dish is not as creamy as mashed potatoes. You can add a little more cream for a creamier mixture.
  • 3. Transfer mixture to a serving bowl and top with a little of the shredded cheese and bacon bits. Enjoy!

1 large head cauliflower , cut into florets
150ml full-fat milk
50g butter
large thyme sprig
25g cheddar , grated
pinch of grated nutmeg
good quality pork or vegetarian sausages , to serve (optional)

Steps:

  • Put the potato in a pan of salted water and bring to the boil. Add the cauliflower and boil both vegetables until tender. Meanwhile, heat the milk with the butter, thyme and cheese. When the veg is ready, drain well and blitz in a food processor.
  • Gradually add the milk mixture (remove the thyme) until you get a smooth, thick purée. Season with salt, pepper and nutmeg. Serve with sausages, if you like.

1 cup chicken broth
1 large head cauliflower
1/3 cup boursin cheese or 1/3 cup other garlic & herb spreadable cheese
1/4 cup grated parmigiano-reggiano cheese or 1/4 cup romano cheese
1/8 teaspoon grated nutmeg
3 tablespoons chives, chopped

Steps:

  • Add chicken stock and 1 tablespoon of extra-virgin olive oil, 1 turn of the pan, to a deep pot.
  • Trim away greens and stems from the base of cauliflower. Cut away the core with a sharp paring knife. Set cored head into pot with broth.
  • Cover pot and bring liquid to a boil. Reduce heat to medium low and cook cauliflower, covered, until tender, 8 to 10 minutes.
  • Uncover the pot and mash the cauliflower.
  • Let some liquid cook off as you smash the cheeses into the cauliflower.
  • As the mixture thickens, turn off heat and season with salt, pepper and nutmeg. Stir in chives and transfer cauliflower to as serving dish.

1 teaspoon Dijon mustard
2 ounces crumbled blue cheese

  • Preheat oven to 400 degrees.
  • Steam cauliflower over boiling water for 8-10 minutes or until fork tender.
  • Place hot cauliflower into large bowl. Mix in cream cheese, Dijon mustard, and blue cheese. Use potato masher to blend well until mixture is smooth and cheeses are melted. Season to taste with salt and freshly ground black pepper.

Steps:

  • Grab a saucepan and fill it halfway with water. Place it over medium heat, and bring the water to a boil. Break the cauliflower into florets. Add the cauliflower florets to the boiling water and cook them for the next 10 minutes.
  • Drain the cauliflower and add it to a large bowl. Use a potato masher and mash the cauliflower.
  • Season with salt, pepper, and add the milk. Also, add the cream cheese. Whisk to combine everything.

1 large onion, diced

Steps:

  • Melt the butter in a large pot over medium heat. Add the cauliflower florets, core slices, onion, garlic and rosemary. Cook, stirring, for 1 minute. 1 medium cauliflower (cut into florets)
2 tbsp extra virgin olive oil (divided)
1/4 white onion (diced)
1 garlic clove (finely diced or minced)
1/4 cup milk or non-dairy milk
2 tbsp cream cheese
pinch salt
pinch black pepper (optional)
2 tbsp parsley

Steps:

  • Bring a large pan of water to a boil and add the cauliflower florets. Bring back to the boil, then reduce the heat to a light simmer. Cook for 10-12 minutes or until the florets are fork tender. Place a colander over a bowl, and add the cauliflower to drain excess liquid.
  • Fry the onion and garlic in a little olive oil until softened, about 5 minutes.
  • Add the cauliflower to a food processor and blend until smooth. You may need to scrape the sides down a few times. Then add the onion and garlic, and blend for another 10 seconds or so. Next add the milk, cream cheese, half the parsley, salt and pepper (if using). Blend again.
  • Spoon the cauliflower mash into your serving bowl, and drizzle with olive oil. Sprinkle the remaining parsley and grind of pepper, if using.
